APPLE CUSTARD
We enjoy this custard cooked in whole apples. Delicious for dessert or for breakfast served warm with cream or cold. Recipe source: Finnish Cookbook

Steps:
- Preheat oven to 350-degrees F.
- Butter an 8 x 8 baking dish.
- Roll apples in sugar until they are coated evenly. Place apples close together in prepared dish.
- Using a blender (or use electric mixer) mix together the remaining ingredients (milk- almond extract) and pour over apples. Sprinkle with nutmeg, if desired.
- Bake for 30- 40 minutes or until apples are tender. Custard will finish setting while apples are cooling.

- Whisk all ingredients except for the apple together until smooth. Divide apple slices into the bases of 2 heat-proof ramekins. Pour custard mix over the top. Bake in oven for 30 minutes or until custard is set and golden on top.

- Preheat the oven to 320° F. Grease 4 X 1 1/4 cup capacity oven safe dishes liberaly with coconut oil. Set aside.
- Place the sugar in the carafe of a high speed blender. Process on high until the sugar has turned into a white powder. (This is a great tip to have whenever recipes call for caster sugar!)
- Add the egg yolks, whole egg, whipping cream, and vanilla to the sugar in the blender. Blend until smooth.
- Layer the slices of apples in the greased dishes then divide the egg mixture evenly amongst the 4 dishes over the apples. Sprinkle eat dish with 1/4 of the cinnamon.
