Steps:
- Stir a few tablespoons of stewed tomato juice into the flour in a small bowl. Keeping the flour smooth. Set aside said mixture.
- Into a skillet melt butter, add onion, cook until wilted.
- Add stewed tomatoes, flour mixture, mushrooms, celery salt, and Worcestershire sauce.
- Cook and stir constantly. Breaking up the tomatoes until thick and bubbly.
- Add beef, sour cream, salt, and pepper. Mix well and heat through.

- In a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in flour and seasonings until blended. Add the water, tomato sauce and vinegar; cook for 10 minutes or until heated through. Cut each tortilla into six wedges. , In a greased 13x9-in. baking dish, layer half of the tortillas, meat mixture, cheese and olives; repeat layers. Bake, uncovered, at 350° for 35 minutes or until heated through.

BEEF FIESTA CASSEROLE
I've been making this casserole since my boys were young--it's one of their favorites. It's a great budget dish and perfect for when you need your TexMex "fix"! It also freezes well--I usually make it in two smaller casseroles; one for dinner tonight and one to freeze for later!

Steps:
- Preheat oven to 375°.
- Grease a 3-quart casserole.
- In a large skillet, cook ground beef over med-high heat until browned; drain.
- Reduce heat to medium; add onion and garlic and cook for about 5 minutes.
- Add tomatoes, tomato paste, chilies, beans, salt, chili powder, cumin and pepper.
- Stir to combine and simmer for about 10 minutes.
- Pour into prepared casserole.
- Add macaroni and mix well to combine all.
- Sprinkle with cheese, add jalapeño slices if desired; cover and bake for 30 minutes.
- Uncover and continue baking for 10 minutes.
FIESTA BURGER
Steps:
- In a medium bowl, mix together the ground beef, chorizo, onion powder, cumin and 2 teaspoons each salt and pepper. Form the mixture into palm-size balls.
- Heat a griddle or large skillet over medium-high heat. Place the balls on the griddle and smash with a spatula or the back of a spoon. Cook, flipping once, until cooked through. Divide the Cheddar and queso blanco among the burgers and let melt. Remove the burgers to a plate.
- Meanwhile, combine the mayonnaise, ketchup and lime zest and juice in a bowl; mix to blend. Add cumin, salt and pepper to taste.
- Toast the slider buns on the griddle. Serve the burgers on the buns, topped with some rosada sauce.
BEST SLOW-COOKER BEEF ROAST
Oh y'all this beef roast is incredible & so easy to cook. If you choose to do this is in the crockpot just be sure to cook on high for 4 hours on high .

Steps:
- Wash and rinse your meat (then towel dry) stab it all over with a very sharp knife & rub or sprinkle all of the seasonings onto the roast .
- Sauté minced garlic in the oil .
- Add the onions & sauté until light golden brown & then remove them with a slotted spoon or tongs and set to the side.
- Brown the seasoned roast on all sides (may need to add a little more olive oil).
- If using a roasting pan line it with foil and also generously spray the foil.
- Place the fried roast in the baking pan with the remaining grease (add a cup of water around it .
- Bake Roast at 400 for 45 minutes (covered).
- Add potatoes & carrots on the sides of the roast .
- Pour the can of beef broth & French soup over everything .
- Now add the sautéed onions & garlic on top of the roast.
- Sprinkle a little bit of the seasonings you rubbed into the roast over the entire dish .
- Bake at 400 for 45 minutes.
- Mix 2 Tablespoons of flour with 1/4th cup of water & pour it over everything in the dish . This is going to be the yummy gravy .
- Bake covered for another 45-55 minutes or until the veggies are tender .

- Add oil to a medium saucepan. Stir in rice, and cook over medium heat until rice begins to have a golden color, about 5 minutes. Add 1/2 cup onion and 1/2 cup green pepper; cook and stir for 1 minute. Stir in water and half of the chili sauce. Bring to boil. Mix in corn, lemon juice, and 1/2 teaspoon salt. Cover, and simmer over low heat for 20 minutes.
- Meanwhile, saute beef with remaining 1/2 cup onion and 1/2 cup green pepper until meat loses pink color and vegetables are tender.
