BASIC BECHAMEL SAUCE
This is a quick and easy bechamel sauce.

Steps:
- Melt butter in a large saucepan over medium heat. Once melted, stir in the flour until smooth. Continue stirring as the flour cooks to a light, golden, sandy color, about 7 minutes.
- Increase heat to medium-high and slowly whisk in milk until thickened by the roux. Bring to a gentle simmer, then reduce heat to medium-low and continue simmering until the flour has softened and not longer tastes gritty, 10 to 20 minutes, then season with salt and nutmeg.

BASIC BECHAMEL SAUCE
Use this basic bechamel sauce to make our Rich Chicken and Squash Lasagna, Rich Beef and Eggplant Lasagna, Rich Artichoke and Mushroom Lasagna, or our Rich Spinach and Leek Lasagna.

Steps:
- In a medium saucepan, melt butter over medium. Add onion and garlic; cook until onion is soft, 4 minutes. Add flour, season with salt, and cook, stirring, until mixture is pale golden with a nutty aroma, 4 minutes. Whisking constantly, add half the milk. Add the remaining milk and whisk until smooth. Cook, whisking constantly, until sauce comes to a boil and thickens, 10 minutes. Use immediately.
BECHAMEL SAUCE RECIPE
Bechamel Sacue or Salsa Besciamella is one one the basic sauces in cooking.It's also the easiest and fastest sauce to make.

Steps:
- In a stove-top pot melt butter.
- Add flour and whisk well until a thick creamy paste forms. Cook for 1-2 minutes.
- Slowly pour in about ⅓ cup of milk. Continue whisking energetically breaking all the lumps. Make sure to scrape well the bottom and sides of the pot.
- Once you have reached a smooth consistency add a little more milk. Continue adding milk in small portions until you have used up all the milk.
- Increase the heat a little and continue whisking and cooking the sauce.
- Once it starts to thicken, cook it for another 20-30 seconds and turn off the heat.
- Continue to whisk. You'll notice Bechamel Sauce will continue to thicken even with the heat off.
- Once it reached desired consistency, season it with nutmeg and salt to taste or other seasonings (see suggestions above the recipe).
- Give another good stir.
- If you're not planning to use the sauce immediately see my tips above how to store it to prevent a skin from forming.

- In a sauce pan cook the onion in the butter over moderately low heat, stirring, until it is softened. Stir in the flour and cook the roux, stirring, for 3 minutes. Add the milk in a stream, whisking vigorously until the mixture is thick and smooth, add the salt and the white pepper, and simmer the sauce for 10 to 15 minutes, or until it is thickened to the desired consistency. Strain the sauce through a fine sieve into a bowl and cover the surface with a buttered round of wax paper to prevent a skin from forming.

- Scald the milk in a heavy saucepan over medium heat. Keep it warm over very low heat.
- Melt the butter in a separate saucepan over low heat. When it's bubbling, add the flour and whisk until it forms a golden paste, about 3 to 4 minutes.
- Whisking constantly, add the hot milk in a steady stream. Bring the milk to a gentle simmer and continue to whisk until the sauce thickens, about 10 minutes.
- Whisk in the nutmeg and the cheese, and serve at once

- Place 2/3 cup milk and butter in a medium saucepan; heat over medium-low heat, stirring, until butter melts. Do not let milk come to a boil.
- Meanwhile, place flour in a medium bowl; add remaining milk and whisk until well combined. Ladle some of the warm milk mixture into the bowl and mix until warmed through.
- Transfer entire contents of bowl to saucepan and whisk in salt. Cook over medium-low heat, whisking, until thickened and mixture reaches about 180 degrees. Stir in nutmeg and remove from heat; bring to room temperature. Bechamel will thicken as it cools.
YAYA'S SALSA BLANCA (WHITE SAUCE)
The most versatile cream sauce! It is great on it's own or as a base, which can be easily be jazzed up by adding chunks of smoked salmon, grated cheese, or carmelized onions - yum! It is perfect for pasta or served over steamed veggies. Also try it as a delicious, creamy layer in a vegetarian lasagna or mix this sauce into a veggie puree for an instant creamed soup.

Steps:
- Dissolve flour in 1/2 cup of milk (or soymilk). Set aside.
- Warm the remaining milk in a saucepan, over med heat. Do not let it boil.
- Add butter (or margarine), salt, pepper and nutmeg. Do not be afraid to use the nutmeg, it makes the sauce!
- Add the dissolved flour/milk mixture. Whisk over med heat until it thickens.
- For an even richer sauce, remove from stove and quickly whisk in an egg yolk.
