BBQ CHICKEN SANDWICHES
With four small children at home, I need quick yet filling meals. This family-favorite BBQ chicken sandwich filling is a cinch to make. For a spicier taste, eliminate the ketchup and increase the amount of salsa to 1 cup. -Leticia Lewis, Kennewick, Washington

Steps:
- In a large saucepan, saute the onion, celery and garlic in butter until tender. Stir in the salsa, ketchup, brown sugar, vinegar, Worcestershire sauce, chili powder, salt and pepper. , Stir in chicken. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Serve about 1/3 cup chicken mixture on each bun. Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary. Serve in buns.

Steps:
- Heat oil in skillet, add onions, peppers & mushrooms. Continue to stir occasionally. Until they are browned and onions start to carmelize.
- While they are cooking, place chicken in a nonstick skillet and stir in italian dressing, cook on medium/high heat. Continue to stir as needed, until chicken is cooked throughly.
- Pre-heat oven to 400°F.
- Place hoagie buns open on a cookie sheet. Top each bun with 1/4 of chicken and 2oz of provolone.
- Bake in oven for about 5 minutes, just until cheese is melted.
- Top each with pepper mixture, lettuce, tomato and mayo if desired.

BUFFALO WING GARLIC-TOASTED HOAGIES
We are suckers for the combo of blue cheese and buffalo wings. Add garlic and muenster, and we're hooked! A wonderful gameday treat.

Steps:
- 1. In frying pan combine chicken, hot sauce, 4 tbsp butter, bbq sauce and chili powder. Heat til simmering. Simmer on very low.
- 2. In small bowl, combine 1 1/2 sticks soft butter, garlic, and parsley. Spread insides of hoagie rolls with butter mixture (both cut sides).
- 3. Place open-faced on cookie sheet and broil til lightly toasted. Or 4 minutes at 400º.
- 4. Top each bottom half of hoagie rolls with meat mixture, (pile high), then top each with 2 slices muenster cheese. Return to oven and bake 2 more minutes.
- 5. Remove from oven and top each with lettuce tossed with celery, and a pinch each of salt and pepper. Top each with 3 tomato slices.
- 6. Top each with 2 tbsp blue cheese dressing. Place on top halves of toasted hoagie rolls.
- 7. Cut in half on the bias. Makes 4 hoagies.

- In a medium saucepan over medium heat, warm the oil. Add the onion and cook until tender, about 3 minutes. Add the garlic and cook until fragrant, about 1 minute more. Add the remaining sauce ingredients, including ¼ teaspoon salt and ¼ teaspoon pepper, and whisk to combine. Bring the sauce to a boil, and then reduce the heat and simmer gently until thickened slightly and the flavors have blended, about 20 minutes. Remove from the heat. Reserve ¼ cup of the sauce for basting the chicken.
- In a medium bowl whisk 3 tablespoons oil, the mayonnaise, mustard, vinegar, sugar, ½ teaspoon salt, and ¼ teaspoon pepper. Add the slaw and basil and turn to coat in the dressing. Let the slaw sit at room temperature while you grill the chicken.
- Brush the chicken breasts on both sides with oil and season evenly with ½ teaspoon salt and ½ teaspoon pepper. Brush the cut side of the buns with oil. Grill the chicken, smooth (skin) side down first, over direct medium heat, with the lid closed, until the meat is firm to the touch and opaque all the way to the center, 8 to 12 minutes, turning and basting with the reserved sauce three times. During the last minute of grilling time, toast the buns, cut side down, over direct heat. Remove from the grill and let the chicken rest for 3 to 5 minutes.
