LUKE'S PIZZA BAGELS
We enjoy these for a quick lunch for the kids and they just love them. You can experiment with a variety of toppings or set everything out and let the kids dive in and top their own. They will have a great time. We usually just make them as instructed below and they are delicious. My husband also makes this on leftover hamburger or kaiser buns instead of the bagel.

- Cut the bagels in half and lay on a baking sheet.
- On top of each bagel spread on pizza sauce, making sure to cover all spots.
- Top with pepperoni and cheese.
- Put in oven at 375 degrees and bake approximately 10 minutes or until cheese and meat are bubbly.
SUPREME BAGEL PIZZAS
We used to enjoy pizza bagel bites from the freezer section, but found they weren't filling unless we made quite a few. Now we use whole bagels to prepare a heartier meal that's ready in a jiffy. - Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil.

EVERYTHING BAGEL BREAKFAST PIZZA

- Place a pizza stone or inverted rimmed baking sheet on the lowest rack of the oven and preheat to 400 degrees F.
- Set a cooling rack inside another rimmed baking sheet, spread out the bacon and bake on the stone or baking sheet until cooked and crispy, 20 to 22 minutes. Crumble and set aside on a paper towel-lined plate.
- Increase the oven temperature to 500 degrees F.
- Dust a piece of parchment lightly with flour. Stretch or roll out the pizza dough into a 12-inch round on the parchment, then transfer the dough on the parchment to a pizza peel or another inverted rimmed baking sheet. Sprinkle with the Cheddar and bacon. Brush the crust with the butter and sprinkle with the bagel seasoning.
- Slide the pizza on the parchment paper onto the stone or baking sheet and bake until the cheese is melted and the crust is almost golden, about 6 minutes. Remove from the oven.
- Using the back of a spoon, make 5 small wells in the cheese and bacon and break an egg into each of the wells. Bake until the eggs are just set, about 5 minutes.
- Garnish the pizza with the chives and serve with hot sauce.

- Position an oven rack in the lower middle position and set the oven to high broil. Line a sheet pan with foil.
- Brush both sides of the bagel halves with the olive oil and place on the lined sheet pan. "Stuff" the sausage crumbles inside the scooped bagel halves, then top each half with about 3 slices of mozzarella. - Line a baking sheet with parchment paper.
- Combine flour and yogurt in a large bowl and mixed until a soft dough forms. Turn out the mixture onto a lightly floured surface and knead the dough for 3 minutes.
