Birthday Cake Cinnamon Rolls image

Light and fluffy rolls filled with a gooey birthday cake filling, and topped with smooth vanilla icing and sprinkles. These Birthday Cake Cinnamon Rolls are the perfect touch to a special birthday breakfast.

2 TBS. dry yeast
1 1/4 cup water (divided)
1/2 cup sugar
1/2 cup butter
2 teaspoon salt
3 beaten eggs
4 1/2 cups flour
1/2 cup butter (softened)
1 cup brown sugar
2/3 cup funfetti cake mix
3 tbsp sprinkles
2 tbsp butter (softened)
1.5 cups powdered sugar
1 teaspoon vanilla extract
1/4 cup heavy whipping cream

Steps:

  • Dissolve yeast in 1/4 cup warm (room-temperature) water. (*I like to add a TBS. or so of sugar to boost it's activating power).
  • Heat 1/2 cup water in a small pan. Add butter, sugar and salt until butter melts. Add 1/2 cup cold water. Let sit until it cools to about room temperature (if it's too hot it will kill the yeast or curdle the eggs).
  • Beat eggs in mixer. Add yeast and butter/sugar/salt mixture. Add flour, one to two cups at a time, beating until smooth after each addition. Dough will be very soft.
  • Let rise until double - it usually takes about an hour. Stir down. Cover with a wet tea towel (or damp cloth) and put in refrigerator. The longer left in the refrigerator, the easier it is to handle. 2 hours up to overnight will do the trick.
  • Roll out on floured board into a large rectangle.
  • Brush with melted butter.
  • Spread filling over the entire rectangle.
  • Moisten dough edges with a little water (dip finger in water and rub around outside edges) so dough will cling to itself. Carefully roll up, lengthwise. Cut into 1/2-1" discs using a piece of dental floss (slip floss under roll; bring ends up to top and cross floss, pull floss, cutting dough as you pull to cross. Move to next area you want to cut. This method keeps the discs round and prevents flattening the roll.)
  • Place on a greased baking sheet or dish about 1/2 inch apart.
  • Cover with a towel and let rise until double (about an hour).
  • Bake 400 degrees for 12-15 min. or until lightly or golden brown.
  • Ice while still slightly warm.
  • Store in an airtight container.

6 ounces cream cheese, softened
3/4 cup white cake mix
4 tablespoons unsalted butter, melted
kosher salt
red orange, yellow, green, blue, and purple food coloring
1 lb bread dough, defrosted
all-purpose flour, for rolling dough
2 cups powdered sugar
3 tablespoons milk, plus more if necessary
1/2 teaspoon vanilla extract
rainbow colored sprinkles, for serving

Steps:

  • Preheat oven to 350 degrees. Grease an 8" x 8" square cake pan.
  • In a medium bowl, combine cream cheese, cake mix, melted butter, and a pinch of salt. Mix until smooth. Divide into 6 small bowls and tint each one with a different color.
  • Place bread dough on a lightly floured work surface. Using a rolling pin, shape the dough into a rectangle, ⅛-inch thick and 13" x 10".
  • Spread each rainbow filling across dough in separate stripes, length-wise, getting as close to the edges as possible. Starting with the long, red side of the rectangle, roll the dough up into a log.
  • Use a sharp knife or serrated bread knife to carefully slice the log into 9 equal portions. Transfer to prepared cake pan, placing rolls cut side up, 3-by-3. Transfer to oven and bake until golden and puffed, about 30 minutes. Let cool 10 minutes.
  • Meanwhile, make glaze. Add confectioners' sugar, milk, and vanilla to a large bowl. Whisk to combine, adding more milk if necessary to reach a consistency that is thick but pourable.
  • Drizzle glaze immediately on cooled birthday cake rolls and top with rainbow sprinkles. Serve warm.

1 1/4 cups warm water (105°F to 115°F)
1 package (2 1/4 teaspoons) regular active dry yeast
1 box Betty Crocker™ Super Moist™ rainbow chip cake mix
2 1/2 to 3 cups Gold Medal™ all-purpose flour
1/4 cup of butter, melted
1 teaspoon ground cinnamon
1/2 cup light or dark brown sugar
2 tablespoons rainbow candy sprinkles
1 container Betty Crocker™ Rich & Creamy Frosting Cream Cheese
Additional rainbow candy sprinkles

Steps:

  • Grease 13x9-inch pan or 2 (9-inch) round cake pans with shortening or cooking spray.
  • In small bowl, mix warm water and yeast; let stand 5 minutes.
  • In large bowl, mix cake mix and 2 cups of the flour. Add water-yeast mixture; stir with wooden spoon until dough forms. Add remaining flour 1/4 cup at a time, stirring between each addition, until it comes together in a ball. You may not need all of the flour. Cover with plastic wrap, and let rise in warm place until doubled, about 1 hour.
  • Gently punch down dough, and then reshape into ball. On lightly floured surface, roll dough into large rectangle about 1/4 inch thick. Brush with melted butter; sprinkle with cinnamon, brown sugar and rainbow sprinkles. Starting with 1 long end, tightly roll up dough into a log. Cut into 12 rolls.
  • Place rolls in pan(s); cover with plastic wrap. Let rise about 30 minutes while you heat oven to 375°F.
  • Bake 20-22 minutes for a 13x9-inch pan and 12-15 minutes for 9-inch round pans or until golden brown. Cool 5 minutes; spread with frosting. Sprinkle with additional sprinkles. Serve warm or at room temperature.
