NO SUGAR ADDED APPLE CAKE
Steps:
- Preheat your oven to 325 and prep a pan for nonstick
- Mix together your apples, nuts, cinnamon, and vanilla. Set this bowl aside.
- In another bowl, beat together the liquid, oil, and the eggs. Set this aside
- Now in a mixing bowl, combine together the sugar alternative and the Carbquick. You can sift this or use the method of your choice.
- Slowly pour half of the contents from the wet bowl into the dry ingredient mixing bowl.Mix gently and then add the remainder.
- Fold in the contents from the first bowl (apples etc) into the mixing bowl by hand. Bake this for an hour or until a toothpick comes out clean.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray an 8x4 inch loaf pan with cooking spray.
- Sift together flour, baking powder, baking soda, cinnamon, nutmeg and salt. Set aside.
- Beat the eggs until light and add sugar twin. Add applesauce and vanilla.
- Add flour mixture and beat until smooth. Fold in raisins.
- Pour batter into loaf pan. Bake at 350 degrees F (175 degrees C) for about an hour, or until a toothpick inserted into cake comes out clean.

- Preheat oven to 350 degrees F (175 degrees C) lightly grease and flour a 9x13 inch pan.
- Sift together flour, salt, cinnamon and baking powder. Set aside.
- In a large bowl, beat eggs and sugar for 15 minutes on high speed with an electric mixer. Add oil and blend in.
- Add four mixture and mix well. Add vanilla. Fold in apples and nuts. Pour batter into 9x13 inch pan.
- In a small bowl, mix 4 teaspoons sugar with 1 teaspoon cinnamon. Sprinkle over cake.
- Bake at 350 degrees F (175 degrees C) for 50 to 60 minutes or until a toothpick inserted into center of cake comes out clean.

I developed this recipe from a blueberry muffin recipe, incorporating my diet preferences and using ideas from my Grandma's best cake.

Steps:
- Notes: Cake can also be sweetened with dates by simmering dates in water until they are quite mushy and most of the water has been absorbed. I would use between 150-200g dates. Adjust baking powder to 1/2t if you use self-raising flour, and use whatever flour you prefer. Sour milk can be made by adding 1T vinegar or lemon juice to sweet milk.
- Optional additions: raisins, sultanas or berries.
- Combine butter and honey. Add eggs. Stir in vanilla, baking powder, and cinnamon, until well combined.
- Alternate milk and flours, stirring each time until well combined.
- Stir in apples and any other additions.
- Bake in round or square baking tin at 175°C/350°F for about 30 minutes. Cake will be firm to the touch and a toothpick should come out clean.

- Preheat the oven to 350 degrees F. Lightly mist an 8 x 8 baking pan with nonstick vegetable oil spray.
- Place the diced apples in a microwave-safe container and microwave for 2 minutes. Cool.
- In a small mixing bowl, combine 1/4 teaspoon apple pie spice and 1 tablespoon sugar substitute and reserve.
- Combine the flours, salt, baking soda, baking powder, and 1 teaspoon apple pie spice in a mixing bowl. Set aside.
- In a mixing bowl, whisk together the oil and 1 cup sugar substitute for 1 minute. Add the egg substitute and vanilla and continue to whisk for 1 minute. Add one-third of the dry ingredients and mix to combine. Add one-third of the Glucerna Shake and mix to combine.
- Repeat the process two more times. Scrape the inside surface of the bowl and fold in the steamed diced apples. Pour the batter into the prepared pan. Arrange the sliced apples on top of the cake batter and sprinkle with the reserved spice and sugar substitute blend.
- Bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean. Transfer to a wire rack and cool. Slice and serve.
