BEEF AND BACON PASTA BAKE
A delicious Beef and Bacon Pasta Bake recipe that is a family favourite dinner. This pasta bake is quick and easy to make, and the combination of beef and bacon is always a winner!

Steps:
- Preheat oven to 180°C, fan forced.
- Cook pasta following packet directions, drain and return to saucepan.
- In a large frying pan, heat oil over medium-high heat.
- Add bacon, onion and garlic to pan. Cook for 3-5 minutes or until browned.
- Add mince, cook and stir for 5 minutes or until browned.
- Add passata sauce, carrot, peas and corn. Stir and bring to the boil.
- Simmer uncovered for 5 minutes or until liquid has reduced.
- Combine mince mixture and cooked pasta. Toss to stir through. Season with salt and pepper.
- Spoon pasta mixture into a 12-cup (3L) oven-proof dish.
- Sprinkle with cheese.
- Bake pasta bake in oven for 20-30 minutes or until golden. Serve.
OVEN-BAKED BACON
I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Place bacon slices one next to the other on the prepared baking sheet.

- Preheat oven to 350 degrees F. Cook bacon in large skillet until crisp. Reserve 2 tablespoons of the drippings. Drain bacon on paper towels; crumble and set aside. Add onion to drippings in skillet; cook and stir 3 minutes or until softened.
- Spread 1/2 of the bread cubes in 13x9-inch baking dish. Layer with 1/2 each of the onion, bacon, Cheddar cheese and mozzarella cheese. Spread evenly with cottage cheese. Top with remaining bread cubes, onion, bacon, Cheddar cheese and mozzarella cheese.
- Beat eggs in medium bowl until foamy. Add milk, mustard, nutmeg and pepper; beat until well blended. Pour evenly over top. Press bread cubes lightly into egg mixture until completely covered. Let stand 10 minutes.
- Bake 40 to 50 minutes or until center is set and top is golden brown.

- Preheat your oven to 400°F. Line a rimmed baking sheet with foil for easy cleanup.
- Arrange the bacon slices in a single layer on the prepared baking sheet. It's okay if they touch each other, but they should not be stacked on top of each other.
- Place the pan in the oven and bake the strips until well browned, 15-20 minutes.
- Be careful when removing the pan from the oven - its bottom will have quite a bit of hot rendered fat.
- Using tongs, remove the strips to a plate lined with paper towels. Serve immediately.

- Preheat oven to 375 degrees.
- In a 2-quart Dutch oven, cook bacon over medium, flipping occasionally, until some of the fat is rendered and bacon is browned in places, about 7 minutes. Transfer to a plate.
- In a large bowl, combine maple syrup, mustard, ketchup, brown sugar, chicken broth, Worcestershire, and garlic. Stir in beans. Season with 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
- Transfer beans to Dutch oven and top with bacon and thyme. Bake, covered, for 30 minutes. Uncover and continue to bake until liquid has thickened and bacon is brown, about 40 minutes more. Let sit 5 minutes; mix well before serving.
BEEF AND PASTA BAKE - THE BEST!
I have tried so many pasta bakes but this one from the Australian Women's Weekly is still the best IMHO! Easy and very delicious, reheats great and everyone loves it - what more could you want! I've tried to translate the recipe into American as much as possible; hope you enjoy it as much as my family does.

- Preheat oven to 180 (350F).
- Heat oil in large pan; cook onion, garlic, bacon and carrot, stirring, til carrot is just tender - about 8 minutes *.
- Add mince and cook, stirring, til mince changes colour; then add undiluted soup, tomato paste, sauce and oregano and simmer, covered, about 15 mins or til mixture has thickened slightly.
- While beef mixture is simmering, cook pasta and drain. Stir pasta into beef mixture, then spoon into an oiled deep 8 cup capacity ovenproof dish and sprinkle with cheese. Bake, uncovered, for 15 mins or until browned slightly.
- *If you want to, you can add a stick of chopped celery along with the onion etc or add some mushrooms just before the mince.
BAKED BACON (OVEN FRIED BACON)
Serves 100; allow 3 slices per serving. Reduce bacon by 6 lbs. for 2 slices per person. I used bacon I got over the meat counter in the store, so it was thicker. There were 12 slices per pound, so ask your butcher to weigh a pound and then count the slices. That way you'll have the correct amount. The bread is only here because I need more then one ingredient to post this. I like to fix ours this way when we have BLT's. Then all the bacon is still warm when we sit down to eat.

- Arrange slices in rows, across pans with fat edges slightly overlapping lean edges.
- Bake 375 degrees without turning 20-25 minutes (depending on thickness) until bacon is slightly crisp.
- I have been draining the grease and flipping the bacon, then back in the oven for 5 minutes or so.
- Watch closely.
- DO NOT OVERCOOK.
- Drain or skim off excess fat at needed.

- The longer you bake after 20 minutes the greater the risk of producing a dry, burnt piece of bacon.

- Take the eggs out of the refrigerator. Place a rack in the center of the oven, and heat the oven to 450 degrees.
- Arrange the bacon on a rimmed baking sheet in a single layer, spacing evenly. Roast in the center of the oven until the fat renders and the bacon curls, about 8 minutes. Very thin slices will cook more quickly; thick-cut ones will take longer.
- Take the pan out of the oven and quickly flip the bacon and move to one side of the pan. - If making an amount of bacon that will fit on a single baking sheet without overlapping (about 6 to 8 slices, depending upon the bacon and sheet), place a rack in the center of your oven. If making a larger amount, place the racks in the upper and lower thirds. Preheat your oven to 400 degrees F.
