Avocado Cilantro Cornbread Muffins image

This dense and flavorful waffle hides the healthy monounsaturated fat of avocado.

1 very ripe avocado; peeled, seeded, pureed
¼ cup honey
2 eggs
1 cup buttermilk
1 teaspoon baking soda
1 cup cornmeal
1 cup whole-wheat flour
1 jalapeno, seeded and finely chopped
1 clove garlic, finely chopped
½ cup chopped cilantro
½ teaspoon salt

Steps:

  • Preheat oven to 375°. Grease an 8-inch rectangular pan with oil or butter; set aside.
  • In a large bowl, mix avocado, honey and eggs; beat until well blended. Combine buttermilk with baking soda, and stir into mixture.
  • Add cornmeal and flour; mix until no lumps remain.
  • Add jalapeno, garlic and salt, and give mix a final stir. Pour batter into greased pan.
  • Bake 30-40 minutes, or until a fork/toothpick inserted in the center comes out clean.

Taco Soup with Jalapeño-Cheddar Cornbread Muffins image

This taco soup is a marriage of soup and chili in the best way possible. Ground beef and fresh chorizo get browned and simmered with chili powder, cumin and paprika until fragrant. Then fire-roasted tomatoes and mild green chiles are stirred in for a Tex-Mex twist. Quickly whip up jalapeño and Cheddar cornbread muffins to serve on the side, and top with sour cream, cilantro and some diced avocado for a hearty, family-friendly meal.

Nonstick cooking spray
1 cup cornmeal
1/4 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
Kosher salt
1 cup buttermilk
1 large egg
4 tablespoons unsalted butter, melted
2 tablespoons dark brown sugar
1/2 large jalapeño, minced
4 ounces sharp Cheddar, finely diced (about 1/4-inch dice)
2 tablespoons vegetable oil
1 pound 80% lean ground beef chuck
8 ounces fresh chorizo, casings removed
1 large yellow onion, diced
1 red or orange bell pepper, diced
Kosher salt and freshly ground black pepper
4 cloves garlic, minced
2 tablespoons chili powder
2 tablespoons tomato paste
1 tablespoon ground cumin
2 teaspoons paprika
1/4 teaspoon cayenne pepper
2 cups low-sodium beef broth
One 28-ounce can fire-roasted diced tomatoes
Two 15.5-ounce cans black beans, drained and rinsed
Two 4-ounce cans diced mild green chiles
Diced avocado, for serving
Sour cream, for serving
Fresh cilantro, for serving
Lime wedges, for serving

Steps:

  • For the Jalapeño-Cheddar Cornbread Muffins: Preheat the oven to 425 degrees F and generously spray 9 cups of a 12-cup muffin tin with nonstick cooking spray.
  • Whisk together the cornmeal, flour, baking powder, baking soda and 1/2 teaspoon salt in a medium bowl. Whisk together the buttermilk, egg, melted butter and dark brown sugar in a large bowl. Fold the cornmeal mixture, jalapeños and Cheddar into the buttermilk mixture until just combined (it's OK if there are some small lumps).
  • Divide the batter evenly among the 9 greased muffin cups. Bake until golden brown and a toothpick inserted into the center comes out clean, 10 to 12 minutes. Let the muffins cool in the pan for 5 minutes. Then run an offset spatula around the edges of each muffin and invert onto a wire rack to cool completely, about 30 minutes.
  • For the taco soup: While the muffins bake, make the taco soup. Heat the oil in a large Dutch oven or large pot over medium-high heat. Add the ground beef and chorizo and cook, breaking up the meat with a wooden spoon, until browned and crumbly, about 6 minutes. Add the onion, bell pepper, a pinch of salt and several grinds of black pepper. Cook, stirring occasionally, until softened, about 6 minutes. Add the garlic and cook, stirring frequently, until fragrant, about 30 seconds. Add the chili powder, tomato paste, cumin, paprika, cayenne pepper and 1/2 teaspoon salt. Cook, stirring frequently, until coated and fragrant, about 1 minute.
  • Stir in the beef broth, fire-roasted tomatoes, black beans and green chiles, and bring to a boil over high heat. Reduce the heat to medium-low, then simmer, partially covered, until the meat and beans are very tender and the sauce thickens slightly, 35 to 45 minutes. Taste and adjust the seasoning with salt and pepper.
  • Ladle into bowls and top with diced avocado, sour cream and fresh cilantro. Serve with lime wedges and the Jalapeño-Cheddar Cornbread Muffins.

SERRANO CHILI AND CILANTRO CORNBREAD MUFFINS



Serrano Chili and Cilantro Cornbread Muffins image

Entered for safe-keeping, Reggie Dwork (bread-bakers) found this on bigoven.com, said they are "moist and chewy, spicy and sweet", so I have to try this! When handling serrano chilies, do not touch your eyes; I wear latex gloves. If you don't like chilie peppers, just saute 1/2 cup onions in 1 tablespoon of extra-virgin olive oil and use them in lieu of the chilie peppers.

2 small serrano chilies or 2 ounces canned diced green chiles
1 1/2 cups unbleached white flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
1 teaspoon salt
1 pinch cayenne
2/3 cup milk or 2/3 cup soymilk
2 large eggs
1/2 cup expeller-pressed canola oil or 1/2 cup grapeseed oil
3 tablespoons pure maple syrup or 3 tablespoons sugar
1/4 cup fresh cilantro, chopped
3 tablespoons honey
3 tablespoons soft butter

Steps:

  • BROILER-BLACKENED CHILIES:.
  • Put the chilies on a baking pan on the top rack under the broiler until they blister and turn black. Turn them over and repeat. Remove them from the broiler and drop them into a brown bag to cool. The skin will become loose and flaky as they cool.
  • OPEN-FLAME-BLACKENED CHILIES:.
  • Alternatively, roast the chilies over a flame or over a barbecue grill. Hold the chilies 4" away from the flame and rotate until all sides of the pepper turn black (I would use a grilling basket or a soaked bamboo skewer in case you wanted to use your hands again someday.).
  • MIX:.
  • Preheat oven to 350 degrees F. If using cast iron pans (for the best crust), grease them and put them in the oven during preheating.
  • In a large bowl, mix together all the dry ingredients.
  • In a separate bowl, whisk together the milk, eggs, oil or butter, maple syrup or sugar, and the cilantro.
  • Stir the wet ingredients into the dry ingredients with a wooden spoon until thoroughly mixed.
  • Take the chilies out of the bag and slice them in half, directly down the middle. Open them up. Remove and discard the seeds. Peel off and discard the blistered skin. Cut the chilies into small pieces and stir them into the batter until they are completely mixed inches.
  • Smear a little butter or oil on the bottoms and sides of a 9-inch square baking pan or 12 muffin molds and pour the batter inches
  • Bake 20 minutes if using a muffin pan, or 25 minutes if you're using a baking pan.
  • Remove from the oven and let cool.
  • HONEY BUTTER:.
  • Blend the softened butter and honey in a bowl with a fork, whipping lightly to create a creamy spread. Scoop the spread into a ramekin and serve with the cornbread.
  • PRESENTATION OF SQUARE PAN CORNBREAD:.
  • Make 1 slice directly down the middle of the baking pan and 4 slices across to make 10 rectangular pieces.
