APPLE, ORANGE, AND YOGURT DELIGHT
I make these the night before for my husband and I to grab and go the next day. The acid in the mandarin oranges keeps the apples from turning brown. Sometimes, I'll add half a banana to each one for more fruit. I either use nonfat vanilla yogurt or plain nonfat Greek yogurt with a little vanilla extract mixed in. And I don't peel the apples for the extra fiber. It's so simple to make....if you can cut up fruit, then you can have this simple recipe!

Steps:
- Mix the partially drained Mandarin oranges and the chunked apple together. Here is where you can add half a banana too. If you like more juice, spoon some of the reserved juice into the mixture to make sure the apple is coated. This acid stops the apple from turning brown overnight.
- Divide the fruit mixture into 2 containers.
- Top each container with 1/2 cup of vanilla yogurt (or you can use plain yogurt with a bit of vanilla extract stirred in for less sugar)
- If you are going to enjoy this the next day, cover at this step and put in the fridge.
- Top one container with 1/4 cup wheat germ and 1 teaspoon of honey before enjoying!
ORANGE YOGURT
Steps:
- Line a sieve with cheesecloth or paper towels and suspend it over a bowl. Pour the yogurt into the sieve and allow it to drain, refrigerated, for 3 hours or overnight.
- Place the thickened yogurt into a medium bowl and stir in the raisins, walnuts, vanilla, honey, and orange zest. Thin with orange juice until it is a desirable consistency. Garnish with sections of orange, orange zest, raisins, or walnuts and serve.
BAKED APPLES WITH OATMEAL AND YOGURT

Steps:
- Preheat the oven to 375 degrees F. Cut off the top third of each apple. With a small knife, and working from the top of each apple, carefully carve out a large "bowl," including the core, about 2 inches in diameter. Rub the cut part with lemon and put the apples into a 9-inch square baking dish. Dice the carved-out parts of the apples, without the seeds, and set aside. Melt the butter in a small saucepan, and then whisk in 4 tablespoons of the muscovado sugar, the cinnamon and pepper and cook until smooth. Brush the inside of the apples with the butter mixture. Pour the apple cider into the bottom of the baking dish. Cover the dish with foil and bake until the apples are tender, about 30 minutes. Remove the foil and bake for 5 minutes longer. Transfer the apples to a platter. Carefully strain the cooking liquid into a small saucepan and bring it to a boil. Cook until it is reduced and thickened, about 5 minutes. While the apples are baking, stir the hot milk, remaining muscovado sugar, reserved chopped apples and orange zest into the warm oatmeal and cook for a few minutes. Divide the oatmeal among the baked apples. Top each apple with a dollop of yogurt and drizzle the reduced cider over the top.

YOGURT FRUIT DELIGHT

Steps:
- Mix, chill, and serve. Be creative and colorful. This simple treat is a real hit at any party. Use fruits in season. Delicious combinations include: 1. Pineapple chunks, mandarin oranges, and bananas mixed with vanilla, orange, or pineapple yogurt. 2. Watermelon, cantaloupe, honeydew, and pineapple chunks mixed with lemon or vanilla yogurt. 3. Blueberries, raspberries, boysenberries, strawberries, fresh peach, pineapple, and plum chunks gently blended with mixed berry yogurt. 4. Canned chunky fruit cocktail, mandarin oranges, pineapple chunks, and bananas mixed with vanilla yogurt and topped with sliced strawberries and kiwi. *If you are diabetic or highly resistant to fat loss, use plain, nonfat yogurt mixed with All Fruit Jam-a delicious "A" Choice. If you suffer from a lactose (milk sugar) intolerance, try adding "lactaid drops" (found at most pharmacies) to your milk or yogurt or purchase Alta Dena nonfat, fruit-juice-sweetened yogurt which may solve both problems (diabetes and dairy allergies unless you're allergic to the "protein" in the milk). Not only is Alta Dena nonfat yogurt fruit-juice-sweetened, it also contains acidophilus and active yogurt cultures which adds "good" bacteria to your system. It is also very helpful to eat this yogurt when you are taking antibiotics which can destroy "good" bacteria along with "bad" bacteria.
