JAPANESE-STYLE GUACAMOLE



Japanese-Style Guacamole image

Bet I got your attention with this dish!!! It incorporates edamame and asian condiments along with the traditional guacamole ingredients such as avocado, lime juice, cilantro and tomatoes. This recipe is from Cooking Light and it is so interesting that I had to post it. This dish is served with veggies such as carrot sticks, celery, etc.

1/2 cup edamame, shelled and chopped
2 tablespoons pickled ginger
1/4 cup green onion, chopped
1/4 cup tomatoes, chopped
2 tablespoons cilantro, chopped
1 tablespoon jalapeno pepper, seeded and minced
1 tablespoon sesame oil
2 tablespoons low sodium soy sauce
2 tablespoons fresh lime juice
2 avocados, chopped
salt and black pepper

Steps:

  • Combine the first 6 ingredients in a large mixing bowl, and toss well. Add sesame oil, soy sauce, and lime juice, toss gently. Add avocado, using a large fork or potato masher. Coarsely mash avocado to incorporate making sure to leave the guacamole chunky. Add salt and black pepper. Place in an air-tight container and refrigerate until ready to serve. Serve with celery, carrot sticks, broccoli, and asparagus.

1 small avocado, halved, pitted, peeled and mashed
Juice of 2 limes
1 teaspoon minced fresh chili, preferably habanero
1/4 cup minced scallions
1/4 cup chopped cilantro leaves
1 teaspoon grated fresh ginger
2 teaspoons wasabi powder
Salt
1 sheet kaipen
1/3 cup vegetable oil

Steps:

  • Combine avocado, lime juice, chili, scallions, cilantro, ginger and wasabi. Season with a little salt. Cover and set aside.
  • Cut kaipen in 3-inch squares. Soak in water a few seconds. Blot well on paper towels.
  • Place oil in skillet, and heat to very hot. Fold kaipen in half on the diagonal, and fry briefly, turning once. Drain on paper towels. When cooled to room temperature, serve with guacamole, or fill triangles with guacamole mixture and serve.

1 cup chopped tomatoes
¼ cup chopped onion
¼ cup chopped cilantro
2 tablespoons lemon juice
1 jalapeno pepper, seeded and minced
salt and ground black pepper to taste

Steps:

  • Mash avocados in a bowl until creamy.
  • Mix tomatoes, onion, cilantro, lemon juice, and jalapeno pepper into mashed avocado until well combined; season with salt and black pepper.
