BAKED SPAGHETTI
Every time that I make this cheesy baked spaghetti, I get requests for the recipe. It puts a different spin on pasta and is great for any meal. The leftovers, if there are any, also freeze well for a quick dinner later in the week. -Ruth Koberna, Brecksville, Ohio

- In a large skillet, saute onion and green pepper in butter until tender. Add the tomatoes, mushrooms, olives, oregano and, if desired, ground beef. Simmer, uncovered, for 10 minutes. , Place half of the spaghetti in a greased 13x9-in. baking dish. Layer with half of the vegetable mixture and 1 cup cheddar cheese. Repeat layers. , In a small bowl, combine soup and water until smooth; pour over casserole. Sprinkle with Parmesan cheese. Bake, uncovered, at 350° until heated through, 30-35 minutes.

- Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with cooking spray.
- In a large skillet, cook the bacon until slightly crisp. With a slotted spoon, transfer the bacon to a paper-towel-lined plate to drain. Saute the garlic, onion and bell pepper in the bacon drippings until tender. Add the tomatoes, olives, oregano, bacon and the cooked ground beef and simmer, uncovered, for 10 minutes.
- Place half of the spaghetti in the prepared baking dish; top with half of the vegetable-beef mixture; and sprinkle with 1 cup of the cheddar. Repeat the layers. In a bowl, stir together the cream of mushroom soup and 1/4 cup water until smooth, and pour this over the casserole. Sprinkle with the Parmesan and bake, uncovered, for 30 to 35 minutes, or until heated through.

- Heat salted water for the pasta: Put a large pot of water on the stove on high heat. Add salt to the water, about 2 tablespoons of salt for 4 quarts of water. While the pasta water is heating, continue with the next steps.
- Cook and drain the pasta: By this time your pasta water should be boiling. Add the pasta to the boiling water and cook, uncovered, at a rolling boil, for 5 to 6 minutes, al dente. Note that the pasta will continue to cook and absorb some of the sauce when it is in the casserole dish in the oven, so the pasta should be al dente. When ready, drain the pasta and rinse in cold water.
- Preheat oven and prepare casserole pan: Preheat your oven to 350°F. Rub the inside of a 9x13 inch casserole dish (a Pyrex dish works great) with olive oil.

CLASSIC BAKED SPAGHETTI
I looked everywhere for an easy baked spaghetti that did NOT use mushrooms or cream of mushroom soup (husband is allergic). I am happy to say I found it. You could add mushrooms, green pepper, olives, etc. to this dish for added variety, but I like it just the way it is! This makes a great family meal...just add a tossed salad and some garlic bread, and dinner is ready in about an hour.

- Preheat oven to 350.
- Cook noodles in boiling water; drain.
- Meanwhile, brown ground beef and garlic over medium heat; drain.
- Combine browned ground beef, spaghetti sauce, and oregano.
- Spray a casserole dish with cooking spray.
- Place 1/3 of noodles in bottom of dish.
- Top with 1/3 of spaghetti sauce mixture, and 1/3 of cheese.

- Preheat oven to 350°. Cook spaghetti according to package directions for al dente. Meanwhile, in a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; drain. - Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
- Heat a large skillet over medium heat; cook and stir beef and onion until meat is browned and onions are soft and translucent, about 7 minutes. Drain. Stir in spaghetti sauce and seasoned salt.
- Whisk eggs, Parmesan cheese, and butter in a large bowl. Mix in spaghetti to egg mixture and toss to coat. Place half the spaghetti mixture into baking dish. Top with half the cottage cheese, mozzarella, and meat sauce. Repeat layers. Cover with aluminum foil.

BAKED SPAGHETTI
I was craving this one day when I didn't feel like going to the trouble of making lasagna. So I looked through several cookbooks but none of the recipes I found really hit me, so I kind of combined a few into this concoction. It's very easy, freezes beautifully! I serve it with Pillsbury breadsticks and some sauteed zucchini & squash.

Steps:
- Preheat oven to 350.
- Break the pasta into 3 inch lengths, then cook according to package directions, rinse& drain.
- While the pasta is cooking, dice the onion and brown it with the ground beef until no longer pink.
- Drain any excess grease.
- Stir the spaghetti sauce and diced tomatoes in with the beef mixture, simmer for a few minutes until thickened.
- Stir in the pasta, and then stir in the cheddar cheese, mixing until cheese is completely melted.
- I would suggest using a pasta server to do this, it just works better.
- Personally, I use the olive oil flavored Pam to grease my baking pan.
- I usually divide this between 2 8 inch square pans, and I line one with tinfoil so I can freeze it for another night.
- So, either do that, or put the whole mix into a sprayed 13x9 pan.
- Bake at 350 for about 15 minutes.
- Then sprinkle your mozzarella on top and bake for about 15 more minutes or until the mozzarella has melted to your liking.
- Dig in!
