1/2 cup brown sugar, packed
1 cup flour
1/2 cup butter, cut into small pieces
2 cups canned pumpkin puree
2 large eggs
1 1/4 cups evaporated milk
3/4 cup sugar (can use more)
2 cups flour
1/2 teaspoon salt
2 teaspoons vanilla
1 1/2 teaspoons cinnamon
1/2 teaspoon ginger
1/4 teaspoon clove
1/2 cup chopped nuts
2 teaspoons flour
1/2 cup brown sugar, packed
3 tablespoons butter

Steps:

  • Set oven to 375 degrees.
  • Prepare an ungreased 13 x 9-inch baking pan.
  • For the crust; cut the butter into the brown sugar and oats until crumbly.
  • Press into bottom and up the sides of prepared baking dish.
  • Bake for 10-12 minutes.
  • For the topping; cut the butter into nuts, flour and brown sugar; set aside.
  • For the filling; combine all ingredients in a large bowl; whisk/mix until well blended and smooth.
  • Pour into prepared crust.
  • Bake for 20 minutes.
  • Remove from oven then immediately sprinkle the topping mixture evenly over the filling.
  • Return to oven for 15-20 minutes.
  • Cool on a rack.
  • Garnish with whipped cream if desired.

4 eggs
1 ⅔ cups white sugar
1 cup vegetable oil
1 (15 ounce) can pumpkin puree
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
6 ounces cream cheese
6 tablespoons butter, softened
3 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch pan and set aside.
  • In a mixing bowl, beat together the eggs, sugar, oil and pumpkin. Sift together the flour, baking powder, salt, baking soda, salt and cinnamon; add to wet ingredients and mix thoroughly. Spread into prepared pan.

Steps:

  • To make the bars: Preheat the oven to 350°F. Line a 8 by 8-inch baking pan with foil or parchment paper, leaving an overhang. If too runny, add more powered sugar, If too thick, add more milk. Spread evenly all over the pumpkin bars. Cut into squares before serving. Store in an airtight container at room temperature for up to 1 day or in the fridge for up to 5 days.

1 cup canned pumpkin
1/2 cup orange juice
1/2 cup canola oil

1/4 teaspoon salt
FROSTING:
2/3 cup butter, cubed

  • Preheat oven to 350°. Grease a 15x10x1-in. baking pan. In a large bowl, beat the first 6 ingredients until well blended. 1 cup brown sugar

1 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder

Steps:

  • Grease and lightly flour a 9x13-inch pan.
  • Beat together margarine, brown sugar and eggs.

1 cup sugar
1-3/4 cups flour
1-1/2 cups finely chopped walnuts
1 can (16 oz.) pumpkin
1 can (14 oz.) sweetened condensed milk
1/4 cup light molasses
2 eggs, lightly beaten
2 tsp. pumpkin pie spice
2 tsp. vanilla

Steps:

  • Preheat oven to 350°F. Beat margarine and sugar in small bowl with electric mixer on medium speed until well blended. Add flour and walnuts; stir until mixture is well blended and crumbly. Remove 3/4 cup of the walnut mixture; set aside for later use. Press remaining walnut mixture firmly onto bottom of 15x10x1-inch baking pan. Bake 15 to 18 min. or until lightly browned.
  • Mix pumpkin, condensed milk, molasses, eggs, pumpkin pie spice and vanilla until well blended; pour over crust. Sprinkle with reserved walnut mixture.
  • Bake an additional 30 to 35 min. or until pumpkin mixture is set. Cool in pan on wire rack. Drizzle with Powdered Sugar Glaze. Cut into 36 bars to serve. Store in tightly covered container in refrigerator.

1/2 cup walnut pieces
1/4 cup (packed) golden brown sugar

Pinch of fine sea salt
Crust:
1 12-inch round Pie Crust
For filling:
1 cup (packed) golden brown sugar
2 large eggs
1/2 teaspoon fine sea salt
1/2 teaspoon ground cinnamon

1 cup canned pure pumpkin
1 cup heavy whipping cream

Steps:

  • For topping:

  • For crust:
  • Position oven rack in bottom third of oven; preheat to 350°F. Transfer crust to 9-inch-diameter glass pie dish. Fold edges under and crimp decoratively. Freeze crust 20 minutes.
  • Line crust with nonstick foil and fill with dried beans or pie weights. Bake until crust is set, about 20 minutes. Gently remove foil and beans. Return crust to oven and bake until partially cooked and golden brown around edges, pressing down on crust with back of spoon if bubbles form, about 15 minutes. Cool crust on rack. Maintain oven temperature.
  • For filling:
  • Whisk brown sugar, eggs, sea salt, cinnamon, ginger, and cloves in medium bowl. Add pumpkin and cream and whisk until well blended and smooth.
  • Pour filling into crust. Bake pie until filling is firm, covering crust with foil collar if browning too quickly, about 30 minutes.
  • Sprinkle topping evenly over top of pie. Reduce oven temperature to 325°F; continue to bake pie until filling is set and slightly puffed in center, about 15 minutes longer.
