- Line a baking sheet with parchment paper and toss apples with lemon juice, cinnamon and honey. Bake for 5 minutes then roll over parchment paper and tuck it in so they're in a "pocket" to trap in moisture. Cook for 10-15 minutes more (20 minutes total) until soft. Set aside.
- In a small saucepan over high heat, add oats, pinch salt, water and almond milk and stir. When it comes to a boil, reduce to low-medium heat and cook until thick and creamy. Add the chopped dates a few minutes after you reduce the heat so they can soften and sweeten the oats.

- Soak dates: Soak the dates by placing in a small bowl with just enough water to cover them. Allow them to sit for about 10-15 minutes.
- Prepare apples: while the dates are soaking core and chop the apples into tiny chunks, about 1/4 inch thick. Place in a bowl and set aside.
- Make date puree: When the dates are finished soaking, drain and discard the water. Add the dates, fresh water (start with 3/4 cup), cinnamon, salt and nutmeg into a high powered blender and blend until smooth.
- Add more water to thin the date puree if needed. The consistency should be thick but pourable like syrup.

- Before starting, make sure all ingredients are cold to ensure the crust comes out flaky. The whole idea through this dough-making process is to keep the dough cold so that it comes out flakey when baked.
- In a large mixing bowl, mix 2-1/3 cups flour, 1 tablespoon sugar, 1 tablespoon apple cider vinegar or fresh lemon juice, 1/4 teaspoon salt, and 1 cup chilled butter slices. Using a pastry blender, work the mixture until you get a crumbly texture with about 1/2-inch inch butter chunks.
- Starting with 1/4 cup ice water, gradually add the ice water into the mixture and using a large fork and then your fingertips, work the dough until it just comes together into a ball. If it needs more ice water to form a ball, then you can add more and keep the ice water on hand in case you need more later if the dough dries out.

- For the pie crust: In a large bowl, whisk together the flour and salt. With a pastry cutter, gradually cut the cold butter into the flour until pea-sized pieces form.
- Remove one disk of pie crust from the refrigerator and let it temper for 20 minutes until it is soft enough to roll. Roll the pie dough into a 13-inch round on a lightly floured surface.
- For the apple pie filling: In a large bowl combine the sliced apples, sugar, flour, cinnamon and salt. Mix well. Add the filling into the chilled pie crust, arranging the apples tightly together so that there is little space in between.
- Roll out the remaining disk of dough on a floured surface into a 13-inch round. Carefully lay the dough over the filling, fold the overhanging dough under the overhang from the bottom crust, and crimp the edges of the crust using a fork.
- Place the pie on the preheated baking sheet and bake for 15 minutes. Reduce the heat to 350˚ and bake, rotating halfway through, until the filling is bubbly and the crust is golden brown, 50 to 60 more minutes.

- Place chopped apple on a baking sheet and toss with olive oil, maple syrup, cinnamon, and sea salt. Bake for 15-20 minutes or until soft and fragrant. Set aside.
- In a food processor, grind nuts into a meal - a few chunkier pieces are OK. Then add dates and pulse until a loose dough is formed. Transfer mixture to a mixing bowl.
- Give the baked apples another chop with a sharp knife so the pieces aren’t so large. Slowly add apples a few Tbsp at a time until the mixture forms a moist dough. If your mixture got too wet, simply add more ground walnuts, almonds, or even a handful oats. Reserve leftover apples for other use (oatmeal, smoothies, yogurt, etc.)
