- 1.Preheat oven to 170° 2.Line two cookie sheets with parchment paper. Fit a large piping bag with a star tip. 3.Place the egg whites in a "spotlessly" clean mixing bowl and whip them with an electric mixer on medium speed until frothy. 4.Stop the mixer and add cream of tartar. Start mixer again and continue to beat the egg whites until soft peaks form. 5.Increase speed to high and gradually add in sugar *this is where I added the flavor packet as well 6.Beat egg whites until they are shiny and hold stiff peaks but are not dry or crumbly, about 7 minutes. 7.Make sure the sugar is dissolved by rubbing a tiny bit of meringue between fingers. If you feel granules of sugar continue to beat until all sugar has dissolved. 8.Spoon the meringue into the piping bag and pipe onto prepared baking sheets. 9.Bake the meringues for 90 minutes turning them halfway through baking. 10.When meringues are done, turn off oven and let them stand for several hours or overnight. The meringues should be hard and dry to touch and you should be able to easily lift them from parchment.
CANDY-CANE MERINGUES
Steps:
- Beat 3 egg whites until frothy. Beat in 3/4 cup superfine sugar and a pinch each of cream of tartar and salt until stiff peaks form. Add 1 teaspoon peppermint extract and swirl in 2 drops red food coloring. Drop by tablespoonfuls and bake about 1 hour at 300 degrees. Turn off the oven and keep meringues inside for 2 hours to dry.

- Preheat oven to 225 degrees. Have egg whites at about 70 degrees. Beat until foamy in an electric mixer or by hand. Add vanilla. While continuing to beat, add sugar one tablespoon at a time. When the mixture stands in stiff peaks on the beater, it is ready for baking. Fill a pastry bag with mixture and pipe onto parchment covered baking sheet, using star tip to create kisses. Bake about 1 hour or longer, depending on the size. Do not remove from the oven at once, but turn off the oven, open the door and leave them for at least 5 minutes. Cool gradually, away from a draft. Remove them from the sheet when cool.
- To prepare chocolate ganache, pour hot, scalded cream over chocolate. Blend until smooth. Cool.
- To fill meringues, crush the bottom lightly with the thumb while still warm. Fill the hollows with chocolate ganache.
MINI MERINGUES
These crunchy dainties are great with coffee or with cream for dessert. And they're low fat! Substitute 2 teaspoons instant coffee granules or 1 1/2 tablespoons cocoa for the vanilla if you like. Coffee kisses are great sandwiched together with melted white or dark chocolate. Spooned vanilla ones are good with cream and chocolate ones are good as finger biscuits with coffee.

- In a large bowl, beat egg whites until foamy. Add cream of tartar; beat on medium speed until soft peaks form. - Preheat the oven to 200 degrees F (95 degrees C). Butter and flour a baking sheet.
- In a glass or metal bowl, whip egg whites until foamy using an electric mixer. Sprinkle in sugar a little at a time, while continuing to whip at medium speed. When the mixture becomes stiff and shiny like satin, stop mixing, and transfer the mixture to a large pastry bag.
