UNCLE BILL'S HAMBURGER PATTIES



Uncle Bill's Hamburger Patties image

I cooked these patties for a Fund Raiser and served over 260 persons, both young and mature. They were a tremendously big hit with all.

2 lbs lean ground beef
2 large eggs, beaten
1/2 cup finely chopped onion
1/2 cup crushed soda crackers or 1/2 cup fine dry breadcrumb
3/4 teaspoon granulated garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons hickory barbecue sauce
6 tablespoons olive oil (for frying)

Steps:

  • In a large mixing bowl, mix together ground round, beaten eggs, onions, soda crackers, garlic powder, salt, pepper and barbecue sauce. Mix until well incorporated.
  • Weigh out hamburger patties to 6 - 7 ounce each.
  • Press together and flatten to about 3 1/2" in diameter or use a mold.
  • The patties should be about 3/4" thick.
  • Using a round wooden spoon handle (about 1/4" round), make a hole in the center of the hamburger pattie.
  • In a frying pan over medium-high heat, heat olive oil.
  • Place 3 patties into the hot oil and fry for about 2 to 3 minutes, the hole will begin to close.
  • Turn patty over and continue to fry for about 2 to 3 minutes.
  • The hole that was made in the pattie will fill in when the hamburger is cooked through properly.
  • Check for doneness to make sure there is no pink showing.
  • NOTE: If the burger mixture does not hold together when squeezed, add some milk and mix to blend.
  • Serve in a nice large bun that is warmed and buttered with a spread of mayonnaise, Dijon mustard, a slice of sweet onion, a slice of a large tomato, and a leaf of lettuce.
  • A slice of Swiss cheese layered on the burger patty is great.
  • A pickle of your choice adds an additional touch.
  • Fry some mushrooms and spread some over the top of the bun.
  • Fried caramalized onions are a good added touch.
  • This makes a fantastic hamburger.

1 (5 ounce) halibut fillets
1 slice cheddar cheese
1 ounce thinly sliced bell pepper, sauteed
1 ounce thinly sliced white onion, sauteed
1 hamburger bun
3/4 ounce thick salsa, drained of excess juice
lettuce
thinly sliced tomatoes
3/4 cup mayonnaise
3 tablespoons chopped sweet pickle relish
1 tablespoon dried parsley (or 2 tablespoons chopped fresh parsley)
2 tablespoons finely chopped onions
2 teaspoons horseradish

Steps:

  • To make the tartar sauce: add all the ingredients to a bowl and stir well to combine.
  • Cover and chill in the refrigerator until ready to serve.
  • Prepare grill by preheating it and brushing it lightly with olive oil.
  • May season fillet with a little salt and pepper, if desired.
  • Grill the fillet for about 2 1/2 minutes per side or until it just flakes easily with a fork.
  • While the fillet is grilling, top it with the cheedar cheese slice, bell pepper, and onion.
  • The cheese should be melted by the time the fish is done (if not, cover grill and cook a minute longer).
  • Place the grilled halibut on the bottom half of the bun; top it with salsa, lettuce, and tomato.
  • Spread the top half of the bun with tartar sauce and place atop the burger.

  • Preheat a grill to medium high. Form ground beef (preferably chuck) into 6-ounce patties and make an indentation in each. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. For cheeseburgers, top with 2 slices cheese during the last minute of cooking; cover the grill to melt.

2 teaspoons reduced-sodium soy sauce
2 teaspoons Worcestershire sauce
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 tablespoon butter
1/2 cup sliced green olives with pimientos, drained
1/4 cup Miracle Whip
1 tablespoon stone-ground mustard
4 hamburger buns, toasted
1/4 cup crumbled feta cheese, optional
Bibb lettuce leaves, optional

Steps:

  • In a large bowl, combine beef, soy sauce, Worcestershire, garlic powder and onion powder, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties, indenting the center slightly., Melt butter in a large nonstick skillet; cook burgers over medium heat until a thermometer reads 160°, 4-6 minutes on each side., Meanwhile, in a small bowl combine olives, Miracle Whip and mustard. Serve burgers on buns with olive mixture. If desired, top with feta cheese and lettuce.
