1 cup white sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch square pan.
  • In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.
  • Bake in preheated oven for 25 to 30 minutes. Do not overcook.
  • To Make Frosting: Combine 3 tablespoons softened butter, 3 tablespoons cocoa, honey, 1 teaspoon vanilla extract, and 1 cup confectioners' sugar. Stir until smooth. Frost brownies while they are still warm.

1/2 cup Melted Butter (Sweet Cream, Salted)
1 cup Semi Sweet Chocolate Chips (to melt)
1 cup Granulated Sugar
1/4 cup Brown Sugar (packed)

1 cup All-Purpose Flour
1/2 cup Unsweetened Cocoa Powder

Steps:

  • Melt the butter in the microwave. Add a cup of Chocolate Chips and stir until Chocolate Chips are combined with butter and completely melted. Set the chocolate aside to cool while you make the rest of the cookie dough.
  • Add the Granulated and Brown Sugar, Eggs and Vanilla to a mixing bowl and mix 2-3 minutes or until light and frothy.
  • Pour in the melted chocolate and mix until combined.
  • In a separate bowl, add the flour, cocoa powder and baking powder and mix until cocoa powder is completely mixed with the flour.
  • Add the flour and cocoa mixture to the cookie batter a bit at a time and mix until thoroughly combined.
  • Add Chocolate Chips to the cookie dough.
  • Chill the dough for one hour.
  • Roll the dough into a ball and place on a prepared cookie sheet.
  • Bake in a pre-heated 350 degree oven for 9-11 minutes or until the cookie is set around the edges.
  • Cool on a cooling rack.

1 ¼ teaspoons baking soda
1 ½ teaspoons baking powder
1 ¼ cups (284g) unsalted butter, (room temperature)
1 ½ teaspoons coarse salt
1 cup (200g) granulated sugar
1 ¼ cups (10 ounces or 225g) packed light brown sugar
2 large eggs, (room temperature)
2 teaspoons McCormick vanilla extract
16 ounces (about 3 cups) chocolate chips or chunks

Steps:

  • Sift flours, baking soda, baking powder and salt into a bowl and set aside.
  • Using a mixer with a paddle attachment, cream butter and sugars until light and fluffy, 3 to 5 minutes.
  • Reduce speed and add eggs one at a time, then add vanilla.
  • Slowly add dry ingredients, mixing until just combined.
  • Fold in chocolate chips by hand. Refrigerate dough for24-36 hours.
  • DO NOT SKIP REFRIGERATION.
  • When ready to bake, preheat oven to 350°F. Remove dough from refrigerator and allow to come to room temperature.

185g unsalted butter
185g best dark chocolate
85g plain flour
40g cocoa powder
50g white chocolate
50g milk chocolate
3 large eggs
275g golden caster sugar

Steps:

  • Cut 185g unsalted butter into small cubes and tip into a medium bowl. Break 185g dark chocolate into small pieces and drop into the bowl.
  • Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them.
  • Remove the bowl from the pan. Alternatively, cover the bowl loosely with cling film and put in the microwave for 2 minutes on High. Leave the melted mixture to cool to room temperature.
  • While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/160C fan/gas 4.
  • Using a shallow 20cm square tin, cut out a square of non-stick baking parchment to line the base. Tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl. Tap and shake the sieve so they run through together and you get rid of any lumps.
  • Chop 50g white chocolate and 50g milk chocolate into chunks on a board.
  • Break 3 large eggs into a large bowl and tip in 275g golden caster sugar. With an electric mixer on maximum speed, whisk the eggs and sugar. They will look thick and creamy, like a milk shake. This can take 3-8 minutes, depending on how powerful your mixer is. You'll know it's ready when the mixture becomes really pale and about double its original volume. Another check is to turn off the mixer, lift out the beaters and wiggle them from side to side. If the mixture that runs off the beaters leaves a trail on the surface of the mixture in the bowl for a second or two, you're there.
  • Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like.
  • Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly.
  • Gently fold in this powder using the same figure of eight action as before. The mixture will look dry and dusty at first, and a bit unpromising, but if you keep going very gently and patiently, it will end up looking gungy and fudgy. Stop just before you feel you should, as you don't want to overdo this mixing.
  • Finally, stir in the white and milk chocolate chunks until they're dotted throughout.
  • Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula. Gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it.
  • Put in the oven and set your timer for 25 mins. When the buzzer goes, open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it's not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven.
  • Leave the whole thing in the tin until completely cold, then, if you're using the brownie tin, lift up the protruding rim slightly and slide the uncut brownie out on its base. If you're using a normal tin, lift out the brownie with the foil. Cut into quarters, then cut each quarter into four squares and finally into triangles.
  • They'll keep in an airtight container for a good two weeks and in the freezer for up to a month.

8 ounces semi-sweet chocolate (I like Guittard semi sweet chips)
2 large eggs (room temperature)
3/4 cup + 2 tbsp granulated cane sugar
1/3 cup melted coconut oil (measured when melted, not solid)
1 tsp vanilla extract
1/3 cup gluten free all purpose flour (can sub regular AP flour if not GF)
1 tbsp corn starch
3 tbsp cocoa powder
1 tsp baking powder
1/4 tsp salt
1/2 cup chocolate chips
optional: 1/2 tsp espresso powder (helps create a really rich flavor)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper and set aside
  • Add the 8 ounces of chocolate (please note this is 8 ounces by weight, not volume! see notes if you don't have a kitchen scale) to a bowl and melt in 30 second intervals in the microwave, stirring between each interval until fully melted. Alternatively, add to a double boiler and melt on the stove.
  • Melt the coconut oil and measure out 1/3 cup. Set the chocolate and oil aside for now.
  • In a mixing bowl or bowl of a stand mixer, beat together the eggs and sugar for about 2 minutes with an electric mixer. The long mixing time is key for the shiny crackly tops! After 2 minutes, beat in the coconut oil, melted chocolate and vanilla.
  • Beat in the cocoa powder, corn starch, flour, baking powder and salt. Be sure to spoon and level the flour. If you're using the espresso powder, also add this in now. I usually don't use it, but if you want a really rich chocolate flavor, it will do just that! The batter will be like a thick brownie batter, but not thick like traditional cookie dough. This is what you want!
  • Fold in the chocolate chips. Spray a medium cookie scoop with oil (this will help with the scooping since the dough is a bit sticky) and quickly scoop the dough and add to the prepared baking sheet, leaving a bit of space in between for spreading. Add a few extra chocolate chips on top if desired. The sooner you can get the cookies in the oven, the better. If the batter sits for too long, the cookies won't get shiny/crackly.
  • Bake for 11-14 minutes, I usually do 12 in my oven. They will continue to firm up as they cool so you want them slightly soft when they come out of the oven.
  • Use a round cookie cutter to swivel around the cookie to create a perfectly round shape.
  • Let cool on the baking tray, then sprinkle with sea salt flakes and enjoy! It's important to let them cool completely, otherwise the center of the bottoms can stick to the parchment a bit, so try to wait a good 20-30 minutes if you can!

I'm not exaggerating when I say that this is absolutely the BEST brownie recipe of my life. I spend a lot of time baking (and eating!) and I've never had another brownie like this one. It is the ultimate in rich, fudgy, chocolatey flavor, all thanks to the magic of browned butter. Regular brownies just can't compete with this depth of flavor.

1 & 1/4 cups salted butter
4 ounces unsweetened baking chocolate (*broken up)
2 & 1/2 cups granulated sugar
1/2 teaspoon salt
1 tablespoon water (**)
2 teaspoons vanilla extract
4 large eggs
1 cup all purpose flour
1 & 1/4 cups semi-sweet chocolate chips (high quality)

Steps:

  • Preheat your oven to 350 degrees. Line a 9x13 inch baking pan with parchment paper. You can also line it with aluminum foil (be sure to spray the foil with nonstick spray). Or you can just spray the pan.
  • In a medium pot (I use a 3 quart saucepan), melt 1 and 1/4 cups of butter over medium heat. Yes, 1 and 1/4 cup. I called these the best brownies of all time, not healthy brownies!
  • Stir the butter occasionally. See photos for how to brown butter. It will turn white on top, then it will foam up. Once it is foamy, it will start forming brown colored milk solids or "bits". They will swirl up when you stir. The scent of the butter will change to a "nutty" or toffee like aroma. Once you see brown bits, remove the pan from the heat. Do not stop cooking the butter until it is completely browned, see note.
  • Immediately add 4 ounces of unsweetened baking chocolate. Break it up into pieces so that they melt faster. Stir until it is melted all the way.
  • Add 2 and 1/2 cups sugar and stir it together. If there are still bits of chocolate that have not melted, put it back on the burner on low until it is smooth.
  • Add 1/2 teaspoon salt, 1 tablespoon water, and 2 teaspoons vanilla. Stir it together.
  • Whisking vigorously so they don't curdle in the hot batter, stir in the eggs one at a time, making sure each egg is fully incorporated before adding the next one. I highly recommend an actual whisk for this step; a wooden spoon won't break up the egg whites as well.
  • Add 1 cup all-purpose flour, spooned and leveled. That means take a large spoon and add flour to your measuring cup, then level off the top with something flat like a butter knife. Stir in the flour with a wooden spoon until just barely incorporated.
  • Do not over mix. Over-mixed batter makes for a tough brownie, which is not what we're going for. You want soft, tender brownies! Once you don't see any more flour streaks, stop messing with it.
  • Scrape the batter into the prepared pan and spread to the edges.
  • Sprinkle 1 and 1/4 cups chocolate chips evenly over the batter. Use your spatula to gently fold it in. If you add the chocolate chips to the batter before pouring it into the pan, they tend to melt and swirl on you. Which might be okay with you. I prefer my chocolate to stay in chip form so that when you bite into a brownie you get tiny little pools of chocolate. Mmm.
  • Bake at 350 for about 25-30 minutes. The edges should be set. The center of the pan should not wobble when you shake it. I always do the toothpick test: poke a toothpick in the center of the brownies and if there is no wet batter sticking to it, it's done. (If there is, leave it in for a couple more minutes) Be sure to poke a couple times so that you know you're not poking into a melted chocolate chip. Every oven is different, so you are going to have to use your best judgment here on the bake time! Do NOT over bake, or the brownies will be too dry. In my opinion, slightly under baked is better than over baked. Keep in mind that the brownies will firm up as they cool.
  • When the brownies are done, remove from the oven and let cool as long as you can before giving in and trying a piece. If you need them to look nice, you need to let them set up in the pan for at LEAST 15-30 minutes.
  • To cut these into nice looking squares, once the brownies have cooled, lift the parchment paper or foil out of the pan. Cut with a sharp knife, wiping the knife on a clean wet towel in between slices.
  • These are almost impossible to eat without a glass of milk.

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Prepare baking sheets by lining with parchment paper.
  • 3. Optional: Mix together Cocoa and powdered sugar, set aside until needed to coat the cookies.
  • 4. Cream together the butter and sugar. Add the cinnamon, cocoa, chocolate syrup, corn syrup, vanilla and salt. Add beaten eggs.
  • 5. Stir in the flour. Stir in nuts and mini chocolate chips (both are optional).
  • 6. Using a tablespoon, place 1 heaping spoonful of dough onto parchment lined baking sheets. Spaced about three inches apart.
  • 7. Bake for 10 to 12 minutes (don't over bake, the cookies continue cooking after being removed from oven). Allow cookies to cool enough to handle them.
  • 8. OPTIONAL: Coat each cookie in Cocoa and powdered sugar mixture. Can just use powdered sugar too.
  • 9. Can just frost cookies.

Stir until you no longer see streaks of flour. Then beat vigorously (put those arm muscles to work!) for 50 strokes with the wooden spoon or spatula.
