Black glutinous rice dessert is a common Asian dessert. It is also classified as tong sui, a type of sweet soup. Normally, it takes about an hour to cook black glutinous rice soft. In order to speed up the cooking process, I used instant pot pressure cooker to make this tasty and simple black glutinous rice dessert.

1.5 cups Black glutinous rice
1/2 cup Sago ((small tapioca) )
6 cups Water
1 can Coconut milk ((13.5 fl oz or 400ml))
1 cup Sugar ((can be less or more depending your sweetness))

Steps:

  • Wash the black glutinous rice, then pour 6 cups of water into the instant pot pressure cooker. Close the lid and vent, press manual, adjust time 20 minutes and natural release.
  • At the same time, boil water in a pot and get ready to cook sago (small tapioca).
  • When water is boiling, pour sago into the pot and let it boils for 5-10 minutes. After that, turn off fire and cover a lid for 10 minutes.
  • Next, use a strainer to drain the sago and rinse in cold water.
  • When the black glutinous rice is done, add 1 cup of sugar (add to your sweetness), a can of coconut milk, and cooked sago mix them well. And, enjoy!

6 ounces black rice
8 1/2 cups water
5 ounces sugar
2 ounces dried fruit, of your choosing
1 cup coconut milk (evaporated milk may be substitued in a pinch)
1 pinch salt

Steps:

  • To prepare coconut cream, heat coconut milk and salt in a saucepan over medium heat until just boiling.
  • Soak rice in water for at least 1 hour, then cook in saucepan over medium heat.
  • If you have soaked your rice for an hour this should take about 10 minutes, if you soaked it longer, it will take less time and if you have soaked it for a shorter period it will take longer.
  • At the end of the cooking, the rice should be soft, creamy and chewy.
  • Stir in dried fruit and sugar and let cook for another 15 minutes, being careful not to burn.
  • (You may want to reduce the heat at this point.) Serve hot or cold with coconut cream poured over the top.
  • You may want to stir more before serving to get however creamy of a texture you would like from your mousse.
