BAKED HAM AND APPLES
WHEN Mother wanted to serve ham, she went to the smokehouse, took one down from the rafters and sliced off as much as was needed. The rest was hung up again. - Place ham in an ungreased 13-in. x 9-in. baking dish. Rub with mustard and sprinkle with brown sugar. Core apples and cut into 3/4-in. slices; arrange in a single layer over ham. Dot with butter and sprinkle with pepper. , Cover and bake at 400° for 15 minutes. Reduce heat to 325°; bake for 45 minutes. Uncover and bake 15 minutes longer or until apples are tender.

GLAZED HAM WITH ROASTED APPLES

- Preheat the oven to 325 degrees F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat-side up, in a large roasting pan. Bake 1 hour, 30 minutes.
- Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
- Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.
BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE
This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

Steps:
- Set oven to 325 degrees.
- Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
- Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
- In a saucepan bring the apple cider and dried apples to a boil over medium heat.
- Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).
- In a small bowl, whisk together the brown sugar, cider vinegar and mustard until well blended.
- Add to the cider mixture; simmer sauce until reduced to about 2-1/4 cups, stirring occasionally (this shoud take about 5-6 minutes) the sauce can be prepared a day in advance and refrigerated.
- Set oven to 375 degrees.
- Cut 1/2-inch slices from the bone, and place into a glass baking dish.
- Spoon the sauce over the slices.
- Bake in the oven until heated through and the sauce bubbles (about 25-30 minutes).
- Transfer to a platter to serve.

- Preheat the oven to 350 degrees F.
- Line a shallow baking pan with parchment or waxed paper. Insert the sugarcane sticks into the ham at 3 to 4-inch intervals. Tie the ham, using kitchen twine, horizontally and vertically, like a package, to hold it together. Place it on a wire rack in the baking pan.
- In a mixing bowl, combine all of the glaze ingredients together except for the mustard and water. Mix well. In a small bowl, dissolve the mustard in the water, then add to the spice mixture. Blend well.
- Brush the entire ham with the glaze, coating it evenly. Wash, core, and halve the fruit. Place all around the ham. Baste the ham a second time and baste the fruit with the glaze. Bake for 45 minutes. Baste the ham and fruit again. Bake another 45 minutes. Remove the ham from the oven and let it rest for 5 minutes. Remove and discard the string and swizzle sticks. Serve the apples and pears on a platter with the ham. Serve everything warm or at room temperature.

- Remove bone from ham.
- Mix mustard and vinegar together; spread thinly on ham.
- Spread apples in two layers on ham; sprinkle well with brown sugar.
- Roll ham the long way and pin with metal skewers or tie with string.
- Place in baking pan and dot with butter.
- Bake at 350F for 25 to 30 minutes.
- Baste several times while baking.
