CREAMY RICE PUDDING
This is my mom's recipe for Rice Pudding. It's the best I've ever tasted and it gets rave reviews from everyone I serve it to. Sprinkle with nutmeg or cinnamon, if desired. For creamier pudding, use short or medium grain rice.

Steps:
- Bring 1 1/2 cups water to a boil in a saucepan; stir rice into boiling water. Reduce heat to low, cover, and simmer for 20 minutes.
- In a clean saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes. Stir in remaining 1/2 cup milk, beaten egg, and raisins; cook 2 minutes more, stirring constantly. Remove from heat and stir in butter and vanilla.

- Combine the milk, rice, and salt in a large stockpot and bring to a boil over medium heat;
- Boil for 20 minutes stirring occasionally to prevent sticking and make sure the milk doesn't burn;
- While the rice is cooking, beat an egg with the brown sugar;
- Temper the egg mixture with 1/4-1/2 rice mixture, then add it into the stockpot and stir well to combine with the rest of the rice mixture;
- Add in the vanilla, cinnamon, nutmeg, orange zest, and raisins and stir to combine;
- Let sit to thicken if needed, then serve in a bowl with a dusting of cinnamon or a cinnamon stick to garnish.

- In a large saucepan, bring rice, sugar, salt, and 4 1/2 cups milk to a boil over medium-high. Reduce heat, cover, and simmer 25 minutes. Uncover and cook, stirring constantly, until rice is tender and pudding is creamy, 5 minutes. Stir in vanilla and remaining 1/4 cup milk.

Steps:
- Bring rice, water and salt to a boil over med-high heat.
- Simmer covered until water has been absorbed (approximately 15 minutes).
- Stir in milk and sugar and cook uncovered over medium heat for 30-40 minutes, stirring frequently--especially towards the end of cooking.
- The pudding is done when the rice and milk have amalgamated into a thick porridge-like consistency.
- DO NOT OVERCOOK or the pudding will be solid instead of creamy once cooled.
- Remove from heat and stir in vanilla.
- Turn into a bowl or cups.
- You can sprinkle cinnamon on the top if you like.
- COVER with plastic wrap directly on surface "IF" you don't want a skin.
- COOL.

Reduce heat to medium-low; simmer 6 minutes, stirring occasionally., Beat egg and vanilla lightly in a small bowl. Stir small amount of hot mixture into eggs. Stirring constantly, slowly pour egg mixture back into hot mixture. Stirring constantly, cook on low heat 1 minute until thickened. DO NOT BOIL., Remove from heat. Let stand 30 minutes. Serve warm. Sprinkle with cinnamon, if desired. Store any remaining pudding (good luck) in refrigerator.

- In a large, heavy saucepan, combine rice, milk, sugar and salt. Bring just to a boil, stirring often.

- Beat eggs and salt a little, add sugar then milk with splash of vanilla essence (optional). Put rice or sago in a buttered dish, pour over the egg mixture and sprinkle with a pinch of nutmeg (optional). Set in a dish of water and bake slowly in the oven at 160 c (325F) until custard sets.
- Extra Info: The milk in New Zealand is not watered down, still has cream in it, making it a creamy rice pudding. If not in NZ or Australia, then you can use Half and Half. I also add sultanas (raisins) to this recipe on occasion, which I cook to plump, with the rice beforehand. Sometimes I dot the top of the rice pudding with knobs of butter in order to get a brown skin.
WORLDS BEST SOUTHERN RICE PUDDING
This makes old fashioned southern rice pudding into something decadent. When I make this, I sometimes serve it with a strawberry or raspberry sauce...helps to cut the richness while at the same time adding those calories we all need so much :p I sometimes double this & in my household of 7, it lasts one full day tops. The Southern U.S. grows and eats a LOT of rice and recipes like this are much loved down here.

- In medium saucepan over medium heat, heat milk and salt to boiling.
- Stir in rice; reduce heat.
- Simmer about 5 minutes, stirring constantly.
- Cover; cook about 45 minutes or until milk is almost absorbed and rice is tender and creamy, stirring occasionally.
- Add vanilla, almond extract and sugar, stirring until sugar dissolves.
- Pour into large bowl; cover.
- Refrigerate until chilled, about two hours.
- Fold in whipped cream.
- Cover; refrigerate until ready to serve.
- If serving with a sauce, spoon a little bit of the sauce into your serving dishes and layer it with tthe pudding.
- Doing that makes for a pretty visual effect to go along with the wonderful taste.
