This raspberry dessert sauce topping is fresh, quick, & easy and gives desserts and breakfast dishes that little something extra! You can use fresh or frozen raspberries.

Number Of Ingredients 6

1 Tablespoon water
2 teaspoons cornstarch
3 cups (about 12 ounces/375g) fresh or frozen raspberries
1/4 cup (50g) granulated sugar
1 teaspoon fresh lemon juice (do not leave out)
optional: 1/2 teaspoon vanilla extract

Steps:

  • Whisk the cornstarch and water together until all the cornstarch has dissolved. (I just use a fork to mix-very easy.) Combine cornstarch mixture, raspberries, granulated sugar, and lemon juice in a small saucepan over medium heat. Using a wooden spoon or rubber spatula, stir the mixture, lightly mashing the raspberries as they begin to heat.
  • Bring to a boil and let it boil for 3 full minutes, stirring occasionally. Remove the pan from heat and-if desired for a richer flavor-stir in vanilla extract.
  • Press the warm sauce through a fine mesh strainer to remove the seeds, if desired. I use the back of a spoon to press the liquid through the strainer, held over a bowl. It takes a couple minutes to really squeeze it all out.
  • Feel free to serve warm over warm desserts, but it should be cooled to really thicken up. Cool the sauce completely at room temperature or in the refrigerator. The sauce will thicken slightly as it cools, but the strained version is still liquid and perfect for drizzling.
  • Cover and store for up to 1 week in the refrigerator.

12 wonton wrappers
3 ripe bananas
1/2 bag of semi sweet chocolate chips
1 c sugar
1 1/2 Tbsp water
softed butter or egg wash
raspberry sauce recipe below
RASPBERRY SAUCE
1 pt raspberries
1/4 c sugar
2 Tbsp orange juice
2 Tbsp cornstarch
1 c cold water

Steps:

  • 1. Preheat oven to 375f Peel the bananas and cut each length wise into quarters Lay a wonton wrapper on a clean cutting board
  • 2. Roll bananas into sugar Place a piece of banana near the corner of the wrapper a few chocolate chips Roll to wrap the banana/chips Wet the corner of the wonton wrapper to seal Wet the inside of the two ends, press down to seal Repeat the process until all are rolled
  • 3. Brush the wonton rolls with softened butter or egg wash Place the 12 banana rolls on a baking sheet and bake for 15 minutes time varies Remove from oven and serve with Raspberry Sauce
  • 4. RASBERRY SAUCE
  • 5. 1.Combine the raspberries, sugar, and orange juice in a saucepan. Whisk the cornstarch into the cold water until smooth. Add the mixture to the saucepan and bring to a boil. 2.Simmer for about 5 minutes, stirring constantly, until the desired consistency is reached. The sauce will thicken further as it cools. 3.Puree the sauce in a blender or with a handheld immersion blender and strain it through a fine sieve. Serve warm or cold. The sauce will keep in the refrigerator for up to two weeks.

Banana Chocolate Wrap With Easy Raspberry Sauce - Toasted image

Decadent enough for dessert, but surprisingly low in calories and easy to make with a raspberry jam sauce! This wrap is warm and gooey and features reduced-fat cream cheese (Neufchatel). Totally customizable based on your tastes - sometimes I make this with banana, Nutella and peanut butter, or you can use a different flavor of jam. This recipe makes one wrap - make one per person if using as a dessert or side, or (my preference) eat two for a full breakfast or lunch. If you use thin tortillas, these are reminiscent of filled crepes.

1 flour tortilla, 6 to 8 inches (I use whole wheat)
1 1/2 teaspoons chocolate hazelnut spread (Nutella, may substitute with chocolate chips)
1/2 ounce reduced-fat cream cheese (Neufchatel)
1/4 banana, medium size
1 tablespoon raspberry jam, seedless
1/4 tablespoon butter or 1/4 tablespoon margarine

Steps:

  • Leaving about 1 1/2 inches uncovered around the edges, spread cream cheese thickly in the center of the tortilla. Top with Nutella and banana slices.
  • Roll tortilla burrito-style, folding in the sides and then rolling up.
  • Melt butter or margarine in a small frying pan over medium-high heat. Place wrap in pan, seam side down, and reduce heat to low.
  • Check wrap often to make sure it doesn't burn. When it is golden brown on each side, turn it. I brown mine on four sides.
  • When wrap is done, remove from heat and cover the pan while you prepare the sauce - this will help the cream cheese continue to melt.
  • Heat jam in a small, microwave-safe bowl in the microwave on half power for 30-45 seconds or until hot and melted. Be careful not to burn yourself when handling it!
  • To serve, place wrap on a plate and pour sauce over it. You can garnish with a dollop of whipped cream and/or fresh raspberries to make it extra special.
  • Enjoy!

This is a great dessert to serve company. It's always easy to make ahead, or it can even be done at the last minute, and it never fails to impress. The pastry bags hold two flavors of chocolate morsels. People will think you went to a lot of trouble, but the truth is that this only takes about 20 minutes to make, thanks to puff pastry and ingredients that don't have to be cooked before assembly. Note that cooking time does not include chilling time for raspberry sauce. I don't remember where I got this recipe...it was clipped from a magazine many years ago.

10 ounces frozen raspberries in light syrup, thawed & undrained
1 1/4 cups powdered sugar, sifted & divided
17 1/4 ounces frozen puff pastry sheets, thawed
1 cup raspberry chocolate chips or 1 cup semisweet chocolate morsel
1 cup white chocolate chips
1 cup chopped pecans

Steps:

  • Combine raspberries and one cup powdered sugar in container of an electric blender; process until smooth, stopping once to scape down the sides.
  • Pour raspberry mixture through a large wire mesh strainer into a bowl, discarding seeds; chill.
  • Roll each pastry sheet on a lightly floured surface into a 12-inch square; cut each sheet of pastry into 4 squares.
  • Combine raspberry flavored chocolate morsels, white chocolate morsels and chopped pecans; place evenly in middle of each pastry square. Reserve some morsel mixture for garnish, if desired. Pull up sides of pastry to enclose morsel mixture; twist ends just above morsels, pinching to seal at "neck" and spreading open top edges of pastry to fan out. (The packages will look like little gift bags that are twisted near the top.) Place filled bags on an ungreased baking sheet.
  • Bake in a preheated 425 degree oven for 20 minutes, covering loosely with aluminum foil after 10 minutes to prevent excess browning.
  • Spoon raspberry sauce evenly onto dessert plates; set aside. Sprinkle baked pastries with remaining 1/4 cup powdered sugar and place a pastry bag in the center of each dessert place on the sauce. Sprinkle reserved morsel mixture over sauce. Serve immediately.
  • Note: Pastry bags can be assembled up to 4 hours before cooking; cover with plastic wrap and refrigerate. Commercial raspberry sauce can be substituted for the raspberry sauce. For puff pastry sheets, Pepperidge Farm is recommended.

This classic banana bread is best baked the day before - topped with a fruity compote, it makes a lovely sweet brunch or light dessert

140g butter , softened
140g light muscovado sugar
2 large eggs
2-3 very ripe bananas
zest ½ lemon
1 tsp vanilla bean paste
85g buttermilk
225g self-raising flour
1 tsp ground cinnamon
½ tsp bicarbonate of soda
250g tub ricotta
3 tsp vanilla bean paste
juice 2 oranges , 1 zested
zest and juice 2 oranges
85g granulated sugar
600g raspberries

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line the base of a 900g loaf tin with baking parchment. Beat together the butter and sugar until light and fluffy, then beat in the eggs, one at a time. In a separate bowl, mash the bananas with a fork, add to the bowl with the lemon zest, vanilla and buttermilk, and stir.
  • Mix together the flour, cinnamon and bicarbonate of soda. Fold into the banana mix, one-third at a time, until just combined and add to the tin. Bake for 1 hr until firm, golden brown and a skewer inserted into the centre comes out clean. Leave in the tin for 10 mins, then turn out onto a wire rack to cool completely.
  • While the banana bread is baking, make the vanilla ricotta. Tip the ricotta into a bowl and mix with the vanilla bean paste, orange zest and 90ml orange juice until just combined. Cover and chill.
  • To make the raspberry compote, heat the orange zest, 5 tbsp orange juice, the sugar and 225g of the raspberries in a saucepan over a gentle heat until the sugar has dissolved. Simmer for 5 mins, then pour through a sieve into a bowl. Stir through the rest of the raspberries, cover and chill.
  • When you are ready to serve, take the raspberry compote out of the fridge to bring to room temperature. Slice the cooled banana bread into 8 pieces and toast under a medium grill until lightly caramelised. Serve each slice with a spoonful of vanilla ricotta and a drizzle of raspberry compote.

1 package (12 ounces) unsweetened frozen raspberries, thawed
34 cup baking cocoa
3/4 cup heavy whipping cream
1-1/2 cups sugar
1/3 cup light corn syrup
1/4 cup butter, softened

Steps:

  • Puree raspberries in a food processor or blender. Press through a fine sieve; set aside. , In a saucepan, combine cocoa and cream. Add sugar, corn syrup, butter and raspberries; mix well. Bring to a boil over medium heat, stirring often. Boil for 8 minutes without stirring. Remove from the heat. Cool at least 15 minutes before serving. , Spoon over ice cream, pound cake or brownies. Refrigerate leftovers in a covered container for up to 1 month.

2 x 32g bag chocolate buttons
vanilla ice cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
  • Serve with a scoop of ice cream and any melted chocolate that has escaped!
