BUSY-DAY PORK CHOPS
It was time to use or lose some pork chops I had in the fridge, so I dressed them in bread crumbs and Parmesan and baked them up. Necessity sure is the mother of invention, and in this case I invented an amazing healthy pork chop recipe. -Dee Maltby, Wayne, Ohio

- Preheat oven to 375°. Place milk in a shallow bowl. In another shallow bowl, toss bread crumbs with cheese and seasonings., Dip pork chops in milk, then coat with crumb mixture. Place on a baking sheet coated with cooking spray; lightly spritz chops with cooking spray., Bake 8-10 minutes on each side or until a thermometer reads 145°. Let stand 5 minutes before serving.

BASTILLE DAY PORK CHOPS

Steps:
- 1. Rub the pork chops on each side with the oil. Mince the rosemary and combine it with the oregano in a small dish. Press equal amounts of the herbs onto both sides of each pork chop and let them sit at room temperature for at least 2 hours, and in the refrigerator up to 8 hours.
- 2. Build a small fire in a barbecue, and when the coals are red and dusted with ash, spread them out and set the grill about 3-inches above the coals. Grill the pork chops until they are golden on the outside and still moist and just slightly pink on the inside, about 4 minutes per side. Remove from the grill, sprinkle lightly with salt and pepper and serve immediately.
HONEY-GLAZED PORK LOIN CHOPS
A basic glaze for an easy dinner. Serve with favorite pasta and steamed vegetables.

- Heat oven to 350 degrees F. Sprinkle chops with salt and pepper. Coat large skillet with nonstick cooking spray. Heat skillet over medium heat. Add pork chops. Cook until brown, turning once. Remove chops. Place chops in 9x13-inch baking dish. Combine brown sugar and honey in small bowl. Microwave on HIGH (100%) for 20 seconds; stir to combine. Spoon half of the honey mixture over tops of chops, spreading evenly.
- Bake, uncovered, for 15 minutes. Turn chops; spoon remaining honey mixture over chops, spreading evenly. Bake until internal temperature is 145 degrees F (63 degrees C), 15 to 20 minutes. To serve, spoon pan drippings over chops.

LAZY DAY PORK CHOPS
Very simple and tasty, yet very lazy way to make pork chops or pork steaks. I make this about once a month or so. As often as my husband will let me get away with before he starts to complain. For pork steaks or more chops you might have to use an extra can of soup. I might be weird but I just love pork chops fixed this way! (Tastes better if the pork chop has some fat on it.)

PORK CHOPS BASQUE STYLE

Steps:
- Sprinkle chops on both sides with salt and pepper. Dredge in flour and shake off excess.
- Heat corn oil in a heavy skillet and add chops. Cook 5 minutes or until well browned on one side. Turn chops and cook until well browned on the other side, about 5 minutes. Transfer chops to a platter.
- Drain fat from skillet and add olive oil. Add garlic, onion and green and red peppers, and cook, stirring, about 1 minute. Add wine. Cook about 1 minute and add tomatoes, chicken broth, bay leaf, thyme, salt and pepper. Bring to boil and top with pork chops. Cover closely and simmer 25 minutes or until tender.
- Transfer chops to a warm platter and bring the sauce to a boil. Cook about 3 minutes or until reduced to about 2 1/4 cups. Remove bay leaf. Pour sauce over chops and serve.
