BARBARA'S HOT SALSA

We love tomatoes! Every year, when our tomatoes come in, I make spaghetti sauce, can some of the tomatoes, do sun dried tomatoes with the romas, and make fresh salsa. I usually can the salsa, too. I love making it extremely hot, as it tends to mellow in the canning process. Sometimes, though, the heat just comes right on through. It is not a raw type of hot, but with the canning, it tends to age quite nicely. I keep a crock of salsa going all Summer and Fall. I don't can it until the flavors have had a change to mingle and the raw taste is gone. (about 3-4 days)

Number Of Ingredients 9

1 lime, juice of
6 tomatoes (peeled and diced)
2 onions (diced)
3 jalapeno peppers (thinly sliced, two green, one red2 serano peppers)
4 hot peppers (tabasco)
1 tablespoon sugar
1 tablespoon cumin (freshly ground)
1 tablespoon coriander (freshly ground)
1 teaspoon kosher salt

Steps:

  • sprinkle salt in bottom of crock.
  • Add tomatoes, onions, peppers, sugar, spices, and lime juice.
  • Daily, sprinkle just a little salt into crock and stir.
  • On the 4th or 5th day, pack (what has not been consumed) into hot sterile pint jars.
  • Process in boiling hot water bath for 10 minutes.

Here's what you need: habanero peppers, garlic, olive oil, carrot, onion, salt, water, lime juice, white vinegar

Yield 6 cups

Number Of Ingredients 9

10 habanero peppers, seeded, halved
6 cloves garlic, smashed
2 tablespoons olive oil, divided
1 cup carrot, chopped
1 onion, chopped
1 ½ teaspoons salt
2 cups water
¼ cup lime juice
¼ cup white vinegar

Steps:

  • Preheat the oven to 425˚F (220˚C). Line a baking sheet with parchment paper.
  • Place the habanero peppers and garlic on the baking sheet. Drizzle with 1 tablespoon of olive oil and toss with tongs to coat. NOTE: Do not touch the peppers with your bare hands.
  • Roast for 10 minutes, until the edges of the peppers are brown.
  • Add the remaining tablespoon of olive oil to a large pot over high heat. Add the carrot, onion, and salt. Cook for 4 minutes, until the vegetables are tender and glossy.
  • Add the water, lime juice, white vinegar, and the roasted peppers and stir. Bring to a boil, then reduce the heat to medium-low and simmer for 10 minutes.
  • Remove the pot from the heat and let cool.
  • Pour the vegetable mixture into a blender and puree until smooth.
  • Using a funnel, pour the sauce into a bottle or jar and store in the refrigerator for up to 2 weeks.
  • Enjoy!

64 ounces canned crushed tomatoes
2 cups minced onion
6 jalapeno peppers, chopped
2 teaspoons ground cumin
2 tablespoons salt
2 tablespoons white sugar
½ cup white vinegar
1 teaspoon minced garlic
1 (15 ounce) can tomato sauce
½ (6 ounce) can tomato paste
½ cup ketchup
1 cup water

Steps:

  • In a large soup or stock pot, combine tomatoes, onion, jalapenos, cumin, salt, sugar, vinegar, garlic, tomato sauce, tomato paste, ketchup, and water (add enough water to bring the mixture to your desired consistency). Bring mixture to a slow boil, reduce heat and let simmer for at least 2 hours.
  • Let the mixture cool completely, then pour into individual jars. Store in refrigerator. Will keep for several weeks.

BARBERTON HOT SAUCE

Barberton, Ohio is noted for it's chicken restaurants. They all serve hot sauce. They will not give out the recipe. I found this on the internet a few years ago and it is very close. We make this a lot. It also freezes well, you just have to put more liquid in.

2 teaspoons Crisco
1 cup Spanish onion, diced
1/4 cup celery, diced
1/2 green pepper, diced
1 (28 ounce) can whole tomatoes
2 (6 ounce) cans tomato juice
1 teaspoon red pepper flakes
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4-1/3 cup long grain rice, uncooked

Steps:

  • Perl and dice onion medium fine.
  • Dice cellery and bell pepper fine.
  • Melt shorting in a large skillet.
  • Add onion and saute about 3 minutes or until soft and translucent. Add green pepper and celery and saute about 3 more minutes.
  • Add entire can of tomatoes and tomato juice. Stir until distributed evenly
  • add sugar, pepper and salt.
  • crush red pepper between fingers and add to mixture for about 10 minutes, stirring occasionally.
  • rinse rice under sieve until water runs clear.
  • add rice to pan and stir to distribute evenly.
  • Simmer for about 15 minutes until rice has cooked and absorbed most of the liquid, add more tomato juice if needed. (rice needs to be a little soupy).
  • taste and adjust seasonings to taste.
