HOLLY'S EGG AND CHEESE BAKE
Turn ordinary hard boiled eggs into a delicious meal. Chopped cooked eggs and bacon are baked in a casserole with cheese sauce.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- Lightly grease a 2 quart casserole dish. Sprinkle half of the chopped egg in the bottom of the casserole, add half of the bacon; repeat.
- Melt butter in a medium saucepan over medium heat. Add onion and cook until softened and transparent. Stir in flour. Slowly add milk and shredded cheese. Stir until cheese is melted and sauce is smooth and creamy. Pour over layered eggs and bacon.
- Bake in preheated oven for 30 minutes.

- Heat the oven to 400 degrees F (200 degrees C).
- Coat the inside of an 10-ounce oven safe ramekin with the butter.
- Whisk together the eggs and cream in a small bowl.
- Stir in the cheeses, salt, and pepper.
- Pour into the ramekin and bake for 15-18 minutes or until eggs are set.
- Let cool 5 minutes and enjoy.

SWISS CHEESE EGG BAKE
Try this with a fruit bowl, cinnamon rolls and sliced ham for a complete brunch. Kids always seem to love this casserole, at least mine and their friends do! This makes 2 casseroles, but it can easily be halved. I have never frozen it and wonder how it would be to freeze one casserole.

- Preheat oven to 350.
- Combine soup, milk, onion and mustard all together in a saucepan.
- Heat on medium until warm.
- Stir in cheese until melted.
- Pour 1 cup sauce into each of 2 10x6 baking dishes.
- CAREFULLY, break six eggs into the sauce in each pan, 3 down the length of each pan on each side.
- Carefully cover all BUT the yolks with the remaining sauce.
- Line each side of both pans with the bread slices.
- Bake for 20 minutes or until the eggs are to desired doneness.
- The eggs will cover themselves as they bake.

- Melt butter in a heavy saucepan. Add flour stir until thick and bubbly. Add milk, salt, and pepper keep stirring. Remove from heat and stir in grated cheese. Add a little of the hot mixture to beaten egg yolk. Add egg mixture back into the sauce pour into a buttered baking dish. Carefully place onto the sauce 6 eggs. Cover and bake at 375°F until eggs are set as you like them.
