SALMON WITH FENNEL

Steps:
- Have the fishmonger cut the head and tail off the salmon and butterfly it, removing all the bones. You should have about 7 pounds of salmon.
- Preheat the oven to 500 degrees F.
- Saute the onions and fennel in the olive oil for 10 minutes on medium-high heat, stirring occasionally. Add the thyme leaves, fennel fronds, orange zest, orange juice, salt, and pepper and saute for 5 more minutes, until the onions and fennel are tender. Taste for salt and pepper.
- Lay the salmon, skin side down, on a cutting board and sprinkle both sides generously with salt and pepper. Spread the fennel filling over half of the salmon. Pull the other half up and over the filling, enclosing it. Tie the salmon every 2 inches with kitchen string to secure the stuffing.
- Place a sheet pan lined with parchment paper in the oven for 5 minutes to heat it. Carefully transfer the salmon to the hot sheet pan and bake it for exactly 30 minutes (10 minutes for each 1-inch of thickness). Do not overbake!
- Allow to cool slightly, then remove the strings. To serve, cut into thick slices with a very sharp knife. This salmon is delicious hot or at room temperature.
- Note: If you're making this in advance, be sure to cool the filling before stuffing the salmon. Refrigerate until ready to roast.
ORANGE ROASTED SALMON
I like to make this for company since you can get it ready ahead of time up until the final baking step. It looks both pretty and impressive, and the orange flavor is more subtle than you'd expect. This is a healthy and elegant meal (not to mention delicious) when served with a leafy salad, brown rice, and asparagus.

- Preheat the oven to 400 degrees F (200 degrees C).
- In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. Place a layer of onion slices over the orange. Drizzle with a little bit of olive oil, and sprinkle with half of the herb mixture.
- Place the dish in the preheated oven, and roast for about 25 minutes, or until the onions are browned and tender. Remove the dish from the oven, and increase the temperature to 450 degrees F (220 degrees C).
- Push the onion and orange slices to the outer edge of the baking dish, and place the salmon fillets in the center. Season with the remaining half of the herb mixture. Whisk together the orange juice, lemon juice and honey in a small bowl. Pour evenly over the salmon.
- Bake for 12 to 15 minutes in the preheated oven, or until the salmon is opaque in the center. Remove fillets to a serving dish, and discard the roasted orange. Garnish fillets with roasted onions and fresh orange slices.

- In a medium bowl, combine orange segments and juice, fennel, olives, lemon juice, and 1 teaspoon oil; season with salt and pepper, and toss gently.Set aside.
- In a large nonstick skillet, heat remaining teaspoon oil over medium. Add salmon, flat side down; cookuntil browned, about 3 minutes. Turn salmon; cook until opaque throughout, 1 to 3 minutes more. Serve salmon topped with orange mixture; garnishwith fennel fronds, if desired.

- Preheat the oven to 350 degrees F (150 degrees C).
- In a medium skillet over medium heat, cook fennel in olive oil until translucent, about 20 minutes.
- Place the fillets skin side down in a glass baking dish. Pour the orange juice over the fillets. Sprinkle fennel over in an even layer, and season with OLD BAY. Cover the dish with aluminum foil.
- Bake for 20 to 25 minutes, or until fish flakes easily with a fork.

- Preheat the oven to 300F degrees. Remove the fennel tips and reserve a few fennel fronds. Keep the stem of the fennel intact and slice the fennel in half lengthwise. Using a mandolin, carefully slice the fennel into ¼ inch slices. Toss the sliced fennel and olives in the olive oil, salt, pepper and crushed red pepper and arrange in a single layer on a baking sheet.
- Ensure the salmon is free of pin bones and lay it over the fennel and olives, skin side down. Drizzle with olive oil, sprinkle with salt and pepper and transfer the baking tray to the oven to roast for 18-20 minutes.
- While the salmon is roasting, peel 4 of the blood oranges as you normally would, taking care to remove as much pith as possible, then slice the blood oranges into ½ inch slices and set aside. Squeeze the juice from the fifth orange and whisk with the olive oil.
- When salmon is finished roasting, transfer the fennel, olives and side of salmon carefully to a large serving platter. Drizzle orange and oil dressing over the salmon and arrange the sliced blood orange around the platter. Garnish with reserved fennel fronds, and salt and pepper to taste.
