SCOTTISH BROWN BREAD
This is an old Scottish recipe for simple wholesome bread that requires no proving. I serve it with hearty soup or with a stew that has lots of gravy.

Steps:
- Set oven to 325°F.
- Grease a l-pound loaf tin.
- Mix the flours, salt, baking soda and cream of tartar together in a bowl.
- Add the golden syrup and mix with sufficient of the milk to form soft dough.
- Turn out on to a floured surface and knead very gently.
- Place in the tin and cover with foil.
- Bake for about 50 minutes then remove the foil and bake for a further 10 minutes until the top is nicely browned.
- Turn out on to a wire rack to cool.
- Eat at once.

OLD SCHOOL, NOVA SCOTIA BROWN BREAD
This is a multi-generational Brown Bread recipe, kneaded and baked by countless, hearty Nova Scotians compliments of Val Peterson, formerly of the Hillsdale House Inn, Annapolis Royal, NS. And yes, it's Vegan.

Steps:
- In large bowl, add bran, oatmeal. Add 4 cups boiling water and stir. Allow to stand for ten minutes. (The boiling water will melt the shortening, no need to melt beforehand)
- After 10 minutes proof the yeast; in a small bowl combine 2 tablespoons yeast, 2 teaspoons sugar and one cup of warm water. Allow to stand 10 minutes to proof.
- Add to bran mixture, one cup of molasses, stir, then add the yeast mixture and stir.
- Knead in 10 ½ to 11 ½ cups of flour, move onto floured surface as required and knead until dough feels firm "like a baby's bottom". (This term has been used with this recipe, dating back 50+ years. Bread and babies have changed very little.)
- Let rise in a warm, dry spot until double in size
- Divide and move to greased/prepared bread pans (makes 3 large sized loafs).
- Let rise again in pans and bake at 350⁰F (180⁰C) for 40 minutes until golden brown.
- Remove from oven and cool before turning out of pans.

- In a large bowl, combine the first six ingredients. In another bowl, whisk the buttermilk, molasses, brown sugar and oil. Stir into dry ingredients just until moistened. Fold in walnuts and raisins. Transfer to a greased 8x4-in. loaf pan; cover with foil., Place pan on a rack in a boiling-water canner or other large, deep pot; add 1 in. of hot water to pot. Bring to a gentle boil; cover and steam for 45-50 minutes or until a toothpick inserted in the center comes out clean, adding more water to the pot as needed. , Remove pan from the pot; let stand for 10 minutes before removing bread from pan to a wire rack. Serve with cream cheese if desired.

BROWN BREAD
This is my mother-in-laws famous brown bread recipe. We find these rolls at every family gathering! I reach for this recipe over and over again when we are craving bread for it has so few ingredients and so easy to make. My kids make a meal out of it in the mornings especially when they get to slather their own homemade strawberry jam over the top! Makes 3 loaves or 48 rolls

Steps:
- Mix the yeast, sugar, and 1/4 cup of warm water.
- Let sit for 5 minutes.
- (Yeast is good if it foams!) In large bowl combine water, salt, molasses, and Crisco.
- Stir until salt dissolves.
- Add the yeast mixture and stir well.
- Sift in 6 cups of flour and stir until mixed well.
- Keep adding flour until mixture becomes too hard to stir.
- Flop the dough onto a well floured surface and knead 6-8 minutes.
- Place dough in large greased bowl, cover, set in warm place and let raise until double in size.
- Punch dough down and with greased hands form into 3 loaves and place in greased loaf pans or form into approx.
- 48 rolls and place in greased pans.
- Preheat oven to 350.
- Let formed dough rise.
- Cook in preheated oven at 350 for 40-45 minutes.
- Let bread/rolls sit in pans for 5-10 minutes then finish cooling on wire racks.
- Brush butter over the tops and ENJOY!

- In a large bowl, pour boiling water over oats. Stir in butter and molasses. Let stand until mixture cools to 120°-130°, stirring occasionally., In another bowl, combine 3-1/2 cups flour, yeast and salt. Beat in oat mixture until blended. Stir in enough remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. Cover and let rise until doubled, about 30 minutes., Meanwhile, preheat oven to 375°. Bake 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

BOSTON BROWN BREAD
This is a recipe from Milwaukee,Wisconsin. It is is a favorite of mine. I bake it in cans, so the loaves are round. Very nice when you make up GOODIE baskets, especially liked by elderly people.

Steps:
- Put dates, raisins, oleo, and baking soda in a large bowl.
- Pour the boiling water over this mixture. Mix then let cool.
- Beat 2 eggs, sugar, and vanilla until creamy.
- Add the cooled mixture alternately with the flour.Stir in nuts.
- Bake in 3-1# cans that have been well greased.
- Bake at 350 degrees for 45-55 minutes.
- Cool slightly, then run a butter knife around the inside edge of can to loosen bread. Pull out gently and wrap while still partly warm in plastic wrap. This keeps the round loaves moist.
- These freeze well. When baking these, I usually double the recipe and freeze half for gifts.
- This is delicious! It does not taste at all like the can stuff in the store.

BAG END BROWN BREAD
I found this wholesome, hearty bread on The Council of Elrond, a Tolkien-centered website which includes a treasure trove of fabulous recipes. AsliannQuinn, the site member who submitted the recipe, says: "Men and Elves can barely handle a slice of this Hobbiton staple without a big glass of milk." Steps:
- Blend first five ingredients in large bowl.
- Add soda and salt; mix well.
- Stir in flour and nuts.
- Pour into well-greased 9" or 10" bread pan; aprinkle seeds on top, as much as you like.
- Cover loosely with tin foil, shiny side up, and bake at 350 degrees for 40-50 minutes until toothpick inserted in center comes out clean. Serve hot!
