BEAR'S EASY TURKEY PICCATA

Bear's Easy Turkey Piccata image

An easy version of piccata using turkey cutlets rather than the usual veal or chicken. If you are a fan of brining (as I am), brining the cutlets beforehand will make sure that the cutlets are well-seasoned, and helps to keep the moist and juicy. And although not traditional, a quarter to half a cup of heavy cream swirled into the sauce is a nice addition if you don't mind the extra calories.

Provided by TheSlyBear

Categories     Turkey Breasts

Time 25m

Yield 6 cutlets, 2-3 serving(s)

Number Of Ingredients 9

6 turkey cutlets
2 tablespoons cornstarch
1 cup cornstarch
2 tablespoons canola oil or 2 tablespoons grapeseed oil
1 3/4 cups low sodium chicken broth (or home-made)
2 tablespoons dry vermouth
1/2 cup lemon juice, freshly squeesed
2 tablespoons capers, drained but not rinsed
2 tablespoons butter, kept cold

Steps:

  • In a small jar, make a slurry of 1/4 c of the chicken stock and 2 T corn starch. Shake well, and set aside.
  • Place about a cup of corn starch in a pie plate or other shallow bowl. Dredge each turkey cutlet in the corn starch until completely coated. Shake off any excess.
  • Preheat oven to lowest temperature and put an oven-proof plate in it.
  • Coat bottom of a non-stick skillet with the oil and get it hot over medium to medium-high heat (depending upon your cooktop).
  • Sauté the turkey cutlets until nicely browned, about 4 minutes per side. Don't crowd the pan -- cook them in batches if necessary. Put cooked cutlets on warmed plate in oven.
  • Put the remaining 1 1/2 c chicken stock and vermouth in a saucier or sauce pan and bring to a boil. Add the capers.
  • Whisking rapidly, shake up the slurry jar to make sure everything's nice and mixed, and pour about 1/3 of the slurry into the broth. The sauce will thicken. Add another 1/3 of the slurry if necessary (most likely). The sauce needs to be nice and thick at this point as it is about to get cut with the lemon juice. Use the last 1/3 of the slurry if sauce hasn't thickened to the point where the bubbles will stack.
  • Remove the pan from the heat and whisk in the lemon juice. Then whisk in each tablespoon of cold butter, one at a time.
  • Serve turkey cutlets with the sauce spooned over them.

Provided by Food Network Kitchen

Time 55m

Yield 4 servings

Number Of Ingredients 10

1 pound red bliss potatoes, halved
5 tablespoons extra-virgin olive oil
2 tablespoons rosemary leaves, finely chopped
1 large clove garlic, finely chopped
Kosher salt and freshly ground black pepper
Four 6-ounce turkey breast cutlets
1/4 cup capers, drained
Zest and juice of 1 lemon, plus wedges for garnish
3 tablespoons unsalted butter
1/4 cup roughly chopped flat-leaf parsley, plus sprigs for garnish

Steps:

  • Preheat the oven to 450 degrees F.
  • Toss the potatoes with 2 tablespoons of the olive oil, the rosemary and garlic in a medium bowl. Season with salt and pepper. Spread the potatoes in a 13- by 9-inch baking pan. Roast, uncovered, stirring once or twice, until browned and tender, 25 to 30 minutes.
  • Sprinkle 1 teaspoon salt and 3/4 teaspoon pepper on both sides of the turkey cutlets. Heat 2 tablespoons of the olive oil in a 10-inch nonstick skillet over medium-high heat until hot. Sear 2 turkey cutlets, turning once, until browned and cooked through, 1 1/2 to 2 minutes per side. Remove to a plate. Add the remaining 1 tablespoon olive oil to the skillet, cook the remaining 2 cutlets and add to the plate.
  • Add the capers and the lemon zest and juice to the skillet, swirling the skillet to combine. Remove from the heat, add the butter and stir until a thick sauce forms. Stir in the parsley, adding any juices from the resting turkey, and season with salt and pepper.
  • Divide the turkey cutlets among serving plates and spoon the sauce on top. Serve with the potatoes.

TURKEY PICCATA

Turkey Piccata image

Provided by Alton Brown

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 10

1 whole turkey breast, approximately 1 1/2 to 2 pounds
Kosher salt
Freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons olive oil
6 tablespoons unsalted butter
2 tablespoons finely chopped shallots
1/2 cup white wine
1/3 cup freshly squeezed lemon juice
2 tablespoons freshly chopped parsley leaves

Steps:

  • Preheat oven to 200 degrees F.
  • Cut the turkey breast crosswise into 1/2-inch pieces. Place pieces of turkey, 1 at a time, between 2 pieces of plastic wrap. Squirt the meat lightly with water and squirt the top of the plastic wrap as well. Pound to no less than 1/8 inch thickness.
  • Season both sides of meat with salt and pepper and then dredge in flour. Shake off the excess flour. Set aside.
  • In a large saute pan over medium to medium high heat, heat olive oil and 4 tablespoons butter. Once hot, but not yet smoking, brown turkey scaloppine quickly, about 1 minute on each side, and remove to an ovenproof platter. Place in oven to keep warm.
  • Reduce the heat to low and add the shallots to the pan. Saute for 1 to 2 minutes or until they begin to turn translucent. Add wine and lemon juice to the pan and simmer until slightly reduced, about 2 minutes. Add remaining 2 tablespoons butter and whisk to combine. Season with salt and pepper, to taste, if necessary. Pour sauce over turkey, sprinkle with parsley, and serve immediately.

TURKEY PICCATA

Turkey Piccata image

Using lemon segments gives the sauce of this turkey piccata a sweetness and body that lemon juice alone would not achieve. Capers are the pickled flower buds of the caper bush; the berries are pickled seed pods. Make it a meal: Serve over whole-wheat angel hair pasta. Arugula-Mushroom Salad makes a nice first course.

Provided by Allrecipes Member

Time 30m

Yield 4

Number Of Ingredients 13

1 lemon
⅓ cup all-purpose flour
½ teaspoon salt
½ teaspoon freshly ground pepper
4 (4 ounce) turkey cutlets, each cutlet sliced in half across the grain
2 teaspoons extra-virgin olive oil
1 clove garlic, minced
½ cup reduced-sodium chicken broth
1 tablespoon drained capers, rinsed
½ teaspoon sugar
2 teaspoons butter
1 tablespoon chopped fresh parsley
12 each caper berries for garnish

Steps:

  • Remove skin and white pith from lemon with a sharp knife. Working over a bowl to catch the juice, cut the lemon segments from their surrounding membranes. Chop segments coarsely and reserve with the juice.
  • Combine flour, salt and pepper in a shallow dish. Lightly dredge turkey in the flour mixture and pat off excess. Heat oil in a large nonstick skillet over medium-high heat. Add the turkey to the pan and cook until the outside is golden brown and the interior is no longer pink, 2 to 3 minutes per side. Transfer to a platter and keep warm.
  • Add garlic to the pan and cook, stirring, for several seconds. Pour in broth and bring to a boil, stirring and scraping up any browned bits. Boil for 1 minute. Stir in the reserved lemon segments and juice, capers and sugar; cook for 30 seconds longer. Add butter and swirl the skillet until it has melted.
  • Spoon sauce over the cutlets, sprinkle with parsley and pepper. Garnish with caper berries, if using.
