I got this recipe from an older lady who sold chutney and jam's at a local bake sale stall. I haven't made it yet, but I will! I am keeping it here for safe keeping.

1 1/2 kg apples
1 1/2 kg onions
1 1/2 kg ripe tomatoes
850 ml white distilled vinegar
3 tablespoons salt
1 1/2 tablespoons black pepper (not freshly ground)
1 7/8 kg white sugar

Steps:

  • Finely chopped the peeled and cored apples and the onions (food processor would work well, but don't over whizz it and make a sauce).
  • Peel and slice the tomatoes and place in a large pan with all the other ingredients.
  • Boil for about 2 hours and stir occasionally. Place into sterilised bottles and seal.
  • Chutney keeps for 12 months and once opened, keep in the fridge.

4 baking apples (like Spy or Golden Delicious)
1/4 cup diced candied ginger or 1/4 cup diced dried apricot
1/4 cup brown sugar or 1/4 cup maple sugar
1/2 teaspoon cinnamon
1 tablespoon cold butter, cut into 4
1/4 cup maple syrup or 1/4 cup honey
1/4 cup apple juice or 1/4 cup water

Steps:

  • Remove the core of the apples with an apple corer or small knife, leaving about 1/2" at the base.
  • Peel the top one third with a vegetable peeler or sharp knife.
  • Place apples in an 8" square baking dish or in another ovenproof pan that holds them snugly.
  • Place 1 tbsp.
  • raisins in each apple.
  • In a small bowl combine brown sugar with cinnamon and add 1 tbsp mixture to each apple.
  • Place 1 small piece of butter in each apple.
  • Combine syrup with apple juice in a small bowl and pour over and around apples.
  • Bake in a preheated 350F oven for 45-55 minutes or until apples are very tender.
  • Baste a few times during baking.

6 medium Granny Smith apples - peeled, cored and sliced
½ cup white sugar
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 cup brown sugar
1 cup all-purpose flour
1 cup quick-cooking oats
½ cup unsalted butter, diced
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch baking dish.
  • Combine apples, sugar, cinnamon, and nutmeg for filling in a bowl; transfer to the prepared baking dish.
  • Combine brown sugar, flour, oats, butter, and cinnamon for topping in a large bowl. Sprinkle on top of filling.
  • Bake in the preheated oven until golden and bubbly, about 1 hour.

4 medium red apples
4 wooden or decorative pop sticks
2 cups sugar
1 cup water
2/3 cup light corn syrup
1/2 teaspoon ground cinnamon, divided
Red food coloring
Black food coloring

Steps:

  • Wash and thoroughly dry apples; remove stems. Insert wooden pop sticks into apples. Place on a waxed paper-lined baking sheet; set aside., In a large heavy saucepan, combine the sugar, water and corn syrup. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. Cook, without stirring, until a candy thermometer reads 290° (soft-crack stage)., Remove from the heat and pour into 2 small bowls. Stir 1/4 teaspoon cinnamon and red food coloring into 1 bowl; stir black food coloring and remaining cinnamon into other bowl., Working quickly, dip 2 apples into red sugar mixture and 2 apples into black sugar mixture to completely coat. Place on prepared baking sheet; let stand until set.
