Bacon-Wrapped Chicken with Sugar Snap Peas image

Number Of Ingredients 8

6 boneless skinless chicken breasts
1 teaspoon salt
1⁄2 teaspoon ground black pepper
12 slices center-cut bacon
2 (8-ounce) packages sugar snap peas
1⁄2 cup dry white wine
3⁄4 cup heavy whipping cream
2 tablespoons Dijon mustard

Steps:

  • Preheat oven to 400°. Sprinkle chicken with salt and pepper. Wrap each chicken breast tightly with 2 pieces of bacon; secure with wooden picks. Heat a 12-inch cast-iron skillet over medium-high heat. Add chicken, and cook until bacon is browned, 5 to 6 minutes per side. Place in oven, and bake for 20 minutes. Remove chicken from skillet; discard wooden picks. Heat skillet over medium-high heat. Add peas; cook until tender, about 3 minutes. Stir in wine. In a small bowl, whisk together cream and mustard. Stir in mustard mixture, and cook until thickened, 2 to 3 minutes. Return chicken to skillet, turning to coat. Serve immediately.

¼ cup brown sugar
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Serve topped with parsley.

3 slices bacon, cut into 1/2-inch pieces
1 small yellow skinned onion, peeled and chopped
1 pound sugar snap peas
1/2 cup water
Salt and pepper

Steps:

  • In a medium skillet over medium high heat, brown chopped bacon. Using a slotted spoon, remove bacon to a paper towel lined plate. Add onion to the pan. Saute chopped onions 3 minutes or so, until they are just tender. Add peas and water to the pan. Cover and cook peas 5 minutes. Uncover and allow the liquid to cook almost out of the pan. Add bacon back to the skillet and remove pan from heat. Transfer to a serving dish and enjoy!

6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

2 lbs fresh sugar snap peas
1/4 lb bacon
1 large onion, sliced
3 cloves garlic
1 teaspoon sugar
1/4 cup chicken broth
fresh lemon slice
salt and pepper, i like a lot (to season)

Steps:

  • Cook bacon till crisp set aside.
  • In the same pan removing all grease except for a little to cover bottom saute onion, garlic and sugar.
  • Add Sugar Snap Peas and broth simmer covered about 5 minutes till crisp tender stirring a couple of times.
  • Meanwhile crumble the bacon.
  • Place snap peas in a large dish season fresh lemon juice with more salt and pepper if needed.
  • Top with bacon and serve.
  • And garnish with lemon slices.

  • Preheat oven to 400°. Flatten chicken to 1/2-in. thickness. Spread 3 tablespoons cream cheese over each. Dot with butter and sprinkle with salt; roll up. Wrap each with bacon strip, securing with toothpicks if necessary., Place, seam side down, in a greased 13x9-in. baking pan. Bake, uncovered, until a thermometer reads 165°, 35-40 minutes. Adapted from the Culinary Institute of America. A family favorite that I have tweaked for our tastes. A great light summer supper!! This is also very tasty with shrimp in lieu of the chicken.

3 tablespoons olive oil
3/4 lb sugar snap pea, trimmed of stem ends and strings
1/3 cup flour
1 lb boneless skinless chicken breast, trimmed of fat
1/4 teaspoon salt, plus more to taste
1/4 teaspoon fresh ground black pepper, plus more to taste
14 1/2 ounces low sodium chicken broth
3 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 lemon, juice of
1 tablespoon freshly grated lemon, zest of

Steps:

  • In a nonstick skillet, heat 1/3 of oil over high heat.
  • Add peas and stir fry until bright green, 2-3 minutes.
  • Remove from pan and set aside in bowl.
  • Place flour in shallow pan.
  • Cut chicken into 1x2 inch strips or bite size pieces (strictly preference here), season with salt and pepper and dredge in flour, shaking off excess.
  • Discard leftover flour.
  • In same skillet, heat remaining oil over high heat.
  • Add chicken and cook, stirring, until lightly browned, about 4 minutes.
  • Transfer chicken to bowl with peas.
  • Add chicken broth and garlic to skillet and cook until reduced by half, about 5-7 minutes.
  • Reduce heat to medium and return chicken and peas to skillet.
  • Cook until just heated through.
  • Add parsley, juice and zest.
  • Adjust seasoning with salt and pepper.
  • Substitution Suggestions: I use a bag of frozen sugar snaps, or a bag of frozen stir fry veggies.
  • Any of your favorite veggies would do.
  • This also goes well with rice.

½ (8 ounce) package cream cheese, sliced
4 slices bacon
1 teaspoon chopped fresh chives
1 (10.75 ounce) can condensed cream of chicken soup
½ cup mayonnaise
½ cup milk
1 teaspoon lemon juice
¼ teaspoon ground black pepper
1 pinch salt

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Pound the chicken breasts until flat. Put a slice of cream cheese and 1 teaspoon chopped chives in the middle of each breast and roll up. Wrap each rolled breast with 1 slice of bacon and secure with toothpicks. Place in a 9x13 inch baking dish.
  • In a medium bowl, combine condensed soup, mayonnaise, milk, lemon juice, pepper and salt. Mix until smooth, then pour over chicken.
  • Bake in the preheated oven for 1 hour, or until no longer pink and juices run clear.
