This dip has all the best ingredients I've found from various other recipes and it's my favorite by far! Serve as a dip at a party or with sour cream and jalapenos to make nachos and use it as a main course!

½ pound bulk spicy pork sausage
½ pound ground beef
1 onion, diced
1 (2 pound) loaf processed cheese food (such as Velveeta®), cubed
1 (28 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add the onion. Cook and stir the beef mixture until the meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Pour into a slow cooker.
  • Layer cheese food cubes atop meat mixture.
  • Blend diced tomatoes with green chile peppers in a blender until smooth; pour over the cheese cubes along with the cream of mushroom soup. Stir the mixture.
  • Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

1 pound assorted cheese scraps (trimmed of rinds, peels and funky bits), such as Cheddar, Gouda, Parmesan, fontina, goat or Gorgonzola/Stilton/Roquefort
1/2 cup dry white wine
1/4 cup cream cheese
4 tablespoons (1/2 stick) salted butter, at room temperature
Pinch kosher salt
Pinch freshly ground black pepper
1 clove garlic, minced
2 tablespoons minced fresh parsley, plus more for garnish

Steps:

  • Grate the hard cheeses and add to a food processor along with any soft cheese, the wine, cream cheese, butter, salt, pepper and garlic and process until smooth. Add the parsley and pulse.
  • Scrape into a serving dish. Serve immediately with a garnish of parsley or cover and store in the refrigerator for up to a week.

4 slices bacon
1 (8 ounce) package cream cheese with chives and onions, softened
1 cup mayonnaise
8 ounces swiss cheese
2 green onions, finely chopped
fresh coarse ground black pepper, to taste (optional)
1/4 teaspoon garlic powder
4 round buttery crackers, crushed

Steps:

  • Place bacon in a large skillet.
  • Cook over medium-high heat until evenly brown.
  • Drain, crumble and set aside.
  • In a small bowl, mix the cream cheese with mayonnaise until smooth.
  • Stir in Swiss cheese, onions, bacon & garlic powder.
  • Place bowl in microwave, and cook for 2 minutes.
  • Remove and stir well.
  • Return to microwave, and cook 2-4 minutes longer.
  • Sprinkle crushed crackers on top.
  • Serve warm and enjoy!

1 (16 ounce) container sour cream
1 (15 ounce) can hormel chili (no beans)

Steps:

  • In a microwave safe bowl mix sour cream and chili together,.
  • then cut up and add both cheeses to the mixture.
  • Place in Microwave on high for about 15 min.
  • ,stirring every 5 minute until all cheese is completely melted.
  • This is best servered warm with white corn tortilla chips.
