This recipe has the flavor of traditional ranch dressing but is extra smooth and creamy, thanks to the avocado. Making dressing at home is a great alternative to store-bought because you know exactly what's inside. Dip crunchy veggies into the dressing for an easy afternoon snack.

One 8-ounce avocado, halved, pitted and peeled
1 1/4 cups low-fat buttermilk
1 teaspoon white wine vinegar
3 scallions, whites and light greens chopped

1/2 clove garlic, finely chopped
1/4 cup loosely packed chopped fresh chives
1/4 cup loosely packed fresh dill leaves
1/4 cup loosely packed fresh flat-leaf parsley
Fine salt and freshly ground black pepper

Steps:

  • Process the avocado, buttermilk, vinegar, scallions, garlic, chives, dill and parsley in a blender until smooth. Season with 1/2 teaspoon fine salt and a few grinds of pepper. Transfer to a medium bowl, cover with plastic wrap so that it sits directly on the dressing and refrigerate for 30 minutes up to 1 day before using.

1 large Avocado (seed and skin removed)
1/4 cup Plain Greek Yogurt (or sour cream)
2 tablespoons Mayonnaise
1 tablespoon Lemon Juice (1/2 lemon juiced) (or White Vinegar)
1 clove Garlic (minced)
1/2 teaspoon Dried Parsley (or 1 tsp fresh parsley)
1/2 teaspoon Dried Dill (or 1 tsp fresh dill)
1/2 teaspoon Dried Chives (or 1 tsp fresh chives)
1/2 teaspoon Dried Onion (or 1 tsp raw onion)
1/8 teaspoon Sea Salt
Black Pepper to taste
1/2 cup 1% Milk (or preferred milk)

Steps:

  • In a food processor or blender, combine AVOCADO, YOGURT, MAYONNAISE, LEMON JUICE (or VINEGAR), GARLIC, PARSLEY, DILL, CHIVES, ONION, SALT, and PEPPER. Blend until well-combined.
  • Continue blending and add MILK in small amounts to reach desired consistency.
  • Refrigerate avocado dressing in an airtight container up to 5 days.

1 small clove garlic, peeled and smashed
Coarse salt and freshly ground pepper
1 avocado (8 ounces), chopped
1 tablespoon white-wine vinegar
1 cup low-fat buttermilk
1 teaspoon Dijon mustard
2 tablespoons extra-virgin olive oil
1 cup mixed fresh herbs (such as chives, tarragon, basil, cilantro, and parsley), plus more for serving
Crudites, for serving

Steps:

  • Using a flat side of a knife, mash garlic with 1/2 teaspoon salt until a paste forms. Transfer to a food processor with avocado, vinegar, buttermilk, mustard, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper; puree until smooth. Add herbs; pulse just to combine.
  • Transfer to a bowl, cover, and refrigerate at least 30 minutes and up to 4 hours. Sprinkle with more herbs and serve, with crudites.
