4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
6 tablespoons unsalted butter, softened
1 1/2 cups packed light brown sugar
3/4 cup granulated sugar
3 teaspoons pure vanilla extract
2 large eggs, plus 2 egg yolks
3/4 cup heavy cream
3 cups semisweet chocolate chips
40 ounces (5 packages) cream cheese, room temperature
1/2 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl. Put butter and brown and granulated sugars into mixer bowl; mix on medium until pale and fluffy. Mix in vanilla, eggs, and yolks. Reduce speed to low. Add flour mixture in 2 batches, alternating with the cream. Stir in chocolate chips.
  • For each of the 5 layers, drop 1 level cup batter onto center of a baking sheet lined with parchment (keep unbaked dough refrigerated). Using a small offset spatula, spread into an 8-inch circle. Bake until edges are pale golden brown, about 12 minutes. Remove from oven. Use offset spatula to reshape circle. Return to oven; bake until edges are golden brown, 8 to 10 minutes more. Transfer to wire rack; let cool. Can be stored airtight up to 1 day.
  • Mix cream cheese and confectioners' sugar in clean mixer bowl on medium-high speed until pale and fluffy. Spread onto 4 cookies. Stack cookies, placing unfrosted cookie on top. Refrigerate until frosting is set, at least 20 minutes or up to 4 hours. Serve at room temperature.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10-inch springform pan with cooking spray.
  • Mix flour and baking soda together in a bowl.
  • Beat butter, brown sugar, pudding mix, white sugar, and vanilla extract together in a large bowl with an electric mixer. Beat in eggs. Stir in flour mixture gradually. Fold chocolate chips and walnuts into the batter.
  • Pour batter into the springform pan.

Steps:

  • Preheat the oven to 375 degrees F. Line a 14-inch, light colored, round pizza pan with parchment paper and grease the parchment paper.
  • In a large bowl, cream the butter and sugars. Add the eggs, beating well after the addition of each.
  • In a bowl, combine the flour, baking soda, and salt and mix with a whisk. Add to the butter mixture, mixing to incorporate, and add the vanilla extract. Fold in the dark and white chips and the nuts. 1 cup almond flour
1 cup hazelnut flour
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 teaspoon kosher salt
1/4 teaspoon baking soda
1 tablespoon vanilla extract
1/2 teaspoon almond extract
1 large egg
1/2 cup chocolate chips
3 cups powdered sugar
1 cup (2 sticks) unsalted butter, at room temperature
1 teaspoon vanilla extract

Steps:

  • For the cookie cake: Preheat the oven to 350 degrees F. Grease an 8-inch cake pan with nonstick cooking spray and line it with parchment. Set aside.
  • In a large bowl, combine the almond and hazelnut flours, brown and granulated sugars, salt and baking soda. In a small bowl, combine the vanilla and almond extracts and egg. 2/3 cup unsweetened dark cocoa powder
2 teaspoons baking soda
2 teaspoons fine salt
3 sticks (24 tablespoons) unsalted butter, at room temperature
3 cups packed dark brown sugar
4 large eggs
2 teaspoons pure vanilla extract
3 cups semisweet chocolate chips
1/2 cup honey-roasted peanuts, chopped
2 sticks (16 tablespoons) unsalted butter, at room temperature
1 cup smooth peanut butter
2 cups confectioners' sugar
4 ounces semisweet chocolate, finely chopped
1/3 cup heavy cream
1 tablespoon unsalted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • For the cookies: Whisk together the flour, cocoa powder, baking soda and salt in a large bowl. Beat the butter and brown sugar with an electric mixer on medium-high speed in a second large bowl until light and fluffy, about 6 minutes. Add the eggs to the butter mixture, one at a time, beating after each addition to incorporate; beat in the vanilla. Reduce the speed to medium, add the flour mixture, and beat until just incorporated. Fold in the chocolate chips by hand.
  • Roll the dough into 6 balls (about 1 1/2 cups each). Divide 4 of the balls between 2 rimmed baking sheets (2 balls per sheet). Flatten them into 6-inch circles using your hands; make sure the circles are 2 inches apart. Bake until just set, 12 to 14 minutes. Let cool on the baking sheet for 10 minutes, then transfer to a rack to cool completely. Repeat with the remaining 2 balls of dough.
  • For the frosting: Meanwhile, beat the butter and peanut butter with an electric mixer on medium speed in a large bowl until light and fluffy. Slowly add the confectioners' sugar about 1/2 cup at a time, beating between additions, until incorporated.
  • Assemble the cake: Place a cookie on a cake stand or serving plate and spread the top with some frosting. Top with another cookie and more frosting; repeat with the remaining cookies and frosting, making sure the frosting on the top layer is spread smooth.
  • For the ganache: Put the chocolate in a medium bowl. Bring the cream and butter to a boil in a small saucepan over medium heat. Pour over the chocolate and let stand for 5 minutes; stir until melted and smooth.
  • Pour the ganache over the top of the cake, smoothing the top with a small offset spatula and letting it drip over the sides. Decorate the rim of the cake with the peanuts. Let stand at room temperature until the chocolate hardens, about 10 minutes.

2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
6 tablespoons butter, softened slightly
2 tablespoons vegetable shortening
1/2 cup light brown sugar
6 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Spray a 15 inch flat pizza pan or 10 inch springform pan with pan spray to prevent sticking.
  • Mix flour, soda and salt, set aside.
  • Beat butter and shortening in a large bowl with a mixer on medium speed to just combine.
  • mix in sugars; beat with electric mixer until mixture is smooth. Mix in egg and vanilla on low speed until blended thoroughly.
  • Add flour mixture, mixing just until incorporated.
  • Mix in chocolate chips, stir by hand.
  • Using fingers, spread dougn into a 10 inch circle on the pizza or springform pan. Smooth edges.
  • If using the pizza pan, bake cookie about 14 minutes, until edges are light brown and center is golden.
  • If using the springform pan, bake for about 18 minutes, until evenly light brown. Loosen the edge of the cookie from the pan, cool thoroughly. Remove sides of springform pan.
  • Optional: Put spoonfuls of peanut butter on top of the cookie as it's cooling; allow it to 'melt' slightly and then spread around. Sprinkle with chocolate chips, allow those to melt and spread around.

200g light soft brown sugar
1 egg , plus 1 yolk
2 tsp vanilla extract
250g self-raising flour
2 tsp cornflour
2 tsp baking powder
100g milk chocolate chips
50g white chocolate chips
vanilla ice cream , to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6 and grease a 22cm springform cake tin. Beat the butter and sugar in a large bowl until pale and fluffy, then mix in the egg, extra yolk and vanilla extract.
  • Combine the flour, cornflour and baking powder, then fold into the butter mixture until fully incorporated - it will be quite thick. Add the chocolate chips and mix until evenly distributed.
