MEATLOAF WITH MASHED POTATOES AND CHEESE



Meatloaf with Mashed Potatoes and Cheese image

1 Onion (Chopped)
1 tbsp. Olive Oil
½ cup Frozen Peas
¾ cup Breadcrumbs
3 tsp. Garlic (Minced)
1 ½ lb. Beef (Ground)
1 Large Egg
¼ cup Tomato Sauce
¼ cup Parsley (Chopped)
¼ cup BBQ Sauce
Salt And Pepper To Taste
For the potatoes:
1 ½ Lb. Potatoes Peeled And Cubed
¼ cup Heavy Whipping Cream
4 tbsp. Butter
Salt And Pepper To Taste
1 cup Cheddar Cheese (Shredded)

Steps:

  • Heat the oven to 400 degrees.
  • In a skillet over medium heat, cook the onions and garlic in the oil until softened. Remove and let cool.
  • Add the remaining ingredients for the meatloaf to a mixing bowl with the onions, and knead with your hands until well combined.
  • Form the mixture into a loaf shape in a 9x13 baking dish. Bake for 30 minutes.
  • While the meatloaf is baking, boil the potatoes until tender. Drain the water.
  • Add in the butter and heavy whipping cream as well as salt and pepper to taste. Mash well.
  • Spread the mashed potatoes on the meatloaf, and top with the cheese. Bake for an additional 20 minutes.
  • Enjoy!
