LOMO SALTADO (PERUVIAN STIR-FRIED BEEF WITH ONION, TOMATOES, AND FRENCH FRIES) RECIPE

- In a wok or large cast iron or stainless steel skillet, heat 2 tablespoons (30ml) oil over high heat until heavily smoking. Meanwhile, season beef all over with salt.
- Push scallions and peppers to the side and add tomatoes to the pan, allowing them to sear on one side, about 30 seconds. (If your burner isn't very strong, you can remove the scallions and peppers from the pan before adding the tomatoes to guarantee good searing. Otherwise, leave them in.) Try not to let the tomatoes grow too soft and pulpy; it's better that they retain their shape rather than brown to the point of becoming mushy.
- Add garlic and ginger and cook, tossing and stirring constantly, until lightly sautéed and fragrant, about 15 seconds. Add soy sauce and vinegar and toss to combine.
- Spoon stir-fry onto plates with a mound of cooked rice and French fries and serve right away.

Transfer to a plate using a slotted spoon. Add the remaining 1 tablespoon vegetable oil to the skillet. Add the red onion and jalapeno and cook, stirring, until slightly softened, about 3 minutes. - Sprinkle cornstarch on the raw french fries.
- Toss to coat.
- Heat oil in a wok/frypan.
- Fry the cornstarch coated french fries till nice and crisp.
- Keep aside.
- In a bowl, mix together the chilli sauce, honey, vinegar, soya sauce and salt.
- Keep aside.
- Reomve all, but 2 tblsps, of the oil from the wok/frypan and put it back on the burner.
- Heat the oil.
- Add spring onions and green pepper and cook them for barely 30 secs.
- Pour in the chilli sauce mixture.
- Give it a few turns and add the cornstarch coated french fries.
- Toss to coat the fries with the sauce.
- Remove from fire.
- Serve immediately.
STIR-FRY BEEF
This beef stir-fry is a little spicy...if you need a milder version reduce the crushed red pepper by half. This comes from "Plain & Elegant: A Georgia Heritage" . The original recipe does not call for any green vegetable, but I like to add some fresh asparagus when I cook the squash....but I posted it as originally posted.

- Trim excess fat from the steak; slice the steak diagonally across the grain into thin strips. Set aside.
- Place the chopped red bell peppers in a food processor or blender; cover and process until smooth, stopping frequently to scrape down the sides. Set aside.
- Pour 2 tablepoons oil around the top of a preheated wok or large skillet, coating the sides; heat at medium-high (375 degrees) for 2 minutes. Add the onion and minced garlic, and stir-fry 2 minutes. Add the squash, (and asparagus if using) and stir-fry for 1 to 2 minutes or until crisp-tender. Remove the vegetables from the wok and set aside.
- Pour 1 tablespoon oil into the wok; add half of the steak strips, and stir-fry 2 to 3 minutes or until browned. Remove the steak from the wok, and set aside. Pour the remaining 1 tablespoon of oil into the wok. Add the remaining steak strips, and stir-fry 2 to 3 minutes or until browned.
- Combine the soy sauce, crushed red pepper, and black pepper. Add the soy sauce mixture, red bell pepper puree, reserved vegetable mixture, and steak strips to the wok. Stir fry until thoroughly heated. Serve over rice.
- Garnish with green onion strips.

- Marinate steak: In a large Ziploc bag, combine all steak and marinade ingredients. Seal bag and shake so meat is evenly coated. Put in the fridge to marinate for 1 hour to overnight.
- Bake fries: Preheat oven to 425 degrees. Spray two sheet pans generously with cooking spray. Divide potatoes between 2 pans. Drizzle 1 tablespoon olive oil over each pan. Season with salt and pepper. Toss potatoes so they get evenly coated with oil and seasoning. Lay out in a single layer on each pan. Bake for 10 minutes, then flip over and bake for 10-12 more minutes, until fries are browned and slightly crispy.
- While fries are baking, cook steak: Heat 1 tablespoon grapeseed or canola oil in a wok or large nonstick skillet over medium high heat. Remove steak from marinade and discard leftover marinade. Add steak to wok and cook, stirring occasionally, until browned, 5 to 8 minutes. Remove steak to a plate.
- Finish stir fry: Heat second tablespoon oil in the wok over medium high heat. Add onion and cook, stirring occasionally, until softened, 5 to 7 minutes. Add tomatoes and cook for 1 minute. Add beef back to the wok with tomatoes and onions. Add 1 tablespoon soy sauce, ½ tablespoon vinegar, and salt and pepper. Cook for 1 more minute.
