GRILLED CREAM CHEESE SANDWICH WITH BANANA AND PINEAPPLE SALSA



Grilled Cream Cheese Sandwich with Banana and Pineapple Salsa image

1/2 ripe pineapple, peeled, core removed
1 orange, zested
1 tablespoon sugar, plus 3 tablespoons, plus 1/4 cup
1/4 vanilla bean split
1 tablespoon lime zest
8 ounces cream cheese, softened
1 tablespoon rum
12 slices Brioche, cut 1/2 inch thick, crust removed
4 to 6 ripe bananas, peeled and sliced lengthwise 1/4 inch thick
6 pieces aluminum foil, cut into 8 by 8-inch squares
4 ounces butter, room temperature

Steps:

  • Cut the pineapple in small dice and place in colander. Set aside and let the juice drain, reserving the juice. Julienne the orange zest and place in a small pot and cover with water. Bring to a simmer and cook for 2 minutes. Strain and reserve the zest and the orange flavored water. Using the same small pot, combine the reserved pineapple juice, 1 tablespoon sugar, and orange zest. Scrape the vanilla bean seeds into it the pot as well. Bring to a simmer. Place the pineapple in a bowl and pour over the juice. Let it sit for 2 hours or overnight.
  • Combine the lime zest, 3 tablespoons sugar, cream cheese, and rum in a medium bowl and whip until smooth. Reserve. This can be made and refrigerated up to 2 days in advance.
  • To build the sandwiches, cut each brioche slice in 1/2 and brush with butter on one side. Sprinkle with some of the remaining 1/4-cup sugar and turn over so the non-buttered side is faced up. Spread a 1/4-inch layer of the cream cheese spread on all slices. Put a layer of bananas on 1/2 the slices and place the other slice of brioche on top, forming a sandwich.
  • Lightly butter and sugar the aluminum sheets and place a sandwich on each. Fold up and reserve. Place the sandwiches over a medium low heated grill and cook 3 to 4 minutes on each side or until the sandwich gets nicely toasted on both sides. Remove from grill. These can either be unwrapped and platted or the aluminum can be opened and the pineapple salsa spooned right on top.

These are SO easy and really good. The hot sauce gives it an extra kick and cuts the sweetness. They can help with patience while the rest of the grilled feast comes together, but be warned, they go quickly!

  • Place pineapple in a large resealable plastic bag. Add honey, butter, hot pepper sauce, and salt. Seal bag, and shake to coat evenly. Marinate for at least 30 minutes, or preferably overnight.
  • Preheat an outdoor grill for high heat, and lightly oil grate.
  • Grill pineapple for 2 to 3 minutes per side, or until heated through and grill marks appear.

8 bamboo skewers, soaked in water for at least 4 hours
4 unpeeled ripe bananas, ends trimmed and cut into 2-inch chunks
1 fresh pineapple, peeled, cored, and cut into 2-inch chunks
1/2 cup turbinado sugar or 1/3 cup cane syrup
Zest and juice of 1/2 lemon

Steps:

  • 1. Make a lengthwise slice on the skin of each unpeeled banana chunk to allow easy peeling after bananas are grilled. Thread the fruit onto skewers, alternating chunks of banana and pineapple.
  • 2. To make the glaze, put the sugar in a stainless-steel saucepan and cook over medium-high heat until it becomes liquid, about 3 minutes. Stir with a wooden spoon and add the lemon juice and zest. If using cane syrup, simply add the lemon juice with zest and stir, without heating. Set aside.
  • 3. Fill a charcoal chimney with hardwood lump charcoal, set the chimney on the bottom grill grate, and light. When the coals are ready, dump them into the bottom of the grill and spread evenly. For a gas grill, turn to medium-high.
  • 4. Brush the skewered fruits with the glaze. Place the skewers over direct heat. Grill 3 minutes on each side, until fruit is browned. Remove from grill and brush again with the glaze. Serve immediately.

1/2 cup brown sugar
1/4 teaspoon cinnamon (or more)
1 pinch nutmeg
3 large bananas, ripe but firm
3 cups mango sorbet

Steps:

  • Cut pineapples in half lengthwise, leaving top with leaves attached if you wish to serve it the pineapple shell.
  • Remove most of the pineapple from the halves, in one piece if possible, using a paring knife and grapefruit knife. Cut the pineapple inside piece in half lengthwise and cut out the core. Cut in half lengthwise again and then cut each piece into 2.
  • (You should end up with about 8 long slices from each pineapple.) In a small bowl, combine brown sugar with cinnamon and nutmeg.
  • Toss half this mixture with the pineapple. Peel bananas just before cooking, cut in half crosswise and lengthwise. Toss with remaining sugar.
  • Barbecue pineapple or broil until browned and partially cooked, about 8 to 10 minutes.
  • Cook bananas until browned, about 5 minutes.
  • Serve "sticks" of pineapple and bananas in pineapple shells with a scoop of sorbet. NOTE: If you are not serving it in the shells, buy the pineapple already peeled and cored.
  • It can be cut into rounds or sticks.

1 medium pineapple
1 tablespoon butter, melted
1 tablespoon packed brown sugar
1/8 teaspoon curry powder
1/2 cup nonfat vanilla yogurt
2 tablespoons toasted coconut

Steps:

  • Prepare pineapple by removing the tops and the skin.
  • Cut pineapple crosswise into six 3/4-inch-thick slices, remove the core.
  • Stir together melted butter, brown sugar and curry powder.
  • Grill pineapple slices on an uncovered grill directly over medium coals for 6 to 8 minutes or till heated through, turning once and brushing once or twice with butter mixture.
  • Combine yogurt and coconut. To serve, cut pineapple slices in half. Serve warm with yogurt.
