A delicious use of some of my favorite things - bacon and salmon! The salmon stays really moist from the bacon, and the skin helps protect the bottom from cooking prematurely.

4 (4 ounce) skin-on salmon fillets
1 teaspoon garlic powder
1 teaspoon dried dill weed
salt and pepper to taste
½ pound bacon, cut in half

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
  • Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
  • Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

4 6-ounce fillets of salmon, boneless and skinless
3 tablespoons coconut aminos
1 tablespoon fish sauce
2 teaspoons coconut crystals or honey
1/4 teaspoon ground ginger
1/4 teaspoon minced garlic
pinch of sea salt and fresh cracked pepper
2 slices bacon
1 clove garlic minced
1 each 1 each shallots minced*
4 cups greens such as tatsoi, or spinach
2 teaspoons balsamic vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper freshly ground*

Steps:

  • Instructions for the Salmon Preheat oven to 400 degrees F. Combine the aminos, fish sauce, coconut crystals, ginger, garlic, salt, and pepper in a small bowl. Place the salmon fillets in a baking dish and pour the marinade over the fish. Roast in the oven for 15-20 minutes until flaky, basting the fish every 5 minutes. Instruction for the bacon and Tatsoi Cut the bacon into 1/4-inch strips for quick cooking. Cook the bacon in a nonstick skillet over medium heat until crispy. Remove the bacon to paper towel. Add the shallots to the skillet, cook for about 5 minutes until soft and translucent. Add the garlic, and cook for 1 minute. Add the tatsoi and saute until wilted. Add the balsamic vinegar, and cook until most of the liquid has been evaporated . Taste and season with salt and pepper.

1/2 cup toasted almonds
Extra-virgin olive oil

Steps:

  • Preheat the oven to 450 degrees F.
  • Season salmon with salt and pepper. Place salmon, skin side down, on a non-stick baking sheet or in a non-stick pan with an oven-proof handle. Bake until salmon is cooked through, about 12 to 15 minutes. Serve with the Toasted Almond Parsley Salad and squash, if desired.
  • Mince the shallot and add to a small bowl. Pour the vinegar over the shallots and add a pinch of salt. Let sit for 30 minutes.
  • Roughly chop the capers, parsley and almonds and add to the shallots. Add the olive oil, tasting as you go. Mix again and adjust the seasonings.

1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper

1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

One of my favorite things to eat is a beautiful piece of salmon, simply prepared allowing the fish to shine on it's own. This is just such a recipe.

4 salmon fillets
1 small onion, finely chopped
2 slices bacon, diced
3 ounces butter
1/4 teaspoon dried tarragon
2 tablespoons lemon juice

Steps:

  • Pre-heat oven to 400°F.
  • Butter (or spray with non-stick spray) one side of a large sheet of aluminum foil (double the size needed to hold the salmon fillets in one layer); place in a baking dish (butter side up) large enough to hold the salmon (again, in one layer).
  • Fry the finely chopped onion in butter in a frypan until soft and golden but not brown.
  • Add the bacon and tarragon and cook for another two minutes.
  • Stir in the lemon juice and remove from heat.
  • Place the salmon fillets on the foil in the baking dish.
  • Cover each fillet with some of the onion/bacon mixture and drizzle any pan juices over as well.
  • Fold the foil over the fish and seal to make a parcel.
  • Bake for 15-20 minutes, or until fish flakes easily with a fork.
  • May be served with a dollops of thick cream or creme fraiche (but I personally don't think it needs it!).

500g bag baby new potato , halved
2 tsp olive oil
150g pack smoked bacon lardon
whole piece skinless salmon fillet , about 700g/1lb 9oz
200g frozen pea , defrosted
4 spring onions , sliced
splash white wine vinegar
small handful mint , chopped

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. Roast for 20 mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.
  • Remove the tin from the oven, push the potatoes and bacon to the sides and lay the salmon in the middle. Brush with remaining oil, season, then return to the oven and cook for 20 mins more until the salmon is just cooked through. Meanwhile, cook the peas in boiling water for 2 mins and drain.
  • When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar, stir through the mint and season to taste. Spoon around the salmon and serve.

3/4 cup white wine or chicken broth
3/4 cup chopped celery leaves
1 small onion, finely chopped
2 lemon slices
8 fresh basil leaves
2 teaspoons dried tarragon
1 teaspoon dried rosemary, crushed
1/4 teaspoon dried thyme
1 whole salmon (about 10 pounds)
1-1/2 teaspoons salt
WINE SAUCE:
2 green onions, chopped
1/2 cup butter
6 tablespoons all-purpose flour
2-1/3 cups water
2-1/3 cups white wine or chicken broth
2 egg yolks, lightly beaten
1/2 cup heavy whipping cream
Salt and pepper to taste

Steps:

  • In a saucepan over medium heat, combine the first eight ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes., Remove head and tail from salmon if desired. Place a double thickness of heavy-duty foil on a baking sheet (longer than the length of the fish). Grease foil. Place salmon on foil; sprinkle the cavity with salt. Pour herb sauce over fish. Fold foil over fish and seal tightly. , Bake at 375° for 60-75 minutes or until fish flakes easily with a fork., Place salmon on a serving platter and keep warm. Strain cooking juices, reserving 1/3 cup. In a large saucepan, saute green onions in butter until tender. Stir in flour until blended. Gradually stir in the water, wine and reserved cooking juices.
