OLD FASHIONED BREAD AND BUTTER PICKLES

Steps:
- In a large bowl, toss together, cucumbers, onions, and salt
- Add ice, and toss a bit to combine
- Let sit in refrigerator for several hours or overnight
- Drain and rinse cucumbers and onions
- Combine remaining ingredients except garlic, in a large sauce pan
- Bring to a boil, and reduce to simmer for 3-5 minutes
- Pack cucumbers and onions into clean jars
- Pour brine over each jar filling to about 1/2 inch from the top
- Fit with clean lids and bands
- Inversion seal by inverting jars for 2 minutes before turning right side up and letting cool. Then let jars pickle for 7 days before opening
- Or water bath can by fitting a waterbath canner with bottom insert, placing jars inside, spacing so that they don't touch each other, and filling canner with warm water at least an inch over the top of the jars.
- Bring to a rolling boil, and continue boiling for 10 minutes
- Let cool before opening canner.
- Enjoy!

- In a large bowl, mix together cucumbers, onions, green bell peppers, garlic and salt. Allow to stand approximately 3 hours.
- In a large saucepan, mix the cider vinegar, white sugar, mustard seed, celery seed, whole cloves and turmeric. Bring to a boil.
- Drain any liquid from the cucumber mixture. Stir the cucumber mixture into the boiling vinegar mixture. Remove from heat shortly before the combined mixtures return to boil.
- Transfer to sterile containers. Seal and chill in the refrigerator until serving.

DEB'S BREAD AND BUTTER PICKLES
This pickle recipe was handed down to me. I have been making these for at least 20 years from cucumbers my Dad grows in his garden. I give them to friends and family and have trouble keeping up with the orders. The recipe is the star here as these are the best bread and butter pickles I've ever found. These don't need to be refrigerated until you open a jar.

Steps:
- Stir 2 quarts water and salt in a large pot until salt is dissolved. Submerge cucumbers in the water. Add ice to the water to keep cold. Let cucumbers soak for 2 hours.
- Drain salt water from pot. Rinse and drain cucumber slices twice.
- Stir sugar, 4 cups water, apple cider vinegar, turmeric, mustard seed, and celery seed together in a large pot; bring to a boil. Reduce heat to low; add cucumber slices. Simmer until the cucumbers are completely hot, but do not bring to a boil, about 10 minutes.
- Sterilize canning jars and lids in boiling water for at least 5 minutes. Pack the cucumbers into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Let cucumbers pickle 2 weeks before eating, shaking each jar once daily.

- -Slice onions and cucumbers to the desired thickness -Stack in layers in large pot, [ cucumbers / onions and sprinkle each layer with salt ] -Let stand for 3 hours, Cover with towel, salt will remove water from cucumbers [ outside the house ] -After 3 hours drain in colander -Combine vinegar, sugar, mustard seed, Celery seed and Cayenne in a large pot, bring to a boil for 5 minutes / Add cucumbers and onions, heat to simmering point, make sure mixture is very hot -Pack in hot sterilized pint jars / seal at once while hot -After caps have "popped" and jars cool down - Remove ring, clean exterior of jar, dry and reassemble
