OLD FASHIONED TEA CAKES



Old Fashioned Tea Cakes image

These Old Fashioned Tea Cakes are simply irresistible.

4-5 cups self-rising flour
2 cups granulated sugar
¼ tsp salt
2 eggs
½ cup oil
½ cup milk
1 tsp vanilla flavoring
1 tsp lemon flavoring

Steps:

  • Preheat oven to 450° Fahrenheit.
  • Place flour, sugar and salt in a large mixing bowl.
  • Make a well in the center and add remaining ingredients. Mix until all ingredients are thoroughly combined. The dough will be stiff.
  • Place on lightly floured surface and knead. Roll out and cut using a cup.
  • Place on baking stone and bake for 7-9 minutes or until lightly browned.
  • Cool and enjoy.

A soft teacake that is best when one to two days old. You can change flavors by substituting almond or lemon extract for the vanilla. Add a few drop of food coloring to dress up the dough for special occasions.

1 cup butter
1 ¾ cups white sugar
2 eggs
3 cups all-purpose flour
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
1 teaspoon vanilla extract

Steps:

  • In a medium bowl, cream together the butter and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Combine the flour, baking soda, salt and nutmeg; stir into the creamed mixture. Knead dough for a few turnns on a floured board until smooth. Cover and refrigerate until firm.
  • Preheat the oven to 325 degrees F (165 degrees C). On a lightly floured surface, roll the dough out to 1/4 inch in thickness. Cut into desired shapes with cookie cutters. Place cookies 1 1/2 inches apart onto cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

½ cup butter
1 cup white sugar
2 egg
2 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon ground nutmeg
1 tablespoon milk

Steps:

  • In a medium bowl, cream the butter and sugar together. Stir in eggs, and beat well. Sift together the flour, baking powder and nutmeg. Add dry ingredients to the creamed mixture alternately with the milk. Divide dough in half. Cover and chill for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  • On a lightly floured surface, roll out the dough to 1/4 inch thickness. Cut with cookie cutters and place onto the prepared cookie sheets. Bake for 8 minutes in the preheated oven, cookies should brown slightly.

Steps:

  • In medium bowl stir together eggs, sugar, oil and vanilla.
  • Gradually add flour.
  • Drop by rounded teaspoonful onto lightly sprayed cookie sheet.
  • Bake 8-10 minutes @ 400*.
  • Hint: Cookies can be made thicker or thinner by adding more flour or decreasing it. I like my cookies soft , so I only bake my cookies for 8 minutes. If you like crispy cookies bake them for the whole ten minutes.

I found this on the Council of Elrond, a wonderful site if you're looking for LOTR recipes. It was submitted by Morlothwen, and she says, "Tea-time in the Shire wouldn't be the same without them!" I haven't tried them yet, but they sound so good!

1 cup butter or 1 cup margarine, softened
2 cups sugar
3 large eggs
2 tablespoons buttermilk
1 1/2 teaspoons vanilla extract
5 cups all-purpose flour
1 teaspoon baking soda
2 tablespoons sugar

Steps:

  • Beat butter until creamy with electric mixer at a medium speed.
  • Slowly add 2 cups sugar, beating well. Beat in eggs, buttermilk, and vanilla.
  • Mix flour and baking soda together, then slowly beat in to butter mixture.
  • Cover and chill for at least 8 hours.
  • Roll dough to 1/4-inch thickness on a lightly floured surface. Cut with a 3 1/2-inch round cookie cutter and place cakes 1 inch apart on lightly greased cookie sheets, then sprinkle with 2 tablespoons sugar.
  • Bake at 400 degrees for 7 to 8 minutes or until edges become slightly browned. Remove to wire racks to cool.
