Cheeseburger Macaroni is a creamy, flavorful copycat recipe of Homemade Hamburger Helper that's all-natural and made from scratch!

1 pound extra-lean ground beef
2 cloves garlic (minced)
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sugar
1/2 teaspoon salt
Freshly ground black pepper
1 (14.5-ounce) can diced tomatoes (with juices)
2 cups beef broth
1 cup elbow macaroni
2 tablespoons butter
2 1/2 tablespoons all-purpose flour
1 1/2 cups milk (at room temperature)
8 ounces (2 cups) sharp cheddar (freshly grated)
1/4 teaspoon garlic salt

Steps:

  • In a large skillet set over medium heat, brown ground beef and garlic; drain grease. Stir in paprika, chili powder, garlic powder, onion powder, sugar, salt, and pepper. Mix in diced tomatoes, beef broth, and macaroni; heat to boiling. Reduce heat to a simmer and cover pan. Simmer for 12 to 14 minutes, stirring occasionally, or until pasta is tender.
  • While the beef/macaroni mixture is cooking, prepare the cheese sauce by placing a medium pot over medium heat. Melt butter. Use a whisk to stir in flour, whisking continuously until light golden brown, about 2 minutes. Continue to whisk while slowly and gradually adding milk. Whisk until sauce is smooth and thickened, between 5 to 10 minutes. Remove pot from heat. Add grated cheese, 1/2 cup at a time, stirring until completely melted and smooth before adding more. Once all cheese has been incorporated and the cheese sauce is smooth, stir in garlic salt and freshly ground black pepper, to taste.
  • Once the macaroni is done, pour the cheese sauce over the ground beef mixture and stir to combine. Serve immediately.

1 tablespoon avocado oil
1 small onion (,finely chopped)
3 tablespoons tomato paste
1 1/2 teaspoons sweet paprika
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon sugar
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
2 tablespoon all-purpose flour ((Gluten Free: dissolve 1 tablespoon cornstarch in the beef broth))
2 cups whole milk
1 3/4 cup natural non-MSG beef broth
2 cups dried whole wheat elbow macaroni pasta
(Gluten Free: Use GF Macaroni)
2 cups shredded Cheddar cheese

Steps:

  • Heat the oil in a large skillet over medium-high heat and brown the ground beef until no pink remains. Add the onions and cook until softened, about 5 minutes. Stir in the tomato paste, seasonings and flour. Pour in the milk and broth and stir. Stir in the macaroni.
  • Bring to a boil then reduce to medium-low, cover and simmer for 10-12 minutes or until the macaroni is done. For al dente check after 9 minutes.
  • Stir in the Cheddar cheese until melted.
  • Serve immediately garnished with some chopped fresh parsley if desired.

We like Hamburger Helper but we don't like the MSG or other icky ingredients! You can prepare "sauce packets" ahead of time to save time. Increase/alter seasonings and/or cheese to suit your tastes!

1 lb 92% lean ground beef (or your preferred type)
1 cup hot water
2 cups milk
1 1/2 cups elbow macaroni
1 cup cheddar cheese (shredded, plus more for topping, if desired)
1 tablespoon cornstarch
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Brown ground beef in a large skillet. Drain.
  • Add hot water, milk, pasta and "sauce packet" ingredients.
  • Bring to a boil, cover, reduce heat and simmer 12 minutes or until pasta is tender.
  • In the last few minutes of cook time, add cheese, stir and re-cover.
  • When pasta is tender and cheese is melted, remove heat and uncover.
  • Let stand about 5 minutes. Sauce will thicken as it stands.
  • Top with additional cheese if you like.

This homemade version of Hamburger Helper cheeseburger macaroni is so easy to make, and even your pickiest eaters will be excited for this dinner.

1 lb Ground Beef
½ cup Chopped Onion
2 tbsp Minced Garlic
2 cups Beef Broth
3 cups Uncooked Elbow Noodles
8 oz Cream Cheese
2 cups Shredded Cheddar Cheese
Salt and Pepper, to taste

Steps:

  • Brown the ground beef in a large skillet over medium-high heat, about 5 minutes.
  • When the beef is almost finished cooking (very little pink remains), add the onion and continue to stir.
  • When the onion is translucent, add the garlic and stir, continuing to cook for about 2 minutes.
  • Add the beef broth and bring to a boil.
  • When the broth is boiling, add the elbow noodles and stir to cover. Bring to a boil and continue to simmer for 7 minutes or until the noodles are tender.
  • Add cream cheese and stir until well combined.
  • Add shredded cheddar cheese and stir to combine, melting the cheese completely.
  • Salt and pepper to taste and enjoy!
