ASIAN SLAW WITH SESAME GINGER DRESSING



Asian Slaw with Sesame Ginger Dressing image

This Asian slaw side dish is a simple combination of shredded cabbage, carrots, and sliced apples tossed is a sweet and tangy sesame ginger dressing.

4 cups shredded napa cabbage (or green cabbage, ¼-inch thick)
3 cups shredded red cabbage (¼-inch thick)
1 cup shredded carrots
1 cup thinly sliced fuji apples ( or red apples, ⅛-inch thick)
¼ sliced green onions (cut on a bias)
¼ cup cilantro leaves
1 teaspoon sesame seeds (black and white)
¼ cup rice vinegar (unsweetened)
3 tablespoons honey
2 tablespoons mayonnaise
1 teaspoon soy sauce
1 teaspoon finely minced garlic
1 teaspoon finely minced ginger
¼ teaspoon black pepper
1 tablespoon sesame oil (toasted)
1/2 cup olive oil

Steps:

  • In a large bowl combine napa cabbage, red cabbage, carrots, apples, green onions and cilantro leaves.
  • In a small bowl, whisk together rice vinegar, honey, mayonnaise, soy sauce, garlic, ginger, and black pepper until completely combined. Gradually whisk in sesame oil and olive oil until dressing is lightly thickened. Taste and season with more salt and pepper as desired.
  • Drizzle half of the dressing over the coleslaw, gently toss to combine. Add more to taste, or serve on the side. Serve within 1 hour of combining.

1 green onion/scallion
other vegetable choices ((shelled edamame, bell peppers))
½ cup apple cider vinegar
3 Tbsp sugar
2 Tbsp roasted sesame oil
2 Tbsp toasted white sesame seeds
¼ tsp kosher salt (Diamond Crystal; use half for table salt)
freshly ground black pepper

1/4 cup seasoned rice vinegar
2 tablespoons dark sesame oil
1 tablespoon honey
1/2 teaspoon salt
1 jalapeno peppers (2 t) or 1 serrano pepper, seeded and minced (2 t)
1 gala apples, halved, cored and thinly sliced
1 golden delicious apple, halved, cored and thinly sliced
1 granny smith apple, halved, cored and thinly sliced
8 cups napa cabbage, finely shredded
1 red bell pepper, seeded and cut into thin strips
1/2 seedless cucumber, cut in thin strips
3 scallions, thinly sliced
3/4 cup cilantro
2 tablespoons toasted sesame seeds
1 (3 ounce) container radish sprouts

Steps:

  • In large bowl, whisk vinegar, oil, honey, salt and chile pepper until blended.
  • Add apple slices and toss to coat.
  • Add remaining ingredients, except radish sprouts, and toss to coat (slaw can be made up to 4 hours ahead and refrigerated).
  • Just before serving, scatter radish sprouts over the slaw.
  • Gently toss.

2 (3 ounce) packages beef-flavor ramen noodles
2 (8 1/2 ounce) packages coleslaw mix
1 cup sliced almonds, toasted
1 cup sunflower seeds
1 bunch green onion, chopped
1/2 cup sugar
3/4 cup vegetable oil
1/3 cup white vinegar

Steps:

  • Remove flavor packets from soup mix, and set aside; crush noodles.
  • Place noodles in bottom of a large bowl.
  • Top with slaw mix; sprinkle with almonds, sunflower kernels and green onions.
  • Whisk together contents of flavor packets, sugar, oil, and vinegar and pour over slaw.
  • Cover and chill 24 hours.
  • Toss before serving.
