Baked Beans and Sauerkraut image

An easy way to jazz up some baked beans for the sauerkraut lovers. Make it with or without the sausage.

28 ounces baked beans
1 cup brown sugar
2 tablespoons ketchup
1 tablespoon prepared mustard
1/4 cup finely minced onion
14 ounces sauerkraut, drained and rinsed
1 lb polish smoked sausage, cut into 3/4-inch pieces (optional)

Steps:

  • Preheat oven to 325°.
  • Combine all ingredients well.
  • Pour in a 2 1/2 to 3 quart casserole.
  • Bake at 325° for about 2 hours.
  • Can make in crockpot on low for about 4-6 hours.

1 pound fresh bratwurst sausages
1 (32 ounce) package sauerkraut
1 pinch celery salt
1 tablespoon brown sugar
1 (15 ounce) can baked beans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Cook bratwurst in a skillet over medium-high heat just until nicely browned on the outside.
  • Spread sauerkraut in the bottom of a 9x11 casserole dish, leaving a 2 inch margin at the edges. Sprinkle celery salt and brown sugar over the sauerkraut. Place the sausages on top. Pour the beans around the outer edge of the sauerkraut. Cover the dish with a lid or aluminum foil.
  • Bake for about 45 minutes in the preheated oven, until bratwurst links are cooked through.

Slovenian Bean and Sauerkraut Hotpot (Jota) image

This recipe for Slovenian bean and sauerkraut hotpot, known as jota in Slovenian, is a hearty dish that is a cross between a soup and stew.

2 cups kidney beans (soaked overnight in cold water)
8 ounces smoked pork spareribs or slab bacon (rind removed)
1 large onion (diced)
2 cloves minced garlic
2 cups vegetable, pork or chicken stock
2 tablespoons tomato paste
1 pound potatoes (peeled and diced)
1 pound sauerkraut (drained and rinsed)
Dash salt and pepper

Steps:

  • Drain the soaked beans and place them in a large saucepan filled with cold water to cover by several inches. Bring to a boil and continue boiling briskly for 10 minutes. Reduce heat and simmer for 45 minutes or until beans are tender but not mushy. Drain, rinse with cold water to stop the cooking process, and set aside.
  • In a large saucepan, sauté the spareribs or bacon until the fat begins to render out. Add the onion and garlic, and sauté until onion is golden, but not browned. Stir in stock, tomato paste, potatoes and sauerkraut. Bring to a boil, reduce heat and simmer, uncovered and stirring occasionally, for at least 20 minutes or until potatoes and sauerkraut are very tender and the mixture is thick.
  • Remove pork, cut into bite-sized pieces and return to the saucepan along with the cooked beans and warm through, about 10 minutes. Adjust the seasonings. Some cooks thicken their jota with a roux if it is too soupy. But this is a subjective matter and one person's idea of the proper thickness of a jota is definitely not another's. Serve it the way you like it.

4 cups pork & beans or 4 cups great northern beans
4 cups sauerkraut, drained
2 cups applesauce
1 cup brown sugar, lightly packed
1 teaspoon prepared yellow mustard
1 teaspoon seasoning salt, blend
1/3 cup chopped onion
1 chopped garlic clove
1/4 cup molasses (optional)
2 -3 slices bacon, cooked and crumbled

Steps:

  • In a large bowl, mix ingredients in order given.
  • Lightly grease 3- 1 1/2 quart casserole dishes or 1-9x13 pan.
  • Divide bean and sauerkraut mixture evenly between the baking dishes and cover with foil or lids.
  • Bake for 2 hours at 350°F Adding a little water when beans seem a little dry.
  • Serve as a side for meat patties or along side of baked macaroni and cheese. Might also be good over toast or rice.

This recipe has been in our family for over 50 years, and it's always been our favorite casserole! Now that our four children are grown and gone, I don't often make family-sized meals...but we still enjoy this casserole often, because it's so simple to prepare and reheats nicely.

2 cups uncooked elbow macaroni
1 pound bulk pork sausage
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup sauerkraut
1 teaspoon sugar
4 to 5 tablespoons shredded cheddar cheese

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, cook pork over medium heat until no longer pink. Add the tomatoes, sauerkraut and sugar to skillet. Cook, uncovered, over medium heat for 2 minutes., Drain macaroni; add to skillet with cheese. Spoon into a greased 8-in. square baking dish. Bake, uncovered, at 350° for 20 minutes.
