This is the most moist, fabulous tasting meatloaf--everyone loves it! The Hoisin sauce is available in the Oriental Food Section of the grocery store... it is like cross between soy and ketchup, and makes a wonderful glaze for this moist meatloaf. We love this dish. Very moist. Serve with rice and steamed broccoli. A wonderful dinner. Leftovers make great sandwiches.

1 ½ pounds ground beef
½ pound ground pork
3 slices bread, broken up into small pieces
2 eggs, lightly beaten
1 small onion, finely chopped
2 stalks celery, finely chopped
3 tablespoons soy sauce
1 tablespoon minced fresh ginger
2 tablespoons hoisin sauce
½ cup hoisin sauce
2 tablespoons ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix together the beef, pork, bread crumbs, eggs, onion, and celery. Season with 3 tablespoons soy sauce, ginger, and 2 tablespoons hoisin sauce. Pat mixture into a shallow 2 quart baking pan.
  • Bake in preheated oven for 40 minutes.
  • Drain grease from pan. In a small bowl, mix 1/2 cup hoisin with 2 tablespoons ketchup. Spread over top of meatloaf. Continue baking for 20 minutes or so. Remove from oven, and let rest for 5 minutes.

1 1" piece ginger, peeled
1 small garlic clove
1/2 cup creamy peanut butter (like Once Again or Jif)
2 tablespoons reduced-sodium soy sauce
1 tablespoon fresh lime juice
1 teaspoon (packed) light brown sugar
1/4 -1/2 teaspoons crushed red pepper flakes

Steps:

  • With motor running, drop ginger and garlic clove into a blender and blend until finely chopped. Add peanut butter, soy sauce, lime juice, brown sugar, red pepper flakes, and 1/3 cup water and blend, adding more water by tablespoonfuls if needed to thin, until smooth. DO AHEAD: Peanut sauce can be made 3 days ahead. Transfer to a small bowl, cover, and chill. Bring to room temperature before using.

  • Preheat oven to 350°. In a large bowl, combine first 10 ingredients. Add turkey and sausage; mix lightly but thoroughly. Transfer to 2 greased 9x5-in. loaf pans. Mix topping ingredients; spread over tops., Bake until a thermometer reads 165°, 50-55 minutes. Let stand 10 minutes before slicing. Freeze option: Shape meat loaves in plastic wrap-lined loaf pans; cover and freeze until firm. Remove from pans and wrap securely in foil; return to freezer.   • In a big bowl, combine all the ingredients EXCEPT 2 cups of rice, the glaze, and the

  • Bake for 45 minutes; meanwhile make the glaze-in a small bowl, whisk the glaze ingredients together.

  • Remove the loaf from the pan and slice to serve.
