SUNNY'S CANDY BAR AND BACON ROLLS
Steps:
- For the rolls: Preheat the oven to 350 degrees F.
- On a lightly floured flat surface, roll out the dough and separate it into 4 rectangular parts, leaving 2 triangles attached for each of the 4 sections. Each section should appear to be a rectangle with a perforated dividing line through its center diagonally. Carefully pinch together the 2 triangles along this line to close the gaps and seal it to make it 1 piece. Cut each piece in half to make 2 squares. Repeat for each and place on a nonstick baking sheet with sides. There should be 8 squares to fill.
- Combine the candy bars and bacon in a medium bowl. Add 1 heaping tablespoon of the candy mixture in a row along the length of the prepared dough in the center, leaving enough room to pull the uncovered dough on the edges up and over the pile of filling.
- For the topping: In a small bowl, mix the sour cream and just enough water to make it loose like glue, yes glue. Brush this over the top of each roll and sprinkle with sugar and a pinch of flake salt.
- Bake until golden on top, 16 to 20 minutes. Allow to cool slightly.
CANDIED BACON
This is a really easy breakfast item because you can put it in the oven, set the timer and forget about it while you make everything else and pull it out just before sitting down so it's piping hot.

- Preheat the oven to 325 degrees F.
- Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
- Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

- Mix brown sugar, rice vinegar, maple syrup, and black pepper in a small bowl.
- Place bacon slices on cooling rack set over a baking sheet.
- Bake in the preheated oven for 10 minutes, turn slices, and bake another 5 minutes.
- Remove bacon and brush both sides with brown sugar mixture. Return bacon to the oven and bake another 5 minutes. Repeat basting every 5 minutes until bacon is browned and crisp, about 35 minutes.

- Heat oven to 350°F. Insert wooden stick into each candy bar.
- Remove cookie dough from wrapper; cut into 24 pieces. Roll each piece into ball; flatten each ball slightly in hand. Place candy bar in center of flattened dough. Wrap dough around candy, covering and sealing completely. Place 2 inches apart on ungreased cookie sheet, overlapping wooden sticks as needed.
- Bake at 350°F. for 10 to 12 minutes or until edges are light golden brown. Cool on cookie sheets for 5 minutes. Remove from cookie sheets; place on wire racks. Cool 1 hour or until completely cooled. (Do not pick up cookies using stick until completely cooled.)

- Preheat oven to 400 degrees F (200 degrees C). Place a baking rack on top of a large baking sheet.
- Thread each slice of bacon onto a skewer; place skewered bacon on the baking rack.
- Bake bacon in the preheated oven until crisp; 20 to 25 minutes. Remove from oven and cool completely.
- Combine chocolate chips and shortening in a microwave-safe bowl. Heat in the microwave in 30 second intervals until chocolate is melted and smooth, stirring after each interval.
- Coat each side of the skewered bacon with the chocolate mixture using a pastry brush. Place coated bacon on a sheet of waxed paper. Refrigerate until firm, at least 30 minutes. Store in refrigerator until ready to serve.

- Partially cook bacon and press between paper towels to remove excess grease.
- Freeze candy bars until solid.

CHOCOLATE ALMOND BACON BARS
From the in-flight magazine on Southwest Airlines. I used Ghiradelli 60% chocolate chips, Nestle white chips, and nestle semi-sweet chips. The oil in the coating seems weird and is hard to mix in but the end result was right for coating. The white chips were a mistake, didn't firm up. Because the white is runny, these have to stay in the freezer. I also used raw almonds, chopped, and toasted in the pan I cooked the bacon in. Kind of weird but definitely man-candy. Everything is better with bacon!

- Heat 1 cup heavy cream almost to boiling.
- Melt dark chocolate in double boiler or microwave.
- Mix melted chocolate and cream. Stir in almonds.
- Pour mixture onto greased cookie sheet and freeze until firm.
- Fry bacon until crisp and chop finely.
- Heat 1/2 cup cream almost to boiling.
- Melt white chocolate in double boiler or microwave.
- Combine cream, melted chocolate, and bacon.
- Spread over dark chocolate layer.
- Place in freezer one hour.
- Cut bars to desired size and freeze.
- Melt semi-sweet chocolate in double boiler or microwave.
- Whisk in vegetable oil.
- Arrange bars on wire rack over pan and pour melted chocolate over to cover.
- Freeze before coating other side.
- Store in refrigerator.
