Well, I love apple crisps and rhubarb crisp - but didn't like the strawberry. I took a few recipes I found and mixed and matched and got something that everyone loved. Hope you do as well. Apples-to-rhubarb mixture can be tweaked depending on how much you like rhubarb or how tall you want the crisp to be.

6 large apples, cored and diced
1 cup diced rhubarb
1 cup white sugar
¼ cup all-purpose flour
1 teaspoon ground cinnamon
1 ¾ cups quick cooking oats
1 ½ cups all-purpose flour
1 cup brown sugar
1 cup chilled butter, cut into pieces
2 tablespoons white sugar, or to taste
½ teaspoon ground cinnamon, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Mix apples, rhubarb, 1 cup white sugar, 1/4 cup flour, and 1 teaspoon cinnamon in a bowl until thoroughly combined; spread fruit mixture into bottom of prepared baking dish.
  • Mix quick oats, 1 1/2 cup flour, and brown sugar in a separate bowl; cut butter into the oats mixture until crumbly. Spread the oats mixture evenly over the fruit mixture. If desired, combine 2 tablespoons white sugar with 1/2 teaspoon cinnamon in a small bowl and sprinkle cinnamon sugar over the top of the crisp.
  • Bake in the preheated oven until the fruit is bubbling and thick and the topping is golden brown, about 45 minutes. Let cool 10 to 15 minutes; best served warm.

1/3 cup lightly packed brown sugar
1/3 cup oats
3 tablespoons whole wheat flour
1 teaspoon cinnamon
2 tablespoons margarine, melted
2/3 cup sugar
3 tablespoons flour
1 grated orange, rind of
2 cups sliced apples
2 cups diced rhubarb (fresh or frozen thawed)
1 cup cranberries (fresh or frozen)

Steps:

  • Topping: Combine all ingredients.
  • Mix well.
  • Set aside.
  • Fruit: Combine sugar, flour and orange rind.
  • Add fruits; toss to coat fruit thoroughly with dry ingredients.
  • Spoon into 8-cup baking dish.
  • Sprinkle topping evenly over fruit.
  • Bake at 375 for 40-50 minutes, or until fruit is tender.
  • Serve warm or at room temperature.

  • Combine all topping ingredients in a bowl and mix well. In a separate bowl, combine sugar and flout. Add fruit to flour mixture and toss to coat. Spoon fruit mixture into a lg baking dish, sprinkle with topping mixture. Bake at 375° for 40-50 minutes until fruit is tender.

BOTH my sister-in-law and I both make this for Thanksgiving and Christmas. We both are aware that the other will have it on her menu, but we make it anyway. It's a family favorite, which has become a tradition for holiday meals.

6 cups chopped peeled tart apples (about 7 medium)
1/2 cup fresh or frozen cranberries, thawed
2 tablespoons maple syrup
1 teaspoon lemon juice
1 cup all-purpose flour
1 cup sugar
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup butter, melted
1-1/2 teaspoons ground cinnamon
Vanilla ice cream

Steps:

  • In a large bowl, combine apples and cranberries. Add syrup and lemon juice; toss to coat. Transfer to a greased 11x7-in. baking dish. , In a small bowl, combine the flour, sugar and salt. Stir in egg until blended. Sprinkle over fruit. Drizzle with butter; sprinkle with cinnamon., Bake, uncovered, at 350° for 40-45 minutes or until topping is golden brown and fruit is tender. 2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.
  • In the same bowl, combine oats, flour and brown sugar. With a fork, mix in butter until crumbly. Stir in pecans. Sprinkle over apples.
  • Bake in preheated oven for 40 to 50 minutes, or until topping is golden brown, and apples are tender.

3/4 lb rhubarb, 1/2-inch pieces
3 tablespoons sugar
2 teaspoons flour
1/2 teaspoon vanilla
3/4 cup flour (for topping)
3/4 cup brown sugar
1/2 cup oats
1/2 teaspoon cinnamon
1/2 teaspoon clove
3/8 cup butter
1/2 cup walnuts (optional)

Steps:

  • Pre-heat oven to 350.
  • Combine fruits, sugar flour & vanilla in a bowl and toss to coat.
  • turn into an 8 x 8 glass baking dish.
  • Sprinkle topping mix over fruit.
  • Bake about 45 minute.
  • Cool 20 minutes.

2/3 cup plus 2 Tbsp. brown sugar, divided
1 tsp. ground cinnamon, divided
1/2 cup flour
1/2 cup old-fashioned or quick-cooking oats
1/4 cup cold butter, cut into small pieces
1/4 cup chopped walnuts, toasted
1 cup thawed COOL WHIP Whipped Topping, divided

Steps:

  • Heat oven to 375°F.
  • Toss apples with cranberries, 2 Tbsp. sugar and 1/2 tsp. cinnamon in 8-inch square baking dish sprayed with cooking spray.
  • Combine flour and oats with remaining sugar and cinnamon in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Sprinkle over fruit mixture; top with nuts.
  • Bake 30 min. or until apples are tender and fruit mixture is hot and bubbly. Serve warm topped with COOL WHIP.
