Black Spaghetti Cuttlefish Ink Pasta Recipes

Though spooky it may look, you will love this pasta with black ink cuttlefish recipe. You can really taste the sea, no comparison to the commercial black pasta. And it is not difficult to make.

1 lb linguine pasta (or spaghetti)
3 tbsp olive oil
1 onion onion
3 fresh cuttlefish (alternatively frozen squids 500 gr)
1 tbsp concentrated tomato paste
1 tbsp sea coarser salt (to boil the pasta)
salt & pepper
3 sacs cuttlefish ink
1/2 cup dry white wine (optional)

Steps:

  • Dice the onion and stir-fry it in an olive oil-coated pan.
  • In the meantime start boiling the water for the pasta, adding 1 tablespoon of coarse salt.
  • Pour the linguini when the water starts to boil
  • Wear some disposable plastic gloves
  • Once the onions become translucent, add the chopped cuttlefish
  • As soon as they start to turn opaque white, add 1 tablespoon of tomato paste
  • add one whole bag of squid ink and stir
  • Add 1/2 cup of white wine (optional) and season with salt and pepper. Let the wine evaporate for few seconds
  • Stir for a few seconds. If the linguini are still not cooked, remove the pan from the heat to make sure the squid doesn't overcook.
  • Once the linguini has finished boiling (always 1 minute less than what is recommended on the box), drain them
  • Toss them into the pan containing the squid mixture.
  • Stir well, and they are ready to be served immediately

Black spaghetti- 300 gm
Unsalted butter- 2 tbsp
Shrimp (peeled & deveined)- 1 kg
Garlic cloves( minced)- 2
Fresh juice of 1 lemon
Freshly grated Parmesan cheese-2 tbsp
Peperoncino/ red pepper flakes- 1/4 tsp
Cilantro ( finely chopped)- 1/2 cup
Salt- to taste

Steps:

  • Bring a large saucepan of water to boil. Add salt ( to your taste). Add spaghetti and cook as per package instructions. Mmm spaghetti was done in 11 minutes.
  • In a small bowl combine the minced garlic with lemon juice. Pour over the shrimp to coat evenly. Allow to marinate 10 minutes.
  • In a large pan melt 2 tbsp of butter. Add the shrimp with marinade. Cook about 2 minutes per side or until the shrimp is done. Don't overcook or the shrimp will become rubbery.
  • Using a slotting spoon remove the shrimp from the liquid and transfer onto the plate. Bring the sauce to boil. Add Parmesan cheese and cook 1-2 minutes or until the sauce thickens a little bit.
  • Pour the sauce over the cooked and drained black spaghetti , add the shrimps, cilantro, peperoncino and toss to combine.
  • Viola!
