2 tablespoons cornstarch
4 tablespoons soy sauce
2 teaspoons sugar
5 tablespoons peanut oil
1 pound flank steak, thinly sliced against the grain
1 tablespoon oyster sauce
1 1/4 cups low-sodium chicken broth
4 thin slices peeled ginger
1 head broccoli, cut into florets
1 large onion, halved and sliced 1/2 inch thick
3 plum tomatoes, quartered lengthwise
2 cloves garlic, minced
Cooked white rice, for serving (optional)

Steps:

  • Whisk 1 tablespoon cornstarch, 3 tablespoons soy sauce, 1 teaspoon sugar and 1 tablespoon peanut oil in a large bowl. Add the steak and toss to coat; refrigerate until ready to cook.
  • Whisk the remaining 1 tablespoon each cornstarch and soy sauce, the oyster sauce and chicken broth in a small bowl; set aside.
  • Heat 1 tablespoon peanut oil in a large skillet over high heat. Add the ginger, broccoli and the remaining 1 teaspoon sugar and stir-fry 3 to 4 minutes; transfer to a plate. Heat 1 more tablespoon peanut oil in the skillet, add the onion and stir-fry 2 to 3 minutes. Add the tomatoes and cook, turning gently, 2 minutes. Transfer the onion and tomatoes to the plate with the broccoli.
  • Reduce the heat to medium high; add the remaining 2 tablespoons peanut oil to the skillet. Add the garlic and steak and stir-fry 1 minute. Whisk the sauce mixture, then add to the skillet and simmer 1 minute. Return the vegetables to the skillet; cook until the meat is cooked through, 3 to 4 minutes. Serve with rice, if desired.

1 lb flank steak
2 tablespoons soy sauce
1 tablespoon dry sherry (can substitute 1 Tbs. orange or pineapple juice with a dash of vinegar)
1/2 teaspoon cornstarch
1 (16 ounce) package frozen broccoli, defrosted
1 garlic clove, minced
1 slice fresh ginger, finely minced
2 tablespoons peanut oil
salt

Steps:

  • Slice the steak against the grain into very thin slices.
  • Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
  • Marinate the meat for 15 minutes.
  • While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
  • Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.
  • Stir-fry, stirring constantly, for about 1 minute. Add broccoli and stir-fry for another 4 to 6 minutes, until the broccoli is cooked but still crisp and still dark green.
  • Serve hot. This is low in carbohydrates.

1 tablespoon minced fresh ginger
1 pound ground beef
½ head white cabbage, shredded
½ head red cabbage, shredded
2 large carrots, peeled and cut into thin strips
1 red bell pepper, cut into very thin strips
½ cup reduced-sodium soy sauce
2 tablespoons sesame oil
1 dash hot sauce, or to taste
salt and ground black pepper to taste
2 tablespoons chopped fresh cilantro, or to taste
1 lime wedge

Steps:

  • Heat canola oil in a very large skillet or wok over medium heat. Add garlic and ginger; cook and stir until fragrant, 1 to 2 minutes. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes.
  • Push ground beef to 1 side of skillet and add white cabbage, red cabbage, carrots, and red bell pepper. Mix vegetables with the beef and cook, stirring occasionally, until vegetables are just tender, 5 to 6 minutes.
  • Stir soy sauce, sesame oil, and hot sauce into beef-vegetable mixture until well mixed; season with salt and pepper. Serve slaw with fresh cilantro, lime wedge, and more hot sauce.

I like the packages of broccoli slaw to make lunch salads for the week. Looking for an Asian theme, this is a combination of a few recipes I found. I used Huy Fong Chili Garlic sauce, but any chili sauce you like would work. Adjust the sugar, sesame oil and Thai chili sauce to taste.

1 (12 ounce) package broccoli Coleslaw
1 teaspoon kosher salt
black pepper
1/4 cup rice vinegar
2 tablespoons olive oil
1 teaspoon sesame oil
2 teaspoons turbinado sugar
1 tablespoon chili-garlic sauce

Steps:

  • Place broccoli coleslaw in a one quart container with a tight fitting lid.
  • Season with salt and pepper to taste.
  • Combine rice vinegar, olive oil, sesame oil, sugar and chili garlic sauce in a small bowl. Whisk to combine.
  • Pour dressing over slaw. Lid up and shake to combine.
  • Refrigerate until ready to serve. A longer chill makes for better flavor.

3 tablespoons minced fresh mint
3 tablespoons sesame oil
1/3 cup miso paste
1 beef top sirloin steak (1 inch thick and 1 pound)
1 package (12 ounces) broccoli coleslaw mix
1 medium mango, peeled and diced
1 cup frozen shelled edamame, thawed
1/4 cup sliced radishes
1/4 cup minced fresh cilantro
1 green onion, sliced
Grated lime zest, optional

Steps:

  • For dressing, place first 4 ingredients in a blender; cover and process until blended. Reserve 1/2 cup dressing for slaw. Brush remaining dressing onto both sides of steak; let stand while preparing slaw., Place coleslaw mix, mango, edamame, radishes, cilantro and green onion in a large bowl. Toss with reserved dressing., Grill steak, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-7 minutes per side. Let stand 5 minutes before slicing. Serve with slaw. If desired, sprinkle with lime zest.

3 medium garlic cloves, minced
6 tablespoons soy sauce
1 tablespoon rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 teaspoon ground ginger
¾ teaspoon hot red pepper flakes
2 tablespoons mayonnaise
¼ cup vegetable oil
2 tablespoons salt
1 pound penne pasta
8 ounces broccoli florets
1 pound rare deli roast beef, sliced 1/8 inch thick and cut into bite-size strips
3 medium carrots, peeled and coarsely grated
1 medium red bell pepper, cut into bite-size strips
2 cups bean sprouts
3 green onions, thinly sliced
½ cup chopped roasted (or honey-roasted) peanuts
¼ cup chopped fresh cilantro

Steps:

  • Mix garlic, soy sauce, vinegar, sugar, sesame oil, ginger, and pepper flakes in a 2-cup Pyrex measuring cup. Whisk in mayonnaise until smooth, then in a slow steady stream, whisk in oil to make an emulsified dressing; keep chilled until ready to toss with salad. Store in a clean jar with lid.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil in a large soup kettle. Add pasta and, using package times as a guide, boil, stirring frequently and adding broccoli the last 1 minute, until just tender. Drain thoroughly (do not rinse) and dump onto a large, lipped cookie sheet. Set aside while preparing remaining salad ingredients.
  • Place all salad ingredients (except soy-ginger dressing) in a large bowl or transfer to a gallon-size zipper bag. (Can be covered and refrigerated several hours at this point). When ready to serve, add dressing; toss to coat and serve.

  • Dissolve remaining 1 tablespoon cornstarch in cold water in small bowl. Set aside. Heat broth, pepper, soy sauce, oyster sauce and corn starch mixture to same skillet. Bring to a boil, stirring constantly, until sauce is thickened and bubbly. Reduce heat; simmer 5 minutes to desired thickness.
  • Add beef mixture and broccoli to skillet. Cook and stir until heated through. Serve over rice or noodles. Garnish with toasted sesame seeds or drizzle with sesame oil, if desired.
