BAKED EGG BOATS
Steps:
- Preheat oven to 350 degrees F.
- Cut a deep "V" through the tops of each baguette until about a ½ inch to the bottom and remove top. Un-stuff demi baguettes as much as possible, while keeping the shell of the baguettes intact. It's very important not to puncture through the crust while slicing the tops off and while un-stuffing. Set hollowed baguettes aside and discard the tops and removed stuffing.
- Sprinkle about tablespoon of shredded cheese into the bottom of each hollowed baguette.
- Whisk together eggs and cream, then stir in the remaining ingredients. Lightly season with salt and pepper.
- Place baguettes onto a baking sheet and fill each with half the egg mixture. (the egg and cream will pour out faster than the filling "bits" so it's best to switch off pouring into each baguette to ensure each one get equal parts of everything in the egg mixture)
- Transfer baking sheet to oven and bake for 35 to 30 minutes or until golden brown, puffed and eggs have set.
- Remove baked egg boats from oven and cool for about 5 minutes. Cut each baguette into pieces and serve.

- Preheat oven to 375°F (190°C).
- In a small bowl, mix cheese, bacon, and green onion.
- In a small bowl, whip 2 eggs with milk.
- Carefully hollow out 1 bagel with a small silver spoon. Place both bagel halves on a baking sheet.
- Fill both bagel halves with cheese and egg mixtures. Bake in the oven for 25 mins, or until the egg is cooked.

BREAKFAST-FOR-DINNER EGG BOATS
Steps:
- Preheat the oven to 375 degrees F.
- Brown the breakfast sausage in a medium skillet over medium heat, breaking it up with a wooden spoon, about 6 minutes.
- Whisk together the eggs, milk, mustard and a pinch of salt in a large mixing bowl.
- Cut a long oval down the center of each bread, about 2 inches wide and 4 inches long. Hollow out most of the insides, like a canoe, leaving about 1/2-inch border all the way around. Place on a baking sheet, then gently pour half the egg mixture into each "boat." Sprinkle with the browned breakfast sausage and a few pinches of chopped kale, then top with remaining egg mixture.
- Top each boat with the shredded Cheddar, and bake until the cheese is browned and bubbly and eggs are just set, between 25 to 35 minutes. Let cool about 5 minutes, then garnish with parsley and serve!
EGG BAGEL BOAT
The goodness of a bagel without the carbs and sodium. A hollowed-out bagel creates the perfect shell for eggs.

- Preheat oven or toaster oven to 425º F. Cut the bagel in half. Using a knife, cut the outer and inner edges of the bagel. Then scoop out of the dough with your fingers. Be careful not to put any holes in the shell. The bottom half of a bagel works best to hold the egg mixture.
- Crack and beat the eggs in a bowl. Add in mixture of bell peppers, mozzerella, ham, salt and pepper.
- Put the bagel shell on a baking sheet and gently pour the mixture into the shell.
- Place in the oven for 8-10 minutes or until the shell is toasted and the egg is safely cooked.
BAKED BAGEL EGG-IN-THE-HOLE

- For the baked bagel egg-in-the-hole: Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper. Brush the parchment with 2 tablespoons of the melted butter.
- Using a 2-inch round cutter, make the center of each bagel half larger. Save the cutout pieces. Brush the cut side of the bagels and bagel cutouts with 2 tablespoons of the melted butter.
- Place the bagels cut-side down on the prepared baking sheet. Line up the cutout pieces down the center of the baking sheet cut-side down as well. Using the palm of your hand, press the bagels into the baking sheet. This will help make sure they are touching the baking sheet so the eggs won't seep out before they're cooked.
- Brush the tops of the bagels and cutouts with the remaining 2 tablespoons butter. Crack an egg into each bagel hole. Season the eggs with salt and pepper. Bake for 11 to 14 minutes, depending on how you like your eggs; 11 minutes will give you a runny yolk, while 14 minutes will give you a fully cooked yolk.
- For the hollandaise: In a small saucepan, melt the butter until sizzling.
- Put the egg yolks in a blender and turn on a low speed to allow them to combine. While the machine is running, slowly begin pouring the hot butter into the blender in a thin, steady stream. Once all the butter is in, immediately begin adding the lemon juice.
- Check the blender to make sure the sauce is still liquidy and moving easily through the blades. If not, add a little more juice and give it a stir and then blend again. Add the cayenne pepper and a pinch of salt. Taste and adjust the seasoning if necessary. Transfer to a serving pitcher and cover with foil until serving.
- For the garnish: Transfer the bagels and cutouts to a serving platter. Arrange the salmon around the bagels and garnish with the red onions, chives and capers. Serve with the warm hollandaise on the side.
