I had these clever breakfast treats at a brunch gathering. They are easy to make for just two people or for a crowd. You can double or triple this recipe for a crowd. I use a muffin tin to hold each avocado half if I am making several of them.

1 avocado, halved and pitted
2 eggs
salt and ground black pepper to taste
1 pinch cayenne pepper
¼ cup crumbled cooked bacon
1 tablespoon chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place each avocado half in a ramekin. Crack 1 egg into each avocado half; season with salt, black pepper, and cayenne pepper. Place ramekins on a baking sheet.
  • Bake in the preheated oven until entire egg is cooked through, about 15 minutes. Sprinkle each avocado with bacon and chives.

4 eggs
1/2 cup chopped tomatoes
2 Tbsp. chopped fresh cilantro
1 Tbsp. finely chopped fresh jalapeño peppers
2 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
2 Tbsp. crumbled feta cheese

Steps:

  • Heat oven to 425ºF.
  • Cut avocados lengthwise in half; remove and discard pits. Scoop flesh from avocado halves, leaving 1/4-inch-thick shells. Chop removed avocado flesh; place in medium bowl. Reserve for later use.
  • Place avocado shells, cut sides up, in shallow baking dish. If necessary, place small crumpled sheets of foil between shells to make them stand level in baking dish. Slip 1 cracked egg into each avocado shell.
  • Bake 25 to 30 min. or until egg whites are set and yolks are cooked to desired doneness. Meanwhile, add tomatoes, cilantro, peppers and dressing to chopped avocados; mix lightly.
  • Spoon avocado mixture over eggs; sprinkle with cheese.

4 slices prosciutto (thin slices)
1 tablespoon parmesan cheese
1 avocado, peeled and cut into 1/2-inch slices
2 tablespoons sour cream
4 eggs
salt and pepper
1 tablespoon basil, chopped

Steps:

  • Preheat oven to 450°F Dot 2 ramekins with butter and then evenly layer in the prosciutto.
  • Sprinkle both with the Parmesan cheese. Scatter the avocado between the 2 ramekins, and then dot each with sour cream.
  • Break 2 eggs into each ramekin and then season with salt and pepper. Sprinkle with basil.
  • Place the ramekins in a shallow roasting pan. Pour boiling water into the pan to reach 3/4 of the way up the ramekins.
  • Place in the oven and bake until the egg whites are milky and the yolks are set, about 10 to 12 minutes.
  • Serve immediately.

A hot breakfast meal that's definitely a new favorite of mine to make in the morning. A different way to make eggs interesting and delicious again with a little southwestern influence. Personally I prefer mine with a hotter salsa to liven things up as well as mushrooms mixed into the salsa. A modified recipe from one on Foodnetwork. I've also upped the amount of salsa based on the review and I think mushrooms added to this would be great as well.

1/2 cup salsa, plus maybe a tad more (your choice of hotness)
4 eggs
salt, to taste
black pepper, to taste
1/4 cup green onion (optional)
1/4 cup shredded cheese
1 tablespoon cilantro, chopped
vegetable oil

Steps:

  • Preheat oven to 400 degrees F.
  • Lightly oil or spray a medium nonstick skillet with an ovenproof handle.
  • Spoon salsa into the pan.
  • Lightly press down salsa to make 4 evenly spaced shallow nests and break an egg into each.
  • Add green onions and season eggs with salt and pepper.
  • Bake about 15 minutes or until the egg whites are cooked and the yolks are still runny.
  • Sprinkle the cheese over the eggs and continue baking until just melted, about 1 minute more.
  • Top with the cilantro and serve immediately.

1 pinch dried parsley, or to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Crack the eggs into a bowl, being careful to keep the yolks intact.
  • Arrange avocado halves in a baking dish, resting them along the edge so avocado won't tip over. Gently spoon 1 egg yolk into the avocado hole. Continue spooning egg white into the hole until full. Repeat with remaining egg yolk, egg white, and avocado. Season each filled avocado with chives, parsley, sea salt, and pepper.
  • Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon over avocado.
