SMOKED BAKED BEANS
I smoked this on my smoker but you can just add a touch of liquid smoke and bake in your oven or cook stove top. I used this Recipe #207079 as the sauce ingredient called for.

BETTER BAKED BEANS
Tangy, sweet old fashioned baked beans, are made the easy way in this side dish. This is my grandma's favorite semi home-made recipe. She makes it every Thanksgiving, and we usually end up scraping the pan clean! Never any leftovers!

BAKED BEANS WITH A KICK
Found online, these baked beans are really simple to make, and have a lovely balance of flavors. The bacon adds texture and a savoury sweet deliciousness. Since these beans are cooked uncovered, everything gets caramelized and the beans are not mush. Since every oven is different, check your beans at an hour and a half.

- Dice onion, bell pepper and jalapenos. If you include the seeds of the jalapenos, beans will have more spice.
- Cut bacon into pieces about ½” – 1” long. Stirring enough to make sure the bacon does not burn, fry over medium-high heat in a cast iron skillet or other heavy frying pan until the bacon is about half way cooked. Do not discard bacon fat. Use a slotted spoon to remove bacon chunks and pile on paper towels to drain.
- Add the diced onion, bell pepper and jalapenos to the bacon grease in the frying pan. Continue to fry over medium-high heat stirring frequently for 2-3 minutes until the veggies have softened.

- Preheat your smoker to 250 degrees F using any mild or fruit wood. I really like pecan with this recipe.
- Preheat a 12 inch cast iron skillet over medium high heat. Cook the bacon pieces for 2-3 minutes per side. Long enough to render fat, but not long enough to crisp thoroughly.
- Remove the bacon pieces to a plate with a paper towel on top so they can drain. Leave the bacon grease in the pan and add the onions and jalapenos. Cook for 3-5 minutes, stirring frequently, until they have softened and the onions are slightly translucent.
- Pour the cans of beans (liquid and all) into the pan. Add in the barbecue sauce, brown sugar, apple cider vinegar, Dijon mustard, and molasses. Stir to combine.
