Time 28m

Number Of Ingredients 17

1/2 cup light brown sugar
1/3 cup granulated sugar
1/3 cup unsulfured molasses
1/2 cup vegetable oil
1 large egg
2 tsps. vanilla extract
1/2 cup unsweetened applesauce
1/2 cup whole milk
2 1/4 cups all-purpose flour
1 tsp. aluminum-free baking powder
1/2 tsp. baking soda
3/4 tsp. kosher salt
2 tsps. ground cinnamon
1 1/2 tsps. ground ginger
1/2 tsp. ground nutmeg
1/4 tsp. ground cloves
1 tbsp. turbinado sugar

Steps:

  • Preheat oven to 400° F. Line a jumbo cupcake pan with 8 large cupcake liners.
  • In a large bowl, or stand mixer, combine the molasses, light brown sugar, granulated sugars, vegetable oil, applesauce, and milk- mix until combined. Add in the extract and egg. Batter will be thick and fluffy.
  • In a large mixing bowl, whisk the dry ingredients. Slowly add the dry ingredients to the wet ingredients and mix until combined.
  • Pour mixed batter into the muffin cups and fill almost to the top of the liner. This recipe makes 8 jumbo muffins, or 12 standard sized muffins.
  • Place pan on the center oven rack and bake for 10 full minutes at 400 degrees Fahrenheit to achieve the "bakery style cracks" on the muffin tops. Reduce heat to 375 degrees Fahrenheit and bake for an additional 6-8 minutes. The tops should spring back when gently depressed. A toothpick inserted into the center of a muffin should come out clean, and muffins should have a deep brown coloring.
  • Once muffins are done, sprinkle with turbinado sugar. Allow muffins to cool before enjoying.

GINGERBREAD MINI-MUFFINS (JASON'S DELI COPY CAT )

Gingerbread Mini-Muffins (Jason's Deli Copy Cat ) image

Jason's Deli is one of my favorite places to eat. Their mini gingerbread muffins are so delicious and are little bites of Christmas! The best thing about this recipe is how simple it is, you can whip it up in about 10 minutes. However, in my opinion these gingerbread muffins taste MUCH better if you let them sit for a while....

Time 30m

Number Of Ingredients 11

1 c dark brown sugar
2 1/2 c flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp salt
1/4 tsp nutmeg
1 egg
1/2 c molasses
1 c buttermilk**
1/2 c unsalted butter, melted

Steps:

  • 1. Preheat oven to 350 degrees (F). Spray/butter muffin tins.
  • 2. Combine sugar, flour, soda, salt and spices in a bowl.
  • 3. In a separate bowl mix the egg, molasses, milk, and butter.
  • 4. Add the wet ingredients to the dry and stir until just blended.
  • 5. Add to muffin tins** (about 3/4 full, these muffins don't rise too much, so you don't have to worry about them overflowing) and bake for 15 minutes. If making normal sized muffins, it'll be more like 20 minutes. Muffins are done when a toothpick comes out clean.
  • 6. **If you don't have buttermilk (I almost never do), just add 1 tbsp. of white vinegar or lemon juice to a cup of regular milk and let sit out for about 10 minutes.**

Time 26m

Number Of Ingredients 14

2 1/2 Cups all-purpose flour
1/2 Cup brown sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons cinnamon
1 1/4 teaspoons ginger
1/2 teaspoon cloves
1/2 Cup light or dark molasses, depending on preference
1/2 Cup milk, room temperature
1/2 Cup (8 Tablespoons) butter, melted and cooled (you can also use 1/2 cup melted coconut oil)
2 eggs, room temperature
2 teaspoons vanilla extract
coarse sugar for sprinkling, optional

Steps:

  • Preheat oven to 400 degrees Fahrenheit. Spray a muffin tin with non-stick cooking spray or line with cupcake liners.
  • In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
  • In a separate bowl, whisk together molasses, milk, melted and cooled butter, eggs, and vanilla extract. Add wet ingredients to dry ingredients and stir until just combined.
  • Divide batter into 12 muffin cups. Depending on the size of your muffin tin, each cup will be 3/4 full to completely full. Sprinkle with optional coarse sugar.
  • Bake for 8 minutes. Leaving muffins in oven, reduce heat to 350. Bake for an additional 8-10 minutes or until toothpick inserted in the center comes out mostly clean. Ovens can vary a lot in temperature, so using a toothpick is the easiest way to tell when the muffins are done.
  • Remove to a wire rack to cool. Store in an airtight container.
